GORDON RAMSAY BREADED CHICKEN PARMESAN RECIPE
The magic behind Gordon Ramsay's recipe from the TV show The F-Word is all about the seasoned breadcrumbs, flour, egg wash, and the crispy consistency that Japanese panko breadcrumbs give to the chicken breasts to make this a wonderful, fabulous dish.

Steps:
- Heat 4 Tbsp. Grapeseed or Avocado oil over medium heat in 6 qt. saucepan
- Add yellow onion and garlic, sweat out till onion is transparent
- Add Roma tomatoes to the onion and garlic; let them cook for 5 minutes.
- Now add the canned tomatoes, lower the heat, bring it to a simmer, and cook for an additional 20 minutes, or until the sauce in a third shallow pan is lightly thickened.
- In a shallow pan, seasoned flour with salt and pepper.
- Whisk the eggs and add a second shallow pan.
- Mix the panko with grated parmesan cheese, chopped parsley, chopped fresh oregano, and paprika in a third shallow pan.
- Season each cutlet to taste with salt and pepper.
- Coat in the flour, followed by the egg, and then the Japanese panko mix to coat thoroughly.
- Heat 1/3 cup of grapeseed or avocado oil in a large sauté a pan to 350 degrees.
- Place two breaded cutlets in the hot oil.
- Cook on each side for 2-3 minutes or until Golden Brown.
- Place on a wire rack to rest.
- Now add 1-2 spoonfuls of sauce on top of the centers of the cooked chicken.
- Place a few slices of mozzarella on top of the sauce and broil in the oven to melt the cheese.
- Bring a large stockpot of salted water to boil.
- Add dry spaghetti and cook for 10-12 minutes or until al dente.
- Drain pasta in a colander.
- Then Coat pasta with a few tablespoons of sauce, salt, pepper, chopped parsley, chopped basil, and grated parmesan cheese.

EAST SIDE MARIO'S HELL'S KITCHEN CHICKEN (POLLO ITALIAN)
I have never tried a dish at East Side Mario's that I did not enjoy. Found this one out surfing the net and tried it. It was a nice alternative to a traditional Chicken Parmesan, and the sauce would also taste lovely over grilled chicken. *If you would like to spice this up a bit, add the optional crushed red pepper. *(Spicey option added based on Sam#3's review July 2008)

Steps:
- Pour tomatoes into blender or food processor.
- Add basil, tarragon, salt, pepper and crushed red pepper.
- Puree until smooth.
- Melt margarine in large frypan.
- Saute garlic over medium heat 1 minute.
- Add chicken breasts, saute, turning once or twice until golden on both sides.
- Turn chicken fleshy side down and cover with tomato mixture.
- Bring to a boil, reduce heat and simmer 15 minutes until tender.
- Remove chicken and place fleshy side up, in a warm oven proof dish.
- Stir parsley into sauce and spoon over chicken breasts.
- Sprinkle with Mozzarella.
- Place under heated broiler 1 minute just until cheese melts.

Steps:
- Pound chicken until 1/2 - 3/4 inch thick.
- Mix cajun seasoning, red pepper flakes and all purpose flour.
- Preheat large frying pan with Olive Oil.
- Dredge chicken breasts in seasoning mixture insuring an even coating.
- Brown chicken breasts 4-5 minutes both sides.
- Remove chicken breasts.
- Add Onion and garlic and saute for 3-4 minutes or until lightly browned.
- Add green and red pepper saute for an additional 3-4 minutes.
- Return chicken and add tomato allow to simmer for 8-10 minutes.
- Prepare angel hair pasta and serve chicken over top.
