HEAVENLY FRUIT COBBLER



Heavenly fruit cobbler image

I wanted to make a cobbler with apple pie filling, but I had no baking powder or baking soda. Then I thought.....angel food cake and I used an easy cobbler and a meringue recipe as a guide to create rise to this Heavenly recipe. I hope you like it.

1/2 cup(s) butter, unsalted
1 cup(s) all purpose flour
1 cup(s) sugar, divided
2/3 cup(s) milk
2 cup(s) sweetened fruit or pie filling
2 egg whites, room temperature
1/2 teaspoon(s) cream of tartar

Steps:

  • Preheat oven to 350 degrees.
  • Put butter in baking dish and let it melt in the oven.
  • Mix together, flour, 1/2 cup sugar, and milk. Set aside.
  • In a clean dry bowl, using a hand mixer or stand mixer, beat together egg whites and cream of tartar.
  • Slowly add the rest of the sugar to the egg mixture. About 1/2 teaspoon at a time and beat on high speed until soft peaks form.
  • Using the first mixture, stir it up a little. Then carefully fold in the egg mixture.
  • Add the batter to the baking dish with the melted butter. Do not stir.
  • Add your fruit evenly on top of the batter. Do not stir.
  • Bake for 45 minutes or until a toothpick close to the center and not in fruit, comes out clean.

6 pears
6 granny smith apples
1 cup sugar
1/2 cup water
1/4 cup butter
1 teaspoon cinnamon
1 1/2 cups self-rising flour
1 1/2 cups milk
1/2 cup buttermilk
1 teaspoon nutmeg
1 (12 ounce) jar caramel syrup
1/2 cup brown sugar
3/4 cup water
1/4 cup butter

Steps:

  • Peel and core the apples and pears.
  • Combine apples, water, cinnamon and butter in a saucepan and simmer until fruit is tender.
  • In a large bowl, mix the flour, milk, buttermilk and mix till combined.
  • Prepare a 9 x 13 baking dish.
  • Pour fruit mixture into prepared pan.
  • Pour the flour mixture over the fruit.
  • sprinkle nutmeg over the batter.
  • Bake at 350 for 40-50 min -- until golden brown on top and juices are bubbling.
  • In a saucepan combine the caramel syrup, brown sugar, butter, water and simmer for 4-5 minutes.
  • Serve the cobbler with ice cream and syrup on top of the mound of delight.
