Ingredients

1 ½ pounds ground beef
1 onion, minced
4 carrots, minced
3 celery ribs, thinly sliced
½ cup barley
1 (28 ounce) can diced tomatoes
2 cups water
3 (10 ounce) cans beef broth
1 (10.75 ounce) can condensed tomato soup
1 bay leaf
1 tablespoon parsley
1 teaspoon minced garlic
½ teaspoon dried thyme
ground black pepper, to taste

Steps:

Heat a large soup pot over medium-high heat, and crumble in the ground beef. Cook and stir until the beef is evenly browned and no longer pink. Drain, and discard any excess grease.
Stir in the onion, carrots, celery, and barley. Pour in diced tomatoes, water, broth, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper. Bring to a boil. Reduce heat, and cover; simmer for 2 hours, stirring frequently. Remove bay leaf before serving.

1 pound ground beef
4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
3 medium carrots, sliced
2 medium potatoes, peeled and cubed
1 medium onion, chopped
1/2 cup chopped celery
4 teaspoons beef bouillon granules
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1 cup cut fresh or frozen green beans

Steps:

In a large saucepan, brown beef; drain. Add the next 10 ingredients; bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until potatoes and carrots are tender. Add green beans. Cover and simmer 15 minutes longer or until the beans are tender.

Ingredients

1 lb ground chuck, cooked
1 large can of Veg-All large cut vegetables, drained, 29 oz.
2 can(s) vegetarian vegetable soup, 15 oz
1 can(s) petite diced tomatoes, undrained, 14.5 oz.
1/2 c diced frozen onions
1 c beef broth
2 potatoes, peeled and cubed
1 tsp garlic powder, or more
2 tsp chili powder
1/2 tsp pepper
1 Tbsp Worcestershire sauce

Steps:

1. Brown beef (or ground turkey) with the onion, drain.
2. Dump all ingredients in a large pot. Bring to a boil, reduce heat and simmer for at least a half hour. If it's too thick add more broth or water. If you simmer it longer it will just get better.
3. You may also cook in a Crock Pot. Add beef to Crock Pot.
4. Then add remaining ingredients.
5. Cook on high 4 hours or low 6-8 hours. Serve with oyster crackers, biscuits or crusty bread, and top it with some shredded cheese if desired.

3 -4 potatoes, cut in large chunks- (I like to keep the peel on)
3 -4 carrots, sliced
1 onion, diced
2 stalks celery, diced
2 teaspoons minced garlic (to taste)
1 1/2 lbs lean ground beef
10 3/4 ounces low-sodium tomato soup
1 cup low-sodium V8 juice
1 -2 cup water, depending on how juicy you like your soup
salt and pepper
grated parmesan cheese

Steps:

Put all vegetables in crock pot.
Lightly brown ground beef and spoon over the vegetables.
Combine the tomato soup, V-8 juice and water. Add the seasonings, and pour over the vegetables and meat.
Cover crock pot and cook on low 6-8 hours, or on high 2-4 hours.
Serve with grated parmesan cheese on top.
