MAMA LAINA'S CHICKEN GRAVY (REDUCED-FAT VERSION)



Mama Laina's Chicken Gravy (Reduced-Fat Version) image

When my father had to go on a heart-healthy diet, he begged me to make a gravy that he can eat within his new diet restrictions. He can't stand how flavorless store-bought gravy can be, so i started to experiment. This recipe is the final result. Please enjoy!

¼ cup olive oil
½ cup all-purpose flour
4 cups low-sodium chicken broth
2 tablespoons chicken bouillon granules
1 teaspoon garlic powder
½ teaspoon dried rosemary
½ teaspoon ground black pepper
½ teaspoon onion powder
¼ teaspoon smoked paprika

Steps:

  • Heat oil in a 2-quart saucepan over medium heat. Whisk in flour until smooth. Cook, stirring occasionally, until lightly golden brown, 7 to 10 minutes. Add chicken broth 1 cup at a time, whisking well after each addition. Add bouillon, garlic powder, rosemary, black pepper, onion powder, and paprika. Whisk until smooth, about 3 to 5 minutes. Reduce heat to low; simmer until thickened, about 5 minutes.

1/2 cup finely chopped onion
1/2 cup finely chopped fresh mushrooms
2 tablespoons chopped fresh parsley
2 cups reduced-sodium fat-free beef broth or 2 cups reduced-sodium fat-free chicken broth, divided
2 tablespoons cornstarch
1 pinch pepper

Steps:

  • In a saucepan, saute onion, mushrooms and parsley in ¼ cup broth until vegetables are tender.
  • Combine cornstarch, pepper, and ½ cup of broth; stir until smooth.
  • Add to pan with the remaining broth.
  • Bring to a boil, stirring occasionally; boil for 2 minutes.

1 1/2 cups low sodium chicken broth
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp poultry seasoning
vegetable spray
2 - 5 oz boneless skinless chicken breasts
2 Tbs light tub masrgarine
1 tsp also salt
10 snow pea pods
2 oz sliced mushrooms
2 small yukon gold potatoes
1/2 cup frozen corn

Steps:

  • Cook flour in skillet for 1 to 2 minutes until golden brown. remove from heat and set on plate to cool.Put the broth, paprika, garlic powder, poultry sesaoning and cooled flour in an airthigh bowl and shake until well blended. Set aside. Lightly spray skillet with vegetable oil. Cook chicken side down for 2 minutes until it starts to brown. Remove chicken. Melt hte margarine in the skillet and pour in the broth mixture and stir until thickened. Place chicken in gravy and add snow peas, mushrooms, potatoes , corn and 1 tsp alson salt. Cover and slow simmer for 10 minutes.

  • Reduce the heat to medium. Add the remaining butter to the skillet, and once it's melted, stir in the flour and cook for about a minute.
