It was this soup that started my lifelong love of adding sour cream to things. The way the tangy, rich cream melts into the hot, beefy broth is a wonder to behold.

1 (1 inch thick) slice bone-in beef shank
3 quarts water
1 onion, chopped
1 cup chopped carrots
½ cup chopped celery
1 bay leaf
3 cups diced peeled beets
2 cups chopped cabbage
¼ cup white vinegar, or to taste
salt and ground black pepper to taste
1 cup sour cream, for garnish
2 tablespoons chopped fresh dill, for garnish

Steps:

  • Cook beef shank in a large soup pot over high heat until browned, about 3 minutes per side; add water, onion, carrots, celery, and bay leaf to the pot, bring to a simmer and cook until meat is tender and falling off the bone, about 4 hours. Strain broth and discard solids.
  • Combine beef broth, beets, and cabbage in a large soup pot; cook, stirring occasionally, until beets are tender, about 30 minutes. Reduce heat to low; add vinegar, salt, and black pepper.
  • Serve garnished with sour cream and dill.

This is how I like to make borscht for my family. It is very thick and satisfying on a cold winter night. Many people who are scared of beets enjoy my borscht because it has so many other flavors. For best flavor, top each bowl of borscht with a tablespoon of sour cream.

3 pounds beef soup bones
2 quarts water
4 potatoes, peeled and diced
4 carrots, peeled and diced
3 celery ribs, sliced
3 beets, peeled and diced
1 onion, diced
3 tablespoons minced garlic
3 tablespoons salt, or to taste
2 tablespoons paprika, or to taste
1 teaspoon ground black pepper, or to taste
½ small head cabbage, shredded
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato paste

Steps:

  • Combine soup bones and water in a large pot; bring the water to a boil, reduce heat to medium-low, and cook at a simmer for 4 hours.
  • Remove soup bones and meat from pot; set aside until cool enough to handle. Skim fat from the surface of the broth. Add potatoes, carrots, celery, beets, onion, garlic, salt, paprika, and ground black pepper to the broth. Bring broth again to a boil, reduce heat to medium-low, and simmer until the vegetables are tender, about 1 hour more.
  • Pick meat off soup bones and add back to soup. Discard bones and fat. Stir cabbage, diced tomatoes, and tomato paste into the soup. Continue cooking at a simmer until the cabbage is tender, about 15 minutes.

My friend's mom used to make 'garden' soup every Sunday. She would go through her fridge and any unused veggies would be thrown into the soup pot. This is my version; hearty, thick, and chock full of veggies. It is important to add the diced beets at the end to keep the color appealing. My daughter goes crazy for this soup; it is very tasty and filling, best served warm.

2 pounds beef oxtail
2 onions, diced
2 cups diced carrots
1 head cabbage, diced
1 cup diced celery
½ cup pearled barley
1 (1 ounce) package dry onion soup mix
1 teaspoon dried dill weed
1 teaspoon ground cinnamon
1 bay leaf
4 cups water, or enough to cover
1 bunch beets with greens - scrubbed, beets diced, and greens chopped
salt and ground black pepper to taste
1 cup sour cream

Steps:

  • Place oxtail, onions, carrots, cabbage, celery, barley, onion soup mix, dill, cinnamon, bay leaf, and water in a large slow cooker. Cook on low until meat is tender, about 5 hours.
  • Remove meat and bones from slow cooker; cool on a plate until easily handled, about 10 minutes. Cut meat into small pieces; return meat to the soup and discard bones. Skim off any fat from soup; remove bay leaf.
  • Stir beets and beet greens into soup; cook on low until beets are tender, about 1 hour. Season with salt and pepper; top each bowl with about 1 tablespoon sour cream to serve.

1/2 pound bacon, diced
1 pound lean beef chuck, cut into bite-size pieces
1 cup chopped yellow onions
1 carrot, peeled and grated
1 tablespoon minced garlic
2 teaspoons dried oregano
2 teaspoons dill seeds
2 bay leaves
3 tablespoons red wine vinegar, plus more to taste
2 quarts water
1 teaspoon salt
1 teaspoon ground black pepper
1 1/2 pounds red beets, greens tops removed, roasted and grated
1 tablespoon vegetable oil
1 large russet potato, peeled and diced
6 cups shredded green cabbage
Salt and freshly ground black pepper
1 cup sour cream
1/2 cup chopped fresh dill

Steps:

  • Preheat oven to 350 degrees F.
  • Place the bacon in a Dutch oven or stockpot and cook, stirring, over medium-high heat until the fat begins to render, about 3 minutes. Add the beef and cook, stirring, until brown on all sides, about 5 minutes. Remove the meat from the pan with a slotted spoon and drain on paper towels.
  • To the fat in the pan, add the onions and carrots, and stir to coat. Cook until soft, about 4 minutes. Add the garlic, oregano, dill seeds, and bay leaves and cook, stirring, for 1 minute. Add the red wine vinegar and stir to deglaze the pan. Return the meat to the pot and add the water, salt, and pepper and bring to boil. Reduce the heat and simmer partially covered until the beef is tender, about 2 hours.
  • Meanwhile, place the beets on a baking sheet and brush with the oil. Roast until tender and can be pierced easily with a knife, about 1 hour. Remove from the oven and let sit until cool enough to handle. Trim the stem and root ends and remove the skins. Coarsely grate and set aside.
  • When the meat is tender and falling apart, add the beets, potatoes, and cabbage. Simmer over low heat for another 30 minutes. Season with additional red wine vinegar, salt and freshly ground black pepper, to taste.
  • Ladle borscht into bowls and garnish with a dollop of sour cream and pinch of fresh dill.

Whether it originates in Germany, Russia or the Ukraine, borsch is borszcz is borscht! It's hearty and heart healthy beet soup (or stew if you prefer). I prefer to make it as a stew as it then sticks to the bones as one might say here in the below zero tundra. Borscht can be made with of without meat and with or without the rice wine vinegar and tomatoes/paste. How much or little one adds of these ingredients can alter its taste significantly. Necessary however are the beets, potatoes, celery, carrot and cabbage. This recipe works best served hot with a dollop of fat-free yogurt and a little extra parsley on top along with some oyster crackers. Make a lot, you'll want to have more than one bowl.

This recipe is my own adaptation of a recipe in Graham Kerr's Best (a low fat heart-healthy cookbook). It uses quinoa, a grain that many of us in America have not yet tried. It stretches the beef and allows for lot's of flexibility and creativity. If you think you'd like my version, but don't like some of the ingredients, try swapping them out for something else! * New Information: I have used ground turkey breast as a substitute for the beef and brown rice rather than potatoes. Even healthier!

5 large potatoes (cut into apprx. 1/2 inch cubes)
1 cup quinoa (raw)
1 medium onion (chopped)
3 garlic cloves (finely chopped)
1 cup zucchini (cubed - 1/2 inch at most)
1/2 cup red pepper (chopped)
1 cup baby portabella mushrooms (chopped)
1/2 cup parsley (fresh, finely chopped)
2 tablespoons parsley (fresh, finely chopped)
1/2 lb ground beef (lean bottom round)
1 teaspoon olive oil (light)
1 tablespoon tomato paste
1 1/4 cups beef broth (fat free low sodium)
1 tablespoon soy sauce (low sodium)
4 -5 dashes sesame oil
1/2 teaspoon cayenne pepper
1/4 teaspoon cumin
1 cup corn (frozen kernels)
1/2 cup peas (peas)
salt and pepper

Steps:

  • Complete all chopping and dicing in advance.
  • Prepare the quinoa: Boil two cups of water. Add the quinoa and bring back to full boil. Turn down and simmer for ten minutes. Place aside until needed later in the process.
  • Prepare the potatoes: Prepare a large pot with water. Boil the potatoes until they are just fork tender but not mushy. Drain and rinse with cold water to stop the cooking. (You may need to reheat them a bit before serving.).
  • In a very large skillet, saute the onions in the olive oil until translucent.
  • Brown the beef, taking care to break it down into very small pieces as it cooks.
  • Add the garlic and tomato paste and cook for another couple of minutes.
  • Add the zucchini and cook for several minutes.
  • Add the mushrooms and red pepper and cook until the vegetables are just slightly tender.
  • Add the sesame oil, soy sauce, beef broth, corn, peas, seasonings, and ½ cup of parsley. Cook for a couple of minutes more.
  • Gently toss the potatoes with remaining 2 tablespoons of parsley, salt, and pepper.
  • To serve: Place a small serving of potato on each plate. Mound the conquistador mixture atop the potatoes and serve.
  • Note: The sauce may be thickened with an arrowroot or cornstarch slurry.
