2 14-ounce cans artichoke hearts, rinsed
2 cups plus 2 tablespoons freshly grated Parmesan cheese, divided
½ cup low-fat mayonnaise
2 cloves garlic, minced
2 teaspoons freshly grated lemon zest
Cayenne pepper, to taste
¼ teaspoon salt
Freshly ground pepper, to taste

Steps:

  • Preheat oven to 400 degrees F.
  • Chop artichoke hearts in a food processor. Add 2 cups Parmesan, mayonnaise, garlic, lemon zest, cayenne, salt and pepper; puree until smooth. Divide between two 2-cup gratin or other shallow baking dishes. Sprinkle each with 1 tablespoon Parmesan.
  • Bake the dip until golden on top and heated through, 10 to 20 minutes.

1 cup sour cream
1 cup mayonnaise
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 325.
  • Drain and chop artichoke hearts.
  • Combine mayo, sour cream, and parmesan cheese.
  • Mix together artichoke hearts with mayo mixture in an oven safe glass pie dish Add garlic to taste.
  • Bake for 25 minutes.
  • Serve with crackers or pita bread.

3/4 cup plain low-fat yogurt
1 cup parmigiano-reggiano cheese, grated (could also use fresh parmesan)
2 garlic cloves, minced or pressed through a garlic press
2 tablespoons fresh basil, chopped

Steps:

  • Finely chop artichoke hearts and put in a microwave-safe dish.
  • Add yogurt, cheese, garlic, and basil. Mix well.
  • Microwave 3 minutes on high. Stir. Microwave 2 minutes more. Serve warm.

Number Of Ingredients 7

1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 jar (7-1/2 ounces) marinated quartered artichoke hearts
1 tablespoon Italian seasoning
3 tablespoons grated Parmesan and Romano cheese blend
1 teaspoon extra virgin olive oil
Carrot and celery sticks

Steps:

  • Drain artichokes, reserve marinade. In a small saucepan, cook and stir beans, spinach, artichokes and Italian seasoning over medium heat until aromatic and heated through, 4-5 minutes. Remove from heat; cool slightly. Transfer to a food processor, add reserved artichoke marinade; pulse until mixture reaches a texture of thick hummus. Pour into a serving bowl; stir in cheese and drizzle with oil. Serve warm with carrots and celery.
