TURKEY & VEGETABLE PASTA

Steps:
- Cook pasta according to package directions; drain. Meanwhile, in a Dutch oven, heat oil over medium-high heat. Add celery, onions, broccoli and carrots; cook and stir 10-12 minutes or until onions are tender. Add garlic, parsley, tarragon and seasonings; cook 1 minute longer., Add mushrooms and peas; cook and stir 3-5 minutes or until mushrooms are tender. Stir in turkey, broth, soup, yogurt, cream cheese and Worcestershire sauce. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until slightly thickened, stirring occasionally. Add pasta; toss to combine and heat through. Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or milk if necessary.

- In a Dutch oven, heat butter over medium-high heat. Add onion, celery and garlic; cook and stir until tender, 5-8 minutes. Add broth, carrots, and pepper. Bring to a boil; reduce heat. Simmer, uncovered, 5 minutes. Add zucchini, tomatoes, hominy, lima beans and turkey. Cook until zucchini is tender, 5-8 minutes. Top with basil; serve with Parmesan cheese.

- In a large skillet, brown turkey.
- Add celery, carrots, garlic & oil; cook until tender.
- Remove turkey and vegetables, keep warm.
- Add broth to the pan; bring to a boil.
- Add pasta; cook 10min or until tender.
- Reduce heat; stir in vinegar, sugar, paprika, cumin, oregano, onion and turkey mixture.
- Simmer 10min or until heated through.

- Bring a large pot of water to a boil, add 1 to 2 tablespoons of salt to the water, and cook the pasta until it's al dente. Before draining the pasta, reserve 1/2 cup of the pasta water.
- Meanwhile break apart the sausage into small pieces and cook in 1 tablespoon of oil in a large saute pan until nicely browned (about 10 minutes or so).
- While the pasta is cooking and sausage is browning, rinse your broccoli florets and halve any of the tomatoes that are especially large.

Reduce heat to medium-low; stir in turkey, lemon juice, parsley, chives and tarragon. Cook until the turkey is warmed through, about 2 minutes. Remove and discard the Parmesan rind before serving.
