Steps:
- Combine sugar, milk, butter, and cocoa in a saucepan. Bring to a boil and cook until sugar dissolves, about 1 1/2 minutes. Remove from heat and stir in peanut butter, oats, coconut, and vanilla extract. Roll dough into walnut-sized balls and place on waxed paper. Let cool until hardened.

These were born out of necessity to have something chocolatey and sweet while still healthy when I get those cravings.

Steps:
- Melt butter, honey and almond butter together just until they are melted and smooth when mixed. Take off heat.
- Add in vanilla and cocoa powder and mix till well incorporated.
- Next add in the coconut, almonds, flax meal and oats. Mix well.
- Drop by cookie scoops full onto parchment paper then light press down. Let cool.
- You may have to cool in the fridge or freezer. Store in the fridge. This is more like a fudge "cookie".
- You could experiment and add more oats to see if it becomes firmer. But I love the gooey fudge like texture and flavor.

NO-BAKE COOKIES
These classic no-bake peanut butter and chocolate treats are also known as cow patties or preacher cookies. The story goes like this: If a housewife looked out the window and saw the preacher coming up the mountain on his horse, she could whip up a batch of these cookies in the amount of time it would take him to reach the front door. True or not, it's a good story - and a great cookie that's a cinch to put together. Combine all the ingredients in a pot over medium heat, then drop spoonfuls on a sheet pan and chill until set. Be sure to use quick-cooking oats, not instant, when making these cookies. The less-processed oats provide delightful texture and chewiness.

- Line two large sheet pans with parchment paper. In a pot, combine the sugar, milk, butter, cocoa powder and salt. Bring ingredients to a rolling boil over medium heat, stirring constantly and being careful not to let the mixture burn, then cook until the cocoa powder and sugar have fully dissolved, about 1 minute. Remove from heat.
- Add the oats, peanut butter and vanilla. Stir until well combined, then let cool for about 15 minutes. Drop heaping tablespoonfuls onto the prepared sheet pans, gently pressing the center to flatten slightly. (You should have about 36 cookies.) Chill for a few hours until firm. Store in an airtight container at room temperature for up to 1 week.

- Combine butter, cocoa, sugar, and milk in a large saucepan.
- Bring to a full boil, reduce heat and simmer for one minute stirring constantly.
- Add vanilla and peanut butter mixing well.

- Quickly drop onto waxed paper by the spoonful or desired amount.
- Let cool and enjoy.
- Do not under or over cook ingredients in saucepan. Once oats are stirred in drop onto wax paper immediately. I do not suggest in double batching this particular recipe.

- Add almonds to food processor and pulse until nuts are very small, about the size of large crumbs. Add dates and 2 tbsp cocoa powder. Pulse until dates are fully blended and the mixture becomes sticky and clumpy. If your mixture appears to be too dry and doesn't stick together, add 1 tbsp of water and pulse again.
