A great New Year's, or anytime, recipe. It's simple to make, heart healthy, and reheats well the next day. This recipe uses turkey instead of pork and omits tomatoes.

1 (4 1/3 ounce) package four cheese Rice-A-Roni
1 small head green cabbage
1 (12 ounce) package turkey Canadian bacon
1 (15 ounce) can black-eyed peas
1 small onion
3 cloves garlic
1 tablespoon butter
4 tablespoons olive oil
2 1/2 cups hot water
1/2 teaspoon cayenne pepper
1/2 teaspoon parsley flakes

Steps:

  • Remove the loose outer leaves of the cabbage to reveal the tightly packed head. Carefully chop the cabbage into coarse pieces. Discard the core. Place the pieces into a collander and wash thoroughly. Shake the cabbage slices to separate the leaves as best as possible. Set aside.
  • Peel and slice both the onion and garlic. Set aside.
  • Remove the Canadian Bacon from the package and dice into cubes/slivers. Set aside.
  • Open and drain the can of black-eyed peas. Set aside.
  • In a large skillet with a lid, place two tablespoons of olive oil. Heat on medium-high heat. Open the Rice-a-Roni package and pour the rice into the skillet. Sautee the rice until golden/medium brown. Slowly and carefully add the hot water to the skillet. Add contents of the flavor packet and stir well. Reduce heat to lowest setting possible, cover, and cook until all liquid is absorbed (about 15-25 minutes).
  • In a large pot, place butter and remaining olive oil. Heat on medium/high heat. Stir butter and olive oil together. Once the butter has melted, add the chopped onion, garlic, and Canadian Bacon. Sautee 3-5 minutes. Add the cayenne and parsley and stir. Add the black-eyed peas and stir. Cook the mixture for 1-2 minutes. Add the cabbage to the mixture and stir. Cover, reduce heat to medium, and cook for 15 minutes, stirring the mixture every 5 minutes.
  • After 15 minutes of cooking, give mixture one last stir, cover, turn burner off and let stand 5-10 minutes.
  • Once the Rice-a-Roni is finished cooking, remove from heat and let stand 3-5 minutes.
  • The dish may be assembled separately or the cooked Rice-a-Roni may be mixed directly into the cabbage and served as a complete meal. Leftovers should be mixed together and refridgerated in a small container. The dish reheats well and tastes better the next day. This makes it possible to prepare this dish a day in advance.

1 strip bacon, cut crosswise into 1/4-inch pieces
1 small onion, diced
1 large celery stalk, diced
1/2 green bell pepper, ribs and seeds removed, diced
1/2 teaspoon dried thyme
1 can (14.5 ounces) reduced-sodium chicken broth
2 cans (15 ounces each) black-eyed peas, drained and rinsed
3 tablespoons chopped fresh parsley
Coarse salt and ground pepper
4 cups cooked white rice

Steps:

  • In a large saucepan over medium heat, cook bacon until crisp, 3 to 5 minutes. Add onion, celery, bell pepper, and thyme; cook until onion is translucent, 3 to 5 minutes.
  • Add broth, peas, and 1 cup water. Bring to a boil; reduce heat. Simmer until thickened, about 40 minutes. Stir in parsley; season with salt and pepper. Serve over rice.

1/2 pound sliced bacon, cut into 1-inch pieces
1 small green or sweet red pepper, chopped
2 celery ribs, chopped
6 green onions, sliced
1 cup uncooked long-grain rice
2 cups water
1/4 teaspoon salt
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 bay leaf
1 can (15 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

2 cups cooked brown rice
1 lb cooked turkey sausage
1 (15 ounce) can black-eyed peas, drained
1/2 cup diced onion, sauteed
1/4 cup diced celery, sauteed
1 1/2 cups chunky salsa
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper (optional) or 1 teaspoon hot sauce (optional)

Steps:

  • Cook Turkey sausage and make sure its crumbly.Drain off any excess liquid.
  • Mix all ingredients including the Turkey, in a Pot and bring to a simmer on low to med heat.
  • I stated only six servings because we have it as our main course with a salad.

  • Heat the oil in a large saucepan over medium heat. Add the onion, peppers, and garlic. Sauté until the veggies begin to soften. Next, add the black eyed peas, ham bouillon, celery salt, thyme, and red pepper flakes if using; stir well.
  • Let the pot simmer for 3-5 minutes for the flavors to concentrate. Once the vegetables and peas darken slightly, stir in the rice followed by the water. Raise the heat to medium-high, stir in the water and bring it to a boil.
  • Once the rice is boiling give it a good stir, and cover. Allow it to cook for 15-20 minutes or until the water is absorbed.

  • Heat 1 tablespoon of olive oil in a pan or large skillet. Add the turkey bacon, cook about 10 minutes until crisp, turning occasionally. Remove the bacon from the skillet and set aside to cool on a paper towel. Break the bacon into small bits when it is cool, and reserve for topping the Hoppin’ John.
  • Wipe most of the excess grease from the pan–though there isn’t much with turkey bacon–and add the remaining olive oil. Heat the pan on medium, then add the onions. Cook the onions for about 5 minutes, they should be starting to soften at this point.
  • Stir the black-eyed peas into the onion mixture. Add the chicken broth, paprika, thyme and oregano. Stir to combine.
