Time 1h34m

Yield 6 servings

Number Of Ingredients 34

1 1/2 pounds spaghetti
Meatballs in BBQ Gravy, recipe follows
Extra-virgin olive oil
2 tablespoons scallions, thinly sliced
Grated Parmesan
For the gravy:
1 pound bacon, sliced into lardons
1/2 cup olive oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
1 tablespoon fresh rosemary leaves, minced
2 tablespoons brown sugar
1 1/2 glasses Chianti
3 tablespoons cider vinegar
1 small can tomato paste
1 small can chipotle peppers in adobo
3 (28-ounce) cans chopped tomatoes
Sea salt, preferable grey
Freshly ground black pepper
1 pound ground sirloin
1 large egg
1 tablespoon Worcestershire sauce
2 tablespoons Parmesan, freshly grated
2 tablespoons finely chopped flat-leaf parsley
1 teaspoons dried oregano
1 tablespoon finely chopped basil leaves
1 cup onion, finely chopped
1 cup fine dried bread crumbs
1 clove garlic, minced
Sea salt, preferably grey
Freshly ground black pepper
1 cup water

Steps:

  • Preheat a grill on medium-high heat.
  • Bring a large pot of salted water to a boil, cook pasta about half way according to package instructions. Drain the pasta and toss lightly with olive oil. Using a grill grate, grill the pasta over medium-high heat for about 3 to 4 minutes.
  • Transfer the grilled pasta to a serving platter and spoon BBQ Gravy over the top. Place meatballs over the top and around the perimeter of the platter and top with more Gravy. Sprinkle with the sliced scallions and grated Parmesan.
  • Heat a large soup pot over medium-high heat. Add the olive oil and heat for 1 minute. When the oil is hot, add the bacon and render. When golden brown and beginning to crisp, add minced carrot, celery, onion, and garlic. Add a pinch of salt and saute vegetables to a light brown. Add rosemary and brown sugar and stir. Add Chianti and vinegar to pot, stir and bring to boil. Add the tomato paste, chipotles in adobo, and the chopped tomatoes. Stir and simmer for 1 to 1 1/2 hours, skimming the top occasionally to remove any scum that forms.
  • While the BBQ gravy is simmering, make the meatballs.
  • In a large bowl, mix together the meat, egg, Worcestershire, cheese, parsley, oregano, basil, onion, bread crumbs, and garlic, and season with salt and pepper. Add 1/2 cup of water. Knead the water into the meat mixture with your hands. Knead and roll meatballs into about 1 1/2-inch balls. Place them in shallow saucepan on stove, add another 1/2 cup of water over them, and cover. Turn heat to medium, and steam for 35 minutes.
  • Using a slotted spoon, remove the meatballs from the pan. Drain the juice out of the bottom of the pan, return the meatballs to it and cover them with warm BBQ gravy. Serve on top of Grilled Spaghetti.

HEALTHY GRILLED SUMMER VEGETABLE SPAGHETTI FOIL PACK

Healthy Grilled Summer Vegetable Spaghetti Foil Pack image

Yes, you can make one-pot pasta outdoors! In this recipe, sun-dried tomato pesto and olive oil deliver loads of flavor and whole-wheat spaghetti and veggies provide plenty of fiber. So even though it's cooked on a grill, this garden-fresh sauce tastes like it simmered on the stovetop.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 13

2 medium juicy tomatoes, cut into 1/2-inch chunks
1 small Japanese eggplant, cut into 1/2-inch chunks
1 small zucchini, cut into 1/2-inch chunks
1/4 cup sundried tomato pesto
12 oil-cured olives, pitted and roughly chopped
4 cloves garlic, thinly sliced
2 tablespoons extra-virgin olive oil
1/4 teaspoon crushed red pepper
Kosher salt
1 cup dry white wine
8 ounces whole-wheat spaghetti, broken into thirds
8 tablespoons grated Parmesan
1 large handful fresh basil leaves, roughly torn

Steps:

  • Prepare a grill for medium heat.
  • Toss together the tomatoes, eggplant, zucchini, pesto, olives, garlic, olive oil, crushed red pepper and 1 teaspoon salt in a large bowl.
  • Combine the wine with 2 cups water in a large measuring cup or bowl.
  • Tear four 16-inch pieces of 18-inch-wide heavy duty foil and arrange on a work surface. Evenly divide the spaghetti among the 4 pieces of foil, placing it in the center of each piece and leaving plenty of room on the short ends. Evenly divide the vegetable mixture among the foil, spooning it on top of the spaghetti. Fold up the sides and ends of each piece of foil to make a canoe shape. Pour 3/4 cup of the wine mixture into each packet. Keeping the folded sides up, tightly crimp the edges together so the packets remain canoe-shaped. This will prevent leaking and allow for space at the top of each packet.
  • Put the packets on the grill, close the grill lid and cook 24 minutes, changing the position of the packets on the grill about halfway through. Remove from the grill and let rest for 10 minutes.
  • Carefully open each packet. The pasta should be al dente and the vegetable mixture saucy. Stir 2 tablespoons Parmesan into each serving. Transfer the pasta and sauce to 4 serving bowls and top with the basil.

FOIL-PACK COAL-ROASTED VEGETABLES WITH FETA

Foil-Pack Coal-Roasted Vegetables with Feta image

Roasting vegetables in foil packets in the coals of a grill brings out their deep flavors and adds just a hint of smoke. The vegetables are served on a platter with a rich zaatar and lemon dressing and a shower of crumbled feta. Make this Mediterranean-inspired combination the centerpiece of a vegetarian summer meal or as a side dish for your next barbecue.

Provided by Food Network Kitchen

Time 50m

Yield 4 servings

Number Of Ingredients 15

1/2 cup olive oil
2 teaspoons dried oregano
1 teaspoon smoked paprika
3 cloves garlic, minced
2 carrots, cut into 1/4-inch-thick rounds
1 red bell pepper, cut into large bite-size pieces
1 ear corn, cut crosswise into 6 pieces
1 Italian eggplant, halved lengthwise and cut into 1/2-inch-thick half moons
1 large russet potato, quartered lengthwise and cut into 1/2-inch-thick pieces
1 zucchini, halved lengthwise and cut into 1/2-inch-thick half moons
Kosher salt and freshly ground black pepper
1/4 cup freshly squeezed lemon juice (from about 1 1/2 lemons)
1 tablespoon zaatar
1 teaspoon sumac
4 ounces feta (see Cook's Note)

Steps:

  • Prepare a charcoal grill with a hot bed of coals for indirect cooking. The coals are ready when they are ashed over and glowing.
  • Mix together 3 tablespoons of the olive oil, the oregano, smoked paprika and garlic in a large bowl. Add the carrots, peppers, corn, eggplant, potatoes and zucchini to the olive oil mixture and toss to combine, making sure each piece is fully coated with the marinade.
  • Tear off eight 12-by-18-inch pieces of heavy-duty aluminum foil and arrange them in stacks of 2 on a work surface (you should have 4 stacks). Divide the vegetables among the stacks, about 2 heaping cups per pouch.
  • For each stack, bring the 2 long sides of the foil together and fold the edges over each other a few times to seal, leaving room around the vegetables for steam. Fold over the edges of the short sides to seal.
  • Carefully spread the coals using a large pair of tongs, then add the foil packets and cover them with coals. Cover the grill with the lid and cook until the vegetables are tender, 25 to 30 minutes. Check for doneness by inserting a wooden skewer into each packet; it should easily slide all the way through the vegetables.
  • Remove the foil packets to a heatproof work surface and let cool for 5 minutes before carefully opening. Use a spatula or a large spoon to transfer the contents to a platter. Sprinkle the vegetables with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Whisk together the lemon juice, zaatar, sumac, 1/2 teaspoon salt, 1 tablespoon water and the remaining 5 tablespoons olive oil in a small bowl. Drizzle the dressing over the vegetables, making sure they are all well coated. Crumble the feta over the vegetables. Taste and add more salt or pepper, if needed.

EASY FOIL-PACKED RECIPES WHEN YOU FORGET TO PLAN DINNER

From foodnetwork.ca
  • Baked Fish Packets. Don’t just think pink, white fish such as cod or halibut also work well wrapped in foil. This recipe takes a tropical turn with lime juice, coconut milk, ginger and lemongrass, as well as fresh herbs and red chili.
  • Healthy Grilled BBQ Meatloaf Foil Pack. Meatloaf on the BBQ is made possible through the magic of a foil pack — and as a bonus, the reflective foil speeds up the cooking time.
  • Sheet Pan Chicken Fajitas. Boneless, skinless chicken breasts can be cooked to perfection on foil in the oven. Each of your diners will enjoy chili-flecked bell peppers and chicken to fold into tortillas with the traditional fixings.
  • Horseradish Grill Roasted Salmon. Take horseradish out of the realm of roast beef and use it to season and protect salmon fillets with a savoury bread crumb crust.
  • Foil-Pack Grilled Sweet-and-Spicy Chicken Wings. Using foil packs means you can keep your grill or baking sheet clean while indulging in brown sugar, chili powder and cilantro chicken wings any day of the week.
  • Healthy Grilled Shrimp Fajita Foil Pack. Versatile shrimp make for tasty fajita fillings, especially when lots of cumin and chipotle-tossed bell peppers, onions and scallions bulk out the mix.
  • En Papillote Pouches. Haddock fillets are steamed in lemongrass-infused coconut milk, and loaded with vegetables for a classic packaged dinner. Although this recipe is meant for parchment packages (en papillote), aluminum foil can be used to equal effect.
  • Salmon with Tomatoes and Capers. Adding briny capers to the mix lends another layer of flavour to this salmon dish. Grape tomatoes are sweeter and more compact, with a less pulpy flesh to add moisture, so the juice of a lemon is pressed into service.
  • Healthy Grilled Summer Vegetable Spaghetti Foil Pack. No more waiting for a pot to boil — make spaghetti from scratch in a foil package (cooked in white wine and a Mediterranean mixture of vegetables).
  • Campfire Quesadillas. For those who don’t have a handy campfire, these foil packed quesadillas can also be made on a hot grill or in the oven — the idea is just to melt the cheese and warm the vegetables through.
