MARINATED TOFU JERKY



Marinated Tofu Jerky image

This tofu jerky recipe is flavored with garlic, honey, and soy sauce and dried in a dehydrator or home oven. It makes an interesting substitute for meat.

1 pound tofu (firm or extra-firm)
For the Marinade:
1/2 cup soy sauce
3 to 4 tablespoons Liquid Smoke
1/8 cup water
1 tablespoon onion powder
1 teaspoon garlic powder (or 1 clove crushed fresh garlic)
1 tablespoon freshly ground black pepper
1 teaspoon honey

Steps:

  • Take a 1-pound cube of tofu and drain it. Cut it in half, and then slice it into strips on its short side. Strips should be about 1 1/2 to 2 inches in thickness. They may look big, but they will shrink to about half their size.
  • In a small bowl, mix together 1/2 cup soy sauce, 3 to 4 tablespoons liquid smoke, 1/8 cup water, 1 tablespoon onion powder, 1 teaspoon garlic powder, 1 tablespoon freshly ground black pepper and 1 teaspoon honey together until well combined.
  • Place the tofu strips in a single layer in a shallow baking pan or cookie sheet and pour the marinade over it. Let soak for several hours or overnight.
  • Drain excess liquid (may be reused) and dry tofu in a food dehydrator or warm (200 degrees F) home oven. This will take 4 to 8 hours, depending on the weather. If you live in a sunny, hot, dry climate, you can sun dry it outdoors. It will take all day.
  • Flip the tofu over hourly so it dries evenly. Dry the jerky until it is very chewy, but not crispy. Tofu jerky is delicious and keeps indefinitely.
  • Be creative. Use low-sodium soy sauce if you want less salt (the tofu jerky is rather salty). Use Tabasco sauce or ground cayenne pepper if you want it hot. Chili powder makes chili tofu jerky. Oregano and basil make pizza tofu jerky. Recipe Source: Mike Richichi. Reprinted with permission.

SRIRACHA TOFU JERKY IN A DEHYDRATOR

Spicy tofu jerky made easy in your dehydrator. This gets better both in texture and flavor once it is refrigerated so make sure to plan ahead.

1 (16 ounce) package extra-firm tofu, pressed and drained
¼ cup soy sauce
2 tablespoons Sriracha
1 teaspoon liquid smoke flavoring
½ teaspoon garlic powder

Steps:

  • Slice tofu block in half lengthwise, then slice widthwise into 1/8- to 1/4-inch slices. Lay strips on a clean work surface.
  • Whisk soy sauce, Sriracha, liquid smoke, and garlic powder in a bowl. Brush sauce over top side of tofu strips. Carefully flip strips over and brush other side with sauce.
  • Place the strips on the rack of a dehydrator. Set temperature to 145 degrees Fahrenheit (63 degrees Celsius). Dehydrate for 2 hours. Flip strips over and dehydrate 1 hour more.
  • Remove the lid from the dehydrator and let strips cool for 1 hour for further drying. Place in an airtight container and refrigerate.

I've been making deer and moose jerky with this recipe for years. My boys and there friends love it. It doesn't last long at home. Plus I take some to work and the guys really love it. by Jim, good luck!

5 lbs deer, moose or 5 lbs beef, no fat
5 teaspoons salt
5 teaspoons ground ginger
5 tablespoons brown sugar
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper
6 cloves pressed garlic
1 1/2 cups pineapple juice
1 1/2 cups dark soy sauce

Steps:

  • Mix last 8 ingredients together.
  • Put meat into large ziplock bag or roaster.
  • Add brine mix together cover and refrigerate over night.
  • Next day drain brine
  • Rinse meat in strainer with cool water.
  • Pat dry with paper towel then put in dehydrator.
  • Set temperature to 145 F for 1 hours.
  • Then turn down to 125 F for 6-7 hours.
  • Check jerky after 5 hours.

TOFU JERKY

This is a nice substitution for beef jerky, as it provides the saltiness and smoky flavor (it has been a long time since I've had real beef jerky, though, so I may not be the best judge). The texture will not be the same, of course, but it is chewy and satisfying. Enjoy!

1/2 cup soy sauce
3 tablespoons liquid smoke
1/8 cup water
1 tablespoon onion powder
1 teaspoon garlic powder or 1 crushed fresh garlic clove
1 tablespoon fresh ground black pepper
1 teaspoon honey
1 lb extra firm tofu (not silken type)

Steps:

  • Cut the cube of tofu horizontally into four pieces, and then slice it into strips (I had a total of 12). The strips should be about 4 millimeters in thickness. They're going to shrink a lot in the oven, so they should start out pretty thick.
  • Mix all the other ingredients together.
  • Arrange the tofu in a single layer in a shallow baking pan or cookie sheet and pour the marinade over it.
  • Let it soak for several hours or overnight.
  • Drain excess liquid and dry tofu in food dehydrator or 200 F oven. This will take 4 to 8 hours, depending on the weather (it took six hours for me in the oven).
  • Flip the tofu over hourly so it dries evenly.
  • Dry the jerky until it is very chewy, but not crispy.

This is a simple tasty recipe that I love to make. I'm the owner of A Little Taste of Aloha in Tucson and every time there's a vegetarian dish request for catering, this is always a winner with the vegans and vegetarians.

1 (12 ounce) package tofu (any brand will do)
1/2 bunch green onion, chopped
1/2 cup soy sauce (Aloha Shoyu Preferred)

Steps:

  • 1. Cut tofu into half inch squares and place in a serving bowl.
  • 2. Spread the green onions generously over the top of the tofu.
  • 3. Pour the soy sauce evenly over all of the ingredients.
  • 4. Mix all of the ingredients so that the soy sauce coats the

1 lb extra firm tofu, drained
1/8 cup Braggs amino acids (or soy sauce)
1/2 cup pineapple juice
1 teaspoon powdered ginger
1/4 teaspoon cayenne (or to taste)
1 teaspoon garlic powder
1 tablespoon honey (or desired sweetener)

Steps:

  • Cut the drained tofu into long narrow strips about 1/4" thickness. They may look big, but will shrink during baking.
  • In a bowl, whisk Braggs, pineapple juice, ginger, pepper, cayenne, garlic powder and honey.
  • Place the tofu strips in a shallow baking pan or on a cookie sheet and pour the marinade over them. Let them marinate for at least 2 hours or overnight for best results.
  • Cook the tofu in a dehydrator, following directions, or bake in the oven at 200*F. for 4-6 hours. Turn the tofu over once every hour so it bakes evenly.
  • Continue until the texture is very chewy but not crispy.
  • Tofu jerky will keep indefinitely. Store in a container with a tight fitting lid.
  • Enjoy!
