1 ½ cups butter
2 cups white sugar
4 eggs
½ teaspoon salt
2 teaspoons baking soda
1 (20 ounce) can crushed pineapple, drained
¼ cup unsweetened pineapple juice
1 (3.5 ounce) package flaked coconut
1 cup chopped walnuts
2 teaspoons vanilla extract
1 (16 ounce) package graham crackers, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and line with parchment paper one 10 inch tube pan.
  • Cream butter or margarine, sugar, and eggs together; add salt, baking soda, crushed pineapple, and pineapple juice. Add coconut, walnuts, and vanilla. Mix in the graham cracker crumbs. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour and 30 minutes.

2 c flour
2 c sugar
2 eggs
2 tsp baking soda
1 tsp vanilla extract
1/4 tsp salt
1- 20 oz can(s) pineapple, crushed with juice
1 c chopped walnuts
FROSTING
8 oz cream cheese
1 1/3 c confectioners' sugar
1/2 c butter, softened
1 tsp vanilla extract

Steps:

  • 1. Combine all ingredients in a large bowl. Mix by hand. pour into a greased 9x13 pan. Bake at 325 for 40-50 minutes. Frost when cooled.

1/3 cup butter, softened
3 tablespoons brown sugar
2 large eggs
3 tablespoons honey
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
2 tablespoons half-and-half cream
1 cup raisins
1 cup chopped dates
1 package (6 ounces) dried apricots, finely chopped
3 cups pecan halves

Steps:

  • In a large bowl, cream butter and brown sugar. Beat in eggs and honey. Combine the flour, baking powder, salt, allspice and nutmeg; add to creamed mixture alternately with cream. Stir in raisins, dates, apricots and pecans. , Pack into two greased and floured 8x4-in. loaf pans. Place pans on middle rack of oven; place a shallow pan of hot water on lowest rack. , Bake at 300° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool completely in pan. Loosen edges with a knife and remove from pan. Store in an airtight container in the refrigerator.

1/2 cup chopped maraschino cherries, drained
1/2 cup sweetened shredded coconut

2 cups sugar
3-1/2 cups sweetened shredded coconut (about 10 ounces)
1 cup sour cream
1 carton (8 ounces) frozen whipped topping, thawed
Additional coconut, toasted, optional

Steps:

  • In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, combine the pineapple, sugar, 3-1/2 cups coconut and sour cream. Set aside 1 cup for frosting. Place one cake on a serving plate; top with a third of the remaining pineapple mixture. Repeat layers twice. , Fold whipped topping into the reserved pineapple mixture. 1-1/4 cups golden raisins
1 cup chopped walnuts, toasted
3 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature

Steps:

  • Preheat oven to 275°. Line bottoms of four greased 9x5-in. loaf pans with parchment; grease parchment., In a small bowl, toss candied fruit, raisins and walnuts with 1/2 cup flour. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in remaining flour. Fold in fruit mixture., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pans 10 minutes before removing to wire racks to cool.
