BACARDI RUM BALLS

Edited 12/16/13: The El Boricua website now lists the ingredients as: 1 box vanilla wafers, crushed; 3 Tbsp. cocoa; 1 1/2 cups finely chopped walnuts, 4 1/2 Tbsp. corn syrup, 1/3 cup rum, and 1 cup confectioners sugar (plus more for rolling balls). (It states that finely chopped coconut may also be added.) Current recipe says it makes 50-60 balls.

Steps:
- Crush the Vanilla Wafers using a food processor or if you don't have one, put the wafers in a sealed plastic bag and use a rolling pin (or wine bottle) to crush finely, no chunks or lumps.
- Crush the nuts using the same process as for wafers.
- Place in a large bowl, add the honey and rum.
- Form into small balls and roll in powdered sugar.
CORNMEAL HOT "CEREAL "(FUNCHE)
I ate this as a treat with my best friend After School. It is called Funche, a Puerto Rican polenta mush. It is Sooo Good,it's warm,creamy and a bit sweet.I Use Harina de maiz mas fina(A very fine cornmeal, Goya makes it)) so its smooth not grainy.I have been searching for quite sometime but in wrong places, not thinking it was like mush but sweet :o(. I found a similar version of this on elboriqua.com.I hope you enjoy it as much as I have. I also add sugar with the cornmeal so it dissolves, but that is a personal taste as to the amount of sweetness.

- Bring milk, water ,salt(if using)and butter to a boil.
- Remove from heat and gradually add cornmeal,sugar to taste if using, continually stirring.
- Return pot to stovetop over medium- heat stirring until it thickens up.
- Serve in a bowl warm with added sugar or milk if desired as breakfast cereal or treat. You can add some fruit to make it een healthier.

Steps:
- Season both sides of the chicken liberally with salt and pepper.
- Heat the oil in a deep saucepan, add the chicken and sear on both sides until golden brown, about 2 minutes on each side.
- Remove the chicken and add the onions and garlic and cook at medium-low heat until the onions are golden brown, about 10 minutes.
- Season with salt and pepper.
- Stir in the yellow chile and return the chicken to the pan.
- Spoon some of the onions over the chicken, cover and cook for 10 to 15 minutes, until chile sauce has completely infused the mixture and the chicken is cooked through.
- Add the lemon juice and cook another 10 minutes, to allow flavors to meld.
- Slice breasts to serve.

PUERTO RICAN YELLOW BIRD COCKTAIL
I visited the Bacardi distillery in Puerto Rico and it was a really neat tour. They had so many different kinds of rum, that my hubby looked like he was in heaven! This is a refreshing tropical drink that uses Bacardi light rum. This recipe is from Carnival Cruise Line, which is who we took our Caribbean cruise with. Enjoy!
