1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
1 cup gravy, warm (we love vegan mushroom gravy!)
1 -1 1/2 cup shredded non-dairy cheddar cheese

Steps:

  • Cook hash browns as per directions on the bag.
  • Plate, top with cheese and pour warm gravy on top to melt the cheese.
  • Enjoy!

2 russet potatoes, peeled
3 tablespoons clarified butter
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch paprika, or to taste

Steps:

  • Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
  • Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

4 (6 ounce) halibut
2 1/2 cups Simply Potatoes Southwest Style Hash Browns
1 teaspoon kosher salt
1 tablespoon chives, chopped
1/2 cup extra virgin olive oil

Steps:

  • Combine potatoes, salt, and chives together in a bowl.
  • Place 1/4 of potato mixture on each of the fish filets, packing mixture onto fish tightly and fully.
  • Heat oven to 350 degrees.
  • Heat olive oil in a large, oven proof skillet over medium high heat. Cast iron would be ideal.
  • When oil begins to shimmer, place fish filet, potato side down, into the skillet. Continue to cook potato side down until hash browns become golden brown. Place skillet in oven and continue to cook until fish is cooked though, about 12 minutes.
  • Remove from oven. Serve fish potato side up.

1 (20 ounce) package Simply Potatoes Shredded Hash Browns
1 (10 3/4 ounce) can cheddar cheese soup
1 (8 ounce) package cream cheese
1 cup panko parmesan herb seasoned bread crumbs
8 pieces bacon (cooked and diced)

Steps:

  • Preheat oven at 350 degrees.
  • Combine first 3 ingredients in a bowl and mix until thoroughly combined.
  • Spray a 8X10 baking dish with nonstick cooking spray.
  • Spoon mixture into baking dish.
  • Sprinkle panko bread crumbs over mixture.
  • Cook bacon until crisp. Cut into small diced pieces and sprinkle on top of bread crumbs.
  • Bake for 40 minutes uncovered.
