CHEESY HASH BROWN SHEPHERD'S PIE
This easy Shepherd's Pie recipe is layered with ground beef, carrots, corn and green peppers smothered in a tomato spiked brown gravy all topped with crispy, cheesy hash browns. It's perfect comfort food for St. Patrick's Day or an any day easy family favorite! I've also included instructions on how to freeze ground beef Shepherd's Pie and how to make ahead!

Steps:
- Hash Brown Topping: Heat 2 tablespoons olive oil over medium heat in a large nonstick skillet. Add hash browns in a single layer and cook undisturbed for 5 minutes. Flip hash browns and cook another 5 minutes. (They will not be all the way cooked - just golden in some places.) Set aside to cool.
- Meat and Vegetables: Brown beef and onions in a 12" oven proof skillet* over medium high heat until beef is cooked through. Drain off excess grease.
- Add garlic and sauté 30 seconds. Sprinkle flour over meat and cook while stirring for 2 minutes. Add remaining Meat/Vegetable ingredients and simmer, stirring occasionally, over medium heat for 7-10 minutes or until thickened. Taste and add additional hot sauce if desired. Spread evenly in skillet.
- Meanwhile, in a large bowl, mix 1/2 cup sharp cheddar cheese, Parmesan cheese, hash browns, sour cream, salt and pepper.
- Spread hash brown topping evenly over meat mixture and sprinkle with remaining 1 cup sharp cheddar cheese. Bake at 400F degrees for 30 minutes or until hash brown are completely cooked then broil to desired hash brown crispiness.
AMERICAN SHEPHERD'S PIE WITH HASH BROWNS
A comfort food favorite, ground beef and vegetables in a savory gravy are topped with cheese-topped hash brown potatoes.

Steps:
- Gather the ingredients. Preheat oven to 375 F.
- Place ground beef, mushrooms, onion, garlic, 1 teaspoon salt, and pepper in a large heavy skillet.
- Sauté, breaking up ground beef, until the juices have almost evaporated.
- Stir in Worcestershire, then flour.
- Cook 1 minute, stirring often.
- Add beef broth, stirring to combine, then heavy cream.
- Simmer until the gravy thickens.
- Pour into a glass baking dish .
- Let cool slightly, then sprinkle green peas evenly on top of beef.
- In a mixing bowl, combine hash brown potatoes, chives, 1 cup of cheddar cheese, the remaining teaspoon of salt, and mayonnaise.
- Spread evenly on top of the beef layer.
- Spread the remaining cup of cheddar cheese on top and sprinkle lightly with paprika.
- Bake for about 45 minutes until cheese has melted and is slightly browned.
- Let rest 15 minutes before serving.

HASHBROWN SHEPHERDS PIE

Steps:
- 1. in a bowl, combine the ground beef with salt and pepper to taste, water, egg and garlic. At this point you can either brown and drain the meat ahead or you can use it raw. Line the bottom of a 9x13 casserole dish with the meat.
- 2. Spread your veggies out over your meat. If canned, drain first. Add mushrooms.
- 3. Next layer the entire bag of hashbrowns over the mushrooms. Salt and pepper the potatoes.
- 4. Sprinkle the cheese over the potatoes.
- 5. Loosely cover the dish with foil and place in a preheated 350 degree oven for 40 mins. If you pre-brown your meat, bake for only 25-30 minutes.
- 6. Remove the foil and bake for another 15 minutes until the cheese melts and browns lightly.

HASH BROWNS STROGANOFF PIE
This is a simple, but tasty meal that works great for those nights when you don't really feel like cooking but know you have to. It comes from Grandma's Touch cookbook. I jazz it up a wee bit with the cajun spice, can of diced green chili's and sometimes a chopped jalapeno. Those are optional items and can be left out if preferred. I usually serve it with a green salad and some steamed broccoli. (** I use recipe #14372 cajun spice)

- Combine the egg, potatoes and sour cream. Press into a greased 8 inch pie plate. Bake at 350°F for 15 minutes.
- In a large skillet, brown the beef . Add the optional cajun spice when cooked about half way. Continue to brown beef until it's just finished cooking and drain off excess fat.
- Add the onion and celery to the meat and saute until the onions are transparent. Remove from heat.
- Add the soup, sour cream, salt & pepper. (This is when to add the optional tin of green chili's and jalapeno as well. Depending on our company, I sometimes leave out the jalapeno but do add the tin of diced chili's). Mix well.
- Spread beef mixture into hash brown shell and top with grated cheese.
- Bake at 350°F for 30 minutes.
- Let sit for 5 minutes after removing from oven before serving.

CRISPY HASH-BROWN SHEPARD'S PIE
This takes shepard's pie to a whole new level. It's amazingly awesome. I had family over for dinner and they couldn't get enough, my mom was raving about it. Great for meat and potato eaters!

- 1. Cook beef, mushrooms, garlic, salt, pepper, in skillet until juices have almost evaporated. Add a sprinkle of lawry's seasoning salt to season beef.
- 2. Stir in Worceteshire, then flour. Cook 1 minute and add beef broth and heavy cream. Simmer until gravy thickens. Pour into a baking dish and sprinkle peas over top and let cool.
- 3. In a bowl, combine hash browns, chives, 1 cup cheese, 1 tsp salt and mayo. Mix well and spread across top of beef layer. Spread remainder of cheese. and bake 45 minutes. I put broil on for a couple of minutes to get that good crispy top.
