1-1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup sugar, divided
1/2 cup butter
4 cups sliced peeled apples
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 large egg, lightly beaten
1/3 cup evaporated milk
1 teaspoon vanilla extract
3/4 cup chopped nuts
1-1/3 cups sweetened shedded coconut

Steps:

  • In a bowl, combine flour, salt and 1/3 cup sugar. Cut in butter until the mixture resembles fine crumbs; press into a greased 13x9-in. baking pan. , Arrange the apple slices on top of crumbs; sprinkle with lemon juice. Combine 1/3 cup sugar with cinnamon; sprinkle over apples. Bake at 375° for 20 minutes. , Meanwhile, in a small bowl, combine remaining sugar with the rest of the ingredients. Spoon over baked apples; bake for 20 minutes or until golden brown. Cut into squares while still warm.

2 cups all purpose flour
1 1/2 cups old fashion oats
1/2 cup raw pecans
1 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
2 sticks (1 cup) cold salted butter, cubed
1 cup apple butter, homemade or store bought
2 honey crisp apples, thinly sliced
2 tablespoons pure maple syrup
1 tablespoon all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons vanilla extract
2 tablespoons cold salted butter, thinly sliced

Steps:

  • 1. Preheat the oven to 350 degrees F. Line a 9x13 inch baking dish with parchment paper.2. In the bowl of a food processor, pulse together the flour, oats, pecans, brown sugar, baking powder and cinnamon, until the oats are mostly ground. Add the cold butter, pulse until a crumbly dough forms. If the dough seems dry, add 1 tablespoon water.3. Press 1/3 of the dough into the bottom of the prepared baking dish. Transfer to the oven and bake 10 minutes or until lightly golden.4. Meanwhile, make the filling. In a medium bowl, toss the apples with the maple syrup, flour, cinnamon, nutmeg, and vanilla. Spread the apple butter evenly over the pre-baked crust. Arrange the apples in an even layer over the apple butter. Sprinkle the remaining 2/3 streusel dough over top of the apples. Lay the butter sliced over the streusel. Return to the oven and bake for 30-40 minutes or until the crumble is a light golden brown. 5. Let cool completely before cutting into bars. Keep stored in a sealed container for up to 1 week.

2 cups flour
1 cup firmly packed brown sugar
3/4 cup granulated sugar, divided
1-1/2 tsp. ground cinnamon
1/2 cup (1 stick) cold butter
1 cup chopped walnuts
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. milk
1 egg, beaten
1/2 tsp. vanilla
3-1/2 cups chopped apples

Steps:

  • Preheat oven to 350°F. Mix flour, brown sugar, 1/2 cup of the granulated sugar and the cinnamon; cut in butter using pastry blender or two knives until mixture resembles coarse crumbs. Stir in walnuts. Reserve 2 cups of the crumb mixture for topping; press remaining crumb mixture firmly onto bottom of 13x9-inch baking pan.
  • Beat cream cheese and milk with electric mixer on medium speed until well blended. Add remaining 1/4 cup granulated sugar, the egg and vanilla; mix well. Pour over crust. Top with apples; sprinkle with reserved crumb mixture.
  • Bake 30 min. Cool completely. Cut into 32 bars to serve. Store in tightly covered container in refrigerator.

2 cups plus 2 tablespoons all-purpose flour, divided
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
½ teaspoon ground nutmeg
1 cup unsalted butter, softened
2 cups granulated sugar
2 eggs
1 teaspoon vanilla
4 cups peeled and chopped Granny Smith apples
½ cup coarsely chopped pecans
½ cup packed brown sugar
½ cup chopped pecans, toasted
¼ cup unsalted butter, melted
2 tablespoons water
1 ½ tablespoons quick-cooking rolled oats

Steps:

  • Preheat oven to 350°. In a medium bowl, combine 2 cups flour, the baking soda, cinnamon, salt and nutmeg. In a large bowl, beat softened butter with a mixer on medium 30 seconds. Add granulated sugar; beat until light and fluffy. Beat in eggs and vanilla. Add flour mixture, beating until just combined. Stir in apples and coarsely chopped pecans
  • Line a 13×9-inch baking pan with parchment paper. Spread batter in prepared pan. Bake until golden and set in the center, 50 to 60 minutes.
  • Meanwhile, in a small bowl, stir together brown sugar, toasted pecans, melted butter, the remaining 2 tablespoons flour, the water and oats. Sprinkle over hot bars. Bake 5 minutes more.
  • Cool completely on wire rack. If desired, use parchment paper to lift bars out of pan. Place on a cutting board to cut into bars.

1 crisp apple, such as Braeburn or Crispin, cored and diced with skin
1 teaspoon ground cinnamon
2 tablespoons dark brown sugar, plus more to taste
3 cups water
2 cup quick-cooking oats
1/2 cup wheat germ
1/4 cup ground/milled or whole flax seed (or a combination of both)
1/4 cup chopped dried apples
1/4 cup golden raisins
3/4 cup 1 percent milk

Steps:

  • Melt the butter in a medium saucepan over medium heat, and the apple and cook until lightly brown and soft, 2 minutes. Add cinnamon and sugar and cook until dissolved. Add the water and bring to a boil. Add the oats, wheat germ, flax, dried apples and raisins. Stir constantly for 2 minutes until oats are cooked and dried fruit is slightly plumped. Divide into 4 bowls, sprinkle each bowl with more brown sugar, a drizzle of milk and a dried apple ring.

This delivers all the pleasure of apple pie - a buttery crust and topping sandwiching juicy spiced apples - without the need to roll out a dough. A simple dough is pressed into a bottom crust and squeezed into crumbles for the top. You can arrange the topping into a lattice, stripes, or other decorative pattern if you'd like. The whole pan easily serves 24 and can be cut into smaller bars if you want to serve an even-bigger crowd. These bars are best the day they are made, but they can be refrigerated for up to 2 days. Or, they can be frozen immediately after cooling and kept in the freezer for up to 1 month. Just make sure to thaw them before serving.

3/4 cup/75 grams walnuts, toasted and chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1 1/2 pounds/680 grams tart apples, such as Granny Smith (about 3 large), peeled, cored and cut into 1/8-inch slices
1 1/2 pounds/680 grams sweet-tart apples, such as Fuji, Pink Lady or Gala (about 3 large), peeled, cored and cut into 1/8-inch slices
3 tablespoons lemon juice
1/4 cup/55 grams unsalted butter (1/2 stick)
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1/2 teaspoon ground cardamom
2/3 cup/135 grams sugar

Steps:

  • Make the crust and topping: Heat oven to 350 degrees. Line a 9-by-13-inch cake pan with foil with overhang on all sides. Lightly grease pan with softened butter.
  • Pulse flour, sugar and salt in a food processor with the blade attachment to mix. Add butter and pulse until mixture resembles coarse sand. Put 1 1/2 cups in a medium bowl and mix in walnuts, cinnamon and cardamom. Squeeze with your hands to form a solid mass of dough. It's O.K. if a few bits fall off. Cover and refrigerate.
  • Pour remaining mixture into prepared pan and spread in an even layer, then press into bottom of pan and 1/2 inch up the sides.
  • Bake until golden brown and dry to the touch, 20 to 25 minutes. Cool on a wire rack. Raise oven temperature to 375 degrees.
  • While crust bakes, make the filling: Toss all of the apples with the lemon juice in a large bowl. Melt butter in a large sauté pan set over medium-high heat. Stir in cinnamon, nutmeg and cardamom and sizzle for 15 seconds. Add apples and cook, stirring often, until just starting to soften, about 5 minutes. Add sugar and stir well. Cook, stirring occasionally, until all liquid releases from the apples then evaporates, 10 to 15 minutes. The mixture should be quite dry and the apples tender, but not sticking to the pan. Remove from heat and cool. (Tip: If you want your apples to cool quickly, spread them on a parchment-lined sheet pan and pop in the freezer for 5 to 7 minutes.)
  • Spread apple filling evenly over crust and press down gently to get rid of any gaps between the apple slices. Uncover the reserved walnut mixture and break off pebble-sized pieces. Arrange pieces in a lattice or striped pattern over filling or scatter evenly on top.
  • Bake until the topping is golden brown, 45 to 50 minutes. Cool completely in pan on a rack. To serve, lift apple pie bars out of pan and onto a large cutting board. Slide bars off foil, then cut into 6 even strips crosswise and 4 even strips lengthwise.

2 1/4 cups whole wheat pastry flour, divided
1 cup oatmeal
2 teaspoons vanilla, divided
1/2 cup sugar, divided (or other sweetener)
5 small apples, diced (peeling optional)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
8 tablespoons Smart Balance butter spread, cold

Steps:

  • Heat oven to 350.
  • In food processor, pulse 2 c flour, oatmeal, and 1/4 c sugar. Add cold butter spread and 1 t vanilla and pulse until mixture looks like granola, then pulse into a dough.
  • Press mixture into a greased 9 x 13 pan and bake 12 minutes.
  • Toss together apples, 1/4 c sugar, 1 t vanilla, cinnamon, and nutmeg. Spread over cooled crust and bake about 40 minutes more.
