Quick and easy way to cook bacon on the stove and retain the taste while still remaining crispy, not taste as salty and you will be able to fully cook bacon to exact crispiness of your choosing.

6 slices bacon (more if your pan allows)
1/2 cup water

Steps:

  • Add 6 slices of uncooked bacon to deep pan.
  • Add 1/2 cup water to pan (may add more or less; just cover the bacon). Bacon will move with your fingers easily to position next to each other.
  • Cook on high setting until water boils rapidly.
  • Reduce heat to medium-high until water is boiled from pan.
  • Reduce heat to medium-low; flip bacon.
  • Flip Bacon at about 5 minutes. Move outer pieces of bacon in rotation to middle pan bacon for uniform cooking. Cook to desired Crispness. Your bacon will not be as salty or brittle and the taste will be amazing.
  • Drain on paper towel.
  • Serve as desired.

BOILED BACON WITH CABBAGE & CARROTS

A classic. Boiled bacon is always well received, whatever the occasion, but we especially love the leftover sandwiches the next day!

1.3kg piece smoked bacon
1 onion , peeled and studded with 6 cloves
large bunch herbs tied together, including bay, thyme and parsley stalks
1 bunch new-season carrots (about 12 in total), scrubbed and trimmed
2 pointed cabbages , trimmed and each cut into 6 wedges
150ml stock , from the bacon
142ml pot double cream
3 tbsp English mustard
handful fresh curly parsley leave, chopped

Steps:

  • Place the bacon in a stockpot with the onion and herbs, then cover with water. Bring to a simmer, then cook for 45 mins, topping up with water if needed. Add the carrots, then continue to cook for 15 mins. Ladle 150ml stock into a smaller saucepan; set aside. Add the cabbage wedges to the stockpot, then continue to cook everything for another 10-15 mins until the cabbage is tender, but not overcooked.
  • While everything is having its final cooking, make the sauce. Pour the cream into the 150ml stock and bring to the boil. Simmer for a few mins, then whisk in the mustard and parsley. Season with salt and pepper to taste.
  • Remove the meat from the stock, then carve into thick slices. Serve on a platter with the cabbage and carrots, and moisten with a trickle of stock. Serve the sauce in a jug and some boiled and buttered new potatoes on the side.

BRAISED BACON WITH COLCANNON CAKES

A bacon joint can stretch a long way. Serve with potato and Savoy cabbage cakes, plus a fried egg and optional tomato ketchup

600g lean bacon joint
700g potato (Maris Piper or King Edwards are good), halved
400g Savoy cabbage , chopped
3 tbsp olive oil
1 small onion , finely chopped
50g plain flour
4 large eggs
ketchup , to serve

Steps:

  • Put the bacon joint in a flameproof casserole dish or heavy-based saucepan and cover with water. Pop on a lid, bring to the boil, then simmer gently for 45 mins until cooked. Meanwhile, boil the potatoes in a pan of salted water for 20 mins. five mins before the end of cooking, add the cabbage. Drain well, return to the pan for 1-2 mins to dry out, then mash together.
  • Add 1 tbsp of the oil to a frying pan with the onion and cook over a medium heat for 5 mins. add this to the potatoes and cabbage, and mix together with a little seasoning. Set aside. Meanwhile, drain the bacon and leave to rest for 10 mins.
  • Put the flour on a plate. Shape the potato and cabbage mixture into 8 cakes, then roll them lightly in the flour, tapping off any excess. Add 1 tbsp oil to the frying pan and fry the cakes in 2 batches for 3-4 mins on each side until golden.
  • Cover the potato cakes with foil and set aside. Wipe the frying pan with kitchen paper, then add the remaining oil. Crack in the eggs and cook until the white is set and the yolk is still runny.
  • Slice the bacon and serve with the potato cakes, eggs and ketchup.

Steps:

  • MICROWAVE - Put a layer of kitchen paper on a microwave proof plate and top with the bacon slices and place another layer of kitchen paper on top and cook in microwave on high for 2 to 3 minutes. Season with salt and pepper if desired.
  • FRYPAN - Place bacon in a cold frying pan and turn the heat on and cook until crisp (by placing in a cold pan ensures that the fat renders out while the pan is warming, therefore there is no need for oil). Season with salt and pepper if desired.

2 medium onions, skinned
2 medium carrots, thickly sliced
2 celery ribs, chopped
1 bay leaf
4 black peppercorns
2 tablespoons butter
2 tablespoons flour
1 cup milk
salt & freshly ground black pepper
2 tablespoons fresh parsley, chopped

Steps:

  • Place the ham in a large pot or Dutch oven and cover with cold water; bring to a boil over medium high heat.
  • Remove ham and drain water (you are trying to remover salt).
  • Return ham to pot along with onions, carrots, celery, bay leaf and peppercorns; cover with cold water and bring to a boil over medium high heat.
  • Skim surface with a slotted spoon, cover, reduce heat, and cook 1 hour and 20 minutes.
  • Meanwhile, make the parsley sauce by whisking the butter, flour, and milk in a saucepan, over medium heat, until thickened and smooth, about 1 to 2 minutes; season with salt and pepper and add parsley.
  • Once the meat is done, remove the rind (skin) and excess fat; slice.
  • Serve the sliced meat with the parsley sauce.
