Harissa powder is the ground spice blend of the spicy, earthy North African paste with a base of smoked chili peppers. It can be used as a dry rub on meats or as a spice in place of any other spice blend in your favorite recipe, such as tacos, tagines, braised meats, curries, or even tofu. Store in an airtight container for up to 1 month, or until the expiration date of any of the single ingredients, if earlier.

10 dried, smoked chile peppers
2 tablespoons cumin seeds
2 tablespoons coriander seeds
2 tablespoons caraway seeds
½ teaspoon multi-colored whole peppercorns
2 tablespoons smoked paprika
½ tablespoon garlic powder
1 teaspoon smoked salt
1 teaspoon dried parsley
1 teaspoon dried oregano

Steps:

  • Remove and discard stems and seeds from dried chiles. Slice chiles in half or quarters, if they are large.
  • Heat a cast iron skillet over medium-low heat. Add chiles and heat through to ensure all the moisture has evaporated. Remove and place on a rack to cool. Place cumin seeds, coriander seeds, caraway seeds, and peppercorns to skillet. Stir seeds and toast until fragrant but not burning, about 3 minutes. Remove and allow to cool.
  • Grind chiles and toasted seeds with a mortar and pestle into a coarse powder. Add smoked paprika, garlic powder, smoked salt, parsley, and oregano. Continue to blend until all spices are completely combined and pulverized.

This is the soup that Moroccans traditionally use to break the fast every night of Ramadan. Season with salt, pepper, mint leaves and cinnamon to taste.

1 pound cubed lamb meat
1 teaspoon ground turmeric
1 ½ teaspoons ground black pepper
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cayenne pepper
2 tablespoons margarine
¾ cup chopped celery
1 onion, chopped
1 red onion, chopped
½ cup chopped fresh cilantro
1 (29 ounce) can diced tomatoes
7 cups water
¾ cup green lentils
1 (15 ounce) can garbanzo beans, drained
4 ounces vermicelli pasta
2 eggs, beaten
1 lemon, juiced

Steps:

  • Place the lamb, turmeric, black pepper, cinnamon, ginger, cayenne, butter, celery, onion, and cilantro into a large soup pot over a low heat. Stir frequently for 5 minutes. Pour tomatoes (reserve juice) into the mixture and let simmer for 15 minutes.
  • Pour tomato juice, 7 cups water, and the lentils into the pot. Bring the mixture to a boil, then reduce the heat to simmer. Let soup simmer, covered, for 2 hours.
  • About 10 minutes before serving turn the heat to medium-high, place chickpeas and noodles into the soup, let cook about 10 minutes (until noodles are al dente). Stir in lemon and eggs, let eggs cook 1 minute.

Make a warming bowl of harira, the Moroccan soup full of pulses, tomato, beef and spices. It's hearty, satisfying and full of flavour - perfect for cold days

Number Of Ingredients 15

1 tbsp olive oil
300g braising beef or boneless beef, trimmed of excess fat, cut into 3cm pieces
1 small onion, finely chopped
1 tsp ground turmeric
½ tsp ground black pepper
¼ tsp ground ginger
1 tbsp chopped fresh parsley
1 tbsp tomato purée
pinch of saffron
70g dried chickpeas, soaked overnight and drained (or 140g canned chickpeas, drained)
6 large tomatoes, grated or blitzed in a food processor
100g celery (2 stalks), finely chopped
80g dried green lentils
3 tbsp cornflour or plain flour
2 tbsp chopped fresh coriander and lemon wedges, to serve

Steps:

  • Heat the olive oil in a large flameproof casserole over a medium heat. Add the meat, onion and spices with 1½ tsp salt. Leave for 5-10 mins to lightly brown the meat, stirring occasionally. Add the rest of the ingredients except the lentils, cornflour, coriander and lemon wedges. Add 1 litre of boiling water, bring to the boil, cover with a lid and reduce the heat to low. Leave to simmer for 1 hr.
  • Add the lentils to the casserole, cover with a lid and cook for a further 20 mins. When the chickpeas, meat and lentils are cooked, mix the cornflour in a small bowl with 3 tbsp water, and stir until smooth. Stir the cornflour mixture into the casserole. Simmer for 5 mins until the harira thickens and takes on a velvety texture.
  • Scatter over the coriander, then serve hot with lemon wedges on the side for squeezing over.

4 tablespoons ground pumpkin seeds
3 tablespoons ground almonds
3 tablespoons ground pistachios (shelled, skinned)
3 tablespoons roasted ground poppy seeds (khus khus)
1 teaspoon ground green cardamoms, skinned
1 tablespoon anise (saunf)

Steps:

  • All the dried fruits should be UNSALTED.
  • the almonds maybe ground with their skins on, but the pistas need to have their skins removed. Just bunch them in a muslin cloth and rub them and viola no skin!
  • If time permits roast the seeds slightly; cool them completely then grind and store.
  • Poppy seeds are tricky to grind - make sure you roast them and then grind them; or better still look for ground poppy seeds in grocery stores.
  • If it's too time consuming for you, include the skins of the green cardamom - though these fibrous buds don't grind fine and surface up on the palette - in curries ground skins don't stand out, here in a shake they just might to a discerning palette.
  • Could be made into warm milkshakes or into frozen milk lollies as a teatime nutritious snack. Sweeten with sugar though.
  • For an additional punch, you may add a dash of cinnamon powder or 1 tsp dried vanilla powder.
