HAMBURGER HOBO POUCHES
This is my husband's favorite campfire food. I try to make it every time we go camping. It makes a quick and easy meal that is hearty and delicious!

Steps:
- 1. Lay out 4 sheets of heavy duty aluminum foil and spray each one with butter flavor cooking spray. Place onion slices on the center of foil.
- 2. Shape the ground beef into four quarter pound hamburger patties. Lay hamburgers on top of onions and sprinkle with seasonings.
- 3. Place sliced carrots and potatoes over hamburger patties and sprinkle again with seasonings and spray with a bit of butter flavored cooking spray or I can't believe it's not butter spray.
- 4. Fold aluminum foil over burgers and vegetables and seal edges to make a pouch.
- 5. Bake in preheated 350 degree oven or grill over hot coals for 30 minutes until meat is cooked through and potatoes and carrots are tender.
HAMBURGER FOIL PACKET HOBO DINNERS
These mini pot roast pockets are easy and delicious. And my favorite part...they require very little cleanup! Can be done in the oven, on the grill, or over the campfire on camping trips.

- Preheat oven to 350
- Divide ground beef into 4 even hamburger patties about 1 inch thick. If you are feeding children you may want to make their portions smaller.
- Wash your veggies. Cut carrots into 1 inch pieces and potatoes into 1-2 inch pieces.
- Place hamburger patties in the center of each piece of aluminum foil. Surround each patty with pieces of carrots, potatoes, and onions if you choose.
- Place 1/2-1 tbsp butter on the center of each patty. Sprinkles approx 1-2 tbsp of onion soup mix over the ingredients.
- Gather the corners of the foil up and scrunch together to seal each pocket. Place sealed pockets onto a baking sheet in case any sauce leaks out during baking.
- Bake at 350 for 40-60 minutes. Carefully unwrap one pocket keeping face away as steam escaping will be hot. Poke carrots and potatoes with a fork to check for doneness. Once vegetables are done the meat should be cooked through as well. You can check with a meat thermometer. Meat should read 140 degrees or more.
CAMPFIRE FOIL PACKS
These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

- In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
- Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
- Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.
- Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onions. Season with salt, pepper and garlic salt to taste.
- Cover with aluminum foil and seal edges. Bake in the preheated oven until beef is no longer pink and vegetables are tender, about 1 hour.

CAMPFIRE HOBO DINNER
In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

Steps:
- Spray 18-inch square of aluminum foil with cooking spray.
- Place 1/4 of the meat in center of foil.
- Place 1/4 of the vegetables on top of meat.
- Season with butter, salt, garlic powder and pepper to taste.
- Fold top and sides of foil several times to seal food.
- THREE WAYS TO COOK: Always place seam side up when cooking. You may want to double wrap if cooking on a campfire or grill.

EASY HOBO TIN FOIL DINNER RECIPE

- Use a large square piece of aluminum foil for each tin foil dinner. Spray foil with nonstick cooking spray.
- Separate ground beef into 4 equal patties, or steak into 4 servings, and place in the center of each piece of foil.
- Divide potatoes, carrots, and onion evenly between all 4 dinners and place on top of meat. Sprinkle with salt and pepper, to taste. Pour a few dashes of Worcestershire sauce on top of each dinner and fold foil up tightly around the entire meal.
- Cook on a grill on medium-high heat or an open fire for 25-30 minutes, or until vegetables and meat are cooked through.
- Open foil carefully and top with BBQ sauce and shredded cheese.

- Preheat gas grill to medium-high heat. Tear heavy duty tin foil into 4 pieces approximately 15 X 12 inches. Lightly coat with cooking spray.
- While the grill is heating, divide the ground beef into 1/4 pound portions and form into patties. Slice potatoes about 1/4 inch rounds. Peel and slice carrots. Slice onion.
- To build dinner packets, place 3 to 4 slices of potato on the coated foil. Divide onions and carrots between 4 packs and layer over potatoes. Place hamburger patties on top of the veggies. Place 1/2 teaspoon of butter on top of the patty. Sprinkle with 1/2 teaspoon of Montreal Seasoning. Fold foil over ingredients then seal middle and ends
