2 pounds ground beef
2 (15 ounce) cans diced new potatoes
1 cup chopped onion
4 cups milk
1 pound processed cheese food (such as Velveeta ®), cut into chunks
½ pound sharp Cheddar cheese, cut into chunks
ground black pepper to taste
⅔ cup mashed potatoes

Steps:

  • Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add diced potatoes and onion; cook and stir until onion is tender, 5 to 10 minutes.
  • Mix milk, processed cheese food, and Cheddar cheese into beef mixture; bring to a boil. Reduce heat and simmer, stirring often, until heated through and cheese is melted, 15 to 20 minutes; season with pepper. Add mashed potatoes for a thicker chowder; cook until heated through and thickened, about 5 minutes.

2 Tbsp olive oil
1 medium onion (finely diced)
1 large carrot (peeled and thinly sliced)
4 sticks celery (thinly sliced)
1 1/2 lb lean ground beef (85% or leaner)
2 Tbsp tomato paste
3 cloves garlic (minced)
28 oz canned diced tomatoes
8 cups beef broth
2 large yukon gold potatoes (peeled and chopped)
1 tsp Italian seasoning
1 1/2 tsp salt (or to taste)
1/4 tsp ground black pepper (or to taste)
3 Tbsp fresh parsley (chopped for garnish)

Steps:

  • Preheat a 5 1/2 qt dutch oven or soup pot with olive oil over medium heat. Add the chopped onion, carrots, and celery into the pot. Sauté the veggies until softened.
  • Add the ground beef, breaking it apart as you go. Cook it until it turns golden brown.
  • Stir in the diced tomatoes, minced garlic, tomato paste, potatoes, and beef broth. Season with Italian seasoning, salt, and pepper.
  • Bring the soup to a boil. Reduce the heat and simmer for 30 minutes or until potatoes are tender. Season to taste and serve garnished with chopped parsley.

1 pound ground beef
1 medium onion, chopped
12 medium potatoes, peeled and cubed
3 cups water
Salt and pepper to taste
2 cups whole milk
1 can (15-1/4 ounces) whole kernel corn, drained
2 teaspoons dried parsley flakes
1 cup sour cream

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the potatoes, water, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. , Stir in the milk, corn and parsley; cook for 5 minutes or until heated through. Add a small amount of hot soup to sour cream. Gradually return all to pan, stirring constantly. Heat through but do not boil.

1 pound ground beef
1/4 cup chopped onion
3/4 pound red potatoes, cubed (about 2 cups)
1-1/2 cups water
1 celery rib, thinly sliced
3 teaspoons beef bouillon granules
1/2 teaspoon salt
3 tablespoons all-purpose flour
2-1/2 cups 2% milk, divided
1 cup shredded cheddar cheese

Steps:

  • In a large saucepan, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Add potatoes, water, celery, bouillon and salt. Bring to a boil. Reduce heat; simmer, covered, 15-20 minutes or until potatoes are tender., In a small bowl, mix flour and 1/2 cup milk until smooth. Stir into beef mixture. Bring to a boil; cook and stir 1-2 minutes or until thickened and bubbly. Stir in remaining milk; heat through. Add cheese; cook and stir until melted.

1/2 pound ground beef
3/4 cup chopped onion
4 tablespoons butter, divided
2 cloves garlic, minced
1 cup diced carrots
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups chicken broth
4 cups diced peeled potatoes
1/4 cup flour
1 1/2 cups evaporated milk
2 cups cubed process American Cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup sour cream
Chopped dill pickle
Chopped tomato

Steps:

  • In a saute pan brown the ground beef. Drain and set aside. In same saute pan saute onion in 1 tablespoon butter until tender. Add garlic, carrots, basil and parsley. Saute about 3 minutes. Add broth and beef and potatoes. Bring to a boil. Reduce heat and cover, simmer for 15 to 20 minutes or until carrots and potatoes are tender. Meanwhile melt remaining butter in a small skillet. Add flour and cook, stirring, for 3 to 5 minutes. Gradually add evaporated milk, stirring constantly, cooking and stirring for 6 to 8 minutes. Gradually stir the sauce into the soup. Bring to a boil and cook for 2 minutes. Reduce heat to low. Add cheese, salt and pepper. Continue to stir until cheese melts. Remove from heat and blend in sour cream. Garnish each serving with chopped fresh tomatoes and dill pickle slices.

I've been using this recipe since my penny-pinching newlywed days back in the 70's. Its inexpensive, hearty, easy and delicious. If you don't eat beef, substitute ground turkey, and you will still have a satisfying meal. Like most soups, its better the next day, but don't expect it to last much longer than that.

1 lb ground beef or ground turkey
1 onions, yellow, medium
4 - 5 celery stalks
3 potatoes medium russets cubed
1 lb carrots, peeled & cubed
1 can(s) diced tomatoes (28 oz)
3/4 c barley (not instant or quick cooking)
2 tsp salt (or to taste)
1 tsp pepper
2 can(s) water

Steps:

  • 1. Dice onion and celery (not too small this is a chunky chowder) and add to a dutch oven with the ground beef (or ground turkey). Cook on high heat to brown meat & sweat veggies. I use 80/20 burger so there is no need to drain, if you do drain, you will lose a lot of flavor.
  • 2. Dice carrots & unpeeled potatoes, (again not too small)and add to pot when the meat is cooked through.
  • 3. Add the canned tomatoes plus 2 cans of water, salt, pepper & barley. Give mixture a good stir & cover. Leave heat on high until mixture starts to boil. Then reduce heat so the chowder stays at a simmer. Cook for approximately 1 hour stirring occasionally. When the potatoes, carrots & barley are cooked, the chowder is done.
  • 4. The longer the chowder cooks, the better it tastes. You can hold it on very low heat, but be careful that the chowder doesn't scorch on the bottom.

This is an old family recipe from my children's great grandmother (Gram aka Maude Jackson :-)). Family legend has it that this recipe was passed down to her from an uncle who fed railroad crews as they built the lines. He had run out of most supplies and had to come up with something hearty enough to feed a bunch of very hungry workmen...this is what he came up with. We love it!

1 tablespoon butter, then drained
5 medium potatoes, peeled and cubed (I don't peel them)
5 medium onions, sliced thin (saute style)

1 pinch baking soda
1 teaspoon brown sugar
1 teaspoon salt
1/4 teaspoon red pepper
1 teaspoon garlic powder
1/2 teaspoon thyme
1/4 cup soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon celery seed
1 quart water, heated to a boil

Steps:

  • Combine all of the ingredients in a Dutch oven.
  • Simmer for 3 to 4 hours.
  • If the soup is too thick, add up to a quart of boiling water.

1 (14 ounce) can tomatoes
1 (8 ounce) can tomato sauce
1 tablespoon Worcestershire sauce
2 tablespoons minced dried garlic (or more if you're like me!)
2 tablespoons minced dried onion
1 teaspoon oregano
1 tablespoon celery seed
1 1/2 teaspoons dried thyme
1/2 teaspoon dried basil
1 teaspoon dried marjoram
14 1/2 ounces milk
1 (14 1/2 ounce) can mixed vegetables, drained
2 -4 tablespoons tomato paste, for thickening

Steps:

  • Brown ground beef in large dutch oven, breaking it up. Drain off grease.
  • Add tomatoes to dutch oven, breaking them up into small pieces. Add back in ground beef, and rest of ingredients up to the mixed vegetables. Simmer for 1/2 hour.
  • Add tomato paste, 1 tablespoon at a time, until thickened to your taste. Serve in bowls, with fresh grated cheddar, if you like.
