To cut the fat in this makeover recipe, we reduced the amount of butter from 1/4 cup to 1 tablespoon, switched the cheese to a reduced-fate Mexican cheese blend and chose lean ham over regular. - Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
- Cook egg noodles just until al dente, according to package instructions. Drain.
- While the noodles are cooking, place mustard, ham, condensed soup, and optional frozen green beans in a large bowl.
- Pour the drained, cooked, hot noodles over the rest of the ingredients in the bowl and stir to combine.
- Transfer noodle mixture to prepared baking dish. Top with grated cheese.

- 1. Prepare noodles according to package directions; drain.
- 2. Melt butter in large skillet, over medium-high heat. Add veggies and cook, stirring frequently, until veggies are tender, about 6-8 minutes.
- 3. Add ham and cook, stirring frequently, until ham cubes are hot, about 2-3 minutes.
- 4. Stir in sour cream and ranch dressing.
- 5. Cook over low heat, stirring frequently, until sauce is melted, smooth and hot.
- 6. Pour hot noodles into a serving bowl.
- 7. Pour veggies and ham mixture over noodles. Toss to combine.

- Place potatoes in 4-quart Dutch oven; add enough water just to cover potatoes. Cover and heat to boiling; boil 4 minutes. Remove potatoes from water with slotted spoon.
- Add pasta to boiling water in Dutch oven; cook and drain as directed on package, adding broccoli for last 2 minutes of cooking. Cool potatoes, pasta and broccoli slightly. Refrigerate about 1 hour or until completely chilled.
