CITRUS-SPICE GLAZED HAM

- Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Cover and bake until a thermometer reads 130°, 2-1/2 to 3 hours., Meanwhile, in a small saucepan, combine 1/4 cup orange juice and Chinese five-spice powder; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 1-2 minutes. Stir in brown sugar and honey. In a small bowl, mix cornstarch and remaining orange juice until smooth; stir into brown sugar mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. , Remove ham from oven. Brush with half of the glaze. Bake ham, uncovered, until a thermometer reads 140°, 15-20 minutes. Just before serving, stir fruit into remaining glaze; heat through. Serve with ham.

I created this recipe many years ago with items I already had on hand. Since then, it has become a family favorite. The ham is succulent with a mild citrus flavor. - Cut ham in half; place in a 5-qt. slow cooker. In a small bowl, combine brown sugar and 1/4 cup soda; rub over ham. Top with orange, lemon and lime slices. Add candied ginger and remaining soda to the slow cooker., Cover and cook on low for 4-5 hours or until a thermometer reads 140°, basting occasionally with cooking juices. Let stand for 10 minutes before slicing.

DOUBLE-DUTY HEAVENLY CITRUS HAM

- Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in the center of each diamond. Loosely cover ham with foil. Bake at 325° for 1-1/2 hours., In a small saucepan, combine the soda, marmalade and brown sugar. Bring to a boil; cook until liquid is reduced by half, about 15 minutes. Stir in mustard., Brush ham with some of the glaze; bake 15-30 minutes longer or until a thermometer reads 140°, basting occasionally with remaining glaze. Let stand 10 minutes before slicing., Slice and cube 2 cups ham; save for Ham & Noodle Bake. Slice and serve remaining ham.

CITRUS JALAPENO GLAZED HAM

- Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
- Meanwhile, whisk together the lemon and lime juices, pepper jelly, Worcestershire sauce and jalapeno in a small saucepan. Bring to a simmer and reduce until thickened to about 3/4 cup, about 20 minutes.
- Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush half of the glaze all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze until glossy, glazed and well browned, about 45 minutes more.

EASY RAISIN SAUCE FOR HAM
This recipe came from my mother. Has always been one of my favorites! VERY easy...and inexpensive too! This is wonderful added to the top of the ham the last 30 minutes of the cooking time, or you can simply serve it with the ham in a small bowl. I hope you enjoy it.

BAKED HAM WITH BROWN SUGAR-CITRUS GLAZE - SOUTHERN LIVING

- Preheat oven to 350°F. Line a baking pan with heavy-duty aluminum foil. Stir together brown sugar, marmalade, salt, pepper, and 1/2 cup of the orange juice in a small bowl.
- Place ham sideways in prepared pan. Brush with 1/4 cup of the brown sugar glaze, gently pushing glaze in between slices using your hands or a brush. Turn ham over, and repeat process with an additional 1/4 cup of the glaze.
- Turn ham cut side down in pan. Pour remaining 1/2 cup orange juice into bottom of pan. Cover tightly with aluminum foil.
- Bake in preheated oven 1 1/2 hours. Uncover ham, and brush evenly with 1/3 cup of the glaze. Bake an additional 15 minutes. Brush with an additional 1/3 cup of the glaze. Bake until a thermometer inserted in thickest portion of ham registers 140°F, about 15 minutes. Remove from oven. Brush ham with remaining glaze and pan drippings. Let stand 15 minutes. Garnish ham with whole and sliced citrus.
