WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. This recipe is great if you use real smoked ham with no water added. When Mother prepared it this way, the flavor was especially sweet and buttery. -Marjorie Schmidt, St. Marys, Ohio

2 fully cooked bone-in ham steaks (1 pound each)
2 teaspoons ground mustard
1/2 cup packed brown sugar
3 medium tart apples
2 tablespoons butter
Pepper to taste

Steps:

  • Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Dot with butter and sprinkle with pepper. , Cover and bake at 400° for 15 minutes. Reduce heat to 325°; bake for 45 minutes. Uncover and bake 15 minutes longer or until apples are tender.

4 fully cooked boneless ham steaks (8 ounces each)
1 cup chopped onion
3 cups apple juice
2 teaspoons Dijon mustard
2 medium green apples, thinly sliced
2 medium red apples, thinly sliced
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
1/4 teaspoon pepper

Steps:

  • In a large skillet coated with cooking spray, brown ham steaks in batches over medium heat; remove and keep warm., In same skillet, saute onion until tender. Stir in apple juice and mustard; bring to a boil. Add apples. Reduce heat; cover and simmer for 4 minutes or until apples are tender., Combine cornstarch and water until smooth; stir into apple juice mixture. Bring to a boil; cook and stir for 2 minutes. Stir in sage and pepper. Return steaks to skillet; heat through.

6 large red apples, unpeeled
8 ounces cooked ham, cubed small
2 tablespoons butter
1/3 cup raisins (brown or golden)
1/3 cup pecans, chopped
3 tablespoons brown sugar
1/2 cup apple juice (may need up to 1 cup)

Steps:

  • Cut the tope off the apples and scoop out the core with some of the fruit, but be sure to leave a thick shell to hold the stuffing.
  • Preheat the oven to 350 degrees.
  • Put approximately 1 cup of the removed apple fruit in a mixing bowl and combine it with the ham, butter, raisins, pecans and brown sugar; mixing the ingredients well.
  • Spoon this mixture into the cored apples and place them in a baking dish.
  • Pour the juice over the apples and bake for 35 to 40 minutes, basting occasionally with the juice.

2 medium acorn squash
2 tablespoons butter or 2 tablespoons margarine
1/2 cup chopped celery
1/3 cup chopped onion
1 1/2 cups chopped cooked ham
2 tablespoons brown sugar
1/4 teaspoon allspice
1/2 teaspoon ground cinnamon

Steps:

  • Cut squash in half lengthwise; remove seeds.
  • Place squash cut side down in a greased baking dish; add water until 1/2 inch deep.
  • Cover dish and bake at 350° for 30 minutes.
  • In a small saucepan, melt the butter.
  • Add in the celery and onion; cook, stirring frequently, until tender.
  • Add the ham, brown sugar, allspice, and cinnamon; stir to combine.
  • Cook over medium heat until well heated.
  • Place squash shells in a baking dish, cut side up.
  • Spoon ham mixture into squash shells.
  • Cover and bake at 350° for 15 minutes.
  • Uncover and bake 15 minutes more.

3 lbs ham slices (2 large ones, about 3/8-inch thick)
1 teaspoon dry mustard (Coleman's preferred)
2 teaspoons vinegar
2 apples, peeled and sliced thinly
1/2 cup brown sugar
1 tablespoon butter

Steps:

  • Remove bone from ham.
  • Mix mustard and vinegar together; spread thinly on ham.
  • Spread apples in two layers on ham; sprinkle well with brown sugar.
  • Roll ham the long way and pin with metal skewers or tie with string.
  • Place in baking pan and dot with butter.
  • Bake at 350F for 25 to 30 minutes.
  • Baste several times while baking.
  • Allow 1/4 to 1/3 pound per serving.
