This dish is not only delicious, but easy to make. I make this for Saturday family brunches and get togethers. It's a big hit.

2 tablespoons olive oil
6 small red potatoes, sliced
1 cup torn fresh spinach
2 tablespoons sliced green onions
1 teaspoon crushed garlic
salt and pepper to taste
6 eggs
⅓ cup milk
½ cup shredded Cheddar cheese

Steps:

  • Heat olive oil in a medium skillet over medium heat. Place potatoes in the skillet, cover, and cook about 10 minutes, until tender but firm. Mix in spinach, green onions, and garlic. Season with salt and pepper. Continue cooking 1 to 2 minutes, until spinach is wilted.
  • In a medium bowl, beat together eggs and milk. Pour into the skillet over the vegetables. Sprinkle with Cheddar cheese. Reduce heat to low, cover, and cook 5 to 7 minutes, or until eggs are firm.

Easy and delicious, this hearty dish's been appreciated whenever I've served it...breakfast, lunch or dinner. Reheated or cold, the leftovers are also great! We-my husband, our 8-year-old daughter and I-live in a suburb. But our back windows look out at mountains, farms, horses and cows.

1 pound red potatoes, cooked and sliced
3 tablespoons butter, divided
1-1/2 cups thinly sliced fresh mushrooms
1 cup thinly sliced onion
1 sweet red pepper, cut into thin strips
2 cups diced fully cooked ham
2 teaspoons minced fresh garlic
1/2 cup minced fresh parsley or basil
1 tablespoon olive oil
8 large eggs
Salt and pepper to taste
1-1/2 cups shredded cheddar or Swiss cheese

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, brown potatoes in 2 tablespoons butter over medium-high heat; remove and set aside., In the same skillet, saute the mushrooms, onion, red pepper and ham in remaining butter until vegetables are tender. Add garlic; cook 1 minute longer; drain. Remove and set aside. , In the same skillet, cook the potatoes, ham mixture and parsley in oil over medium-high heat. In a large bowl, beat the eggs, salt and pepper. Pour into skillet; cover and cook for 10-15 minutes or until eggs are nearly set. , Broil 5-6 in. from the heat for 2-3 minutes or until eggs are set. Sprinkle with the cheese and broil until melted. Cut into wedges.

Number Of Ingredients 11

3 tablespoons canola oil, divided
2 teaspoons salt
1/2 teaspoon ground black pepper
1 russet potato, thinly sliced
1/2 medium yellow onion, diced
2 teaspoons chopped garlic
1 (10-ounce) box frozen chopped spinach, thawed and water squeezed out
4 eggs
1 cup milk
1/2 cup shredded mozzarella cheese
Nonstick cooking spray

Steps:

  • Preheat oven to 450 degrees F. Put a baking sheet into the oven to preheat.
  • In a large bowl combine 1 tablespoon of the canola oil with 1 teaspoon of salt and 1/4 teaspoon pepper. Add the sliced potatoes to the bowl and toss to coat. Remove the baking sheet from the oven, and add the potato slices, making sure they are all in a single layer. Transfer to the oven and bake for 8 minutes.
  • In a skillet, heat the remaining 2 tablespoons of the oil over medium heat. Add the onion and saute for 2 minutes. Stir in the garlic and spinach and saute for another 2 minutes.
  • In a large bowl whisk together the eggs, milk and remaining salt and pepper. Mix in the cheese and the onion and spinach mixture and set aside.
  • Spray an oven-proof skillet with nonstick cooking spray. Turn the oven down to 350 degrees F. Remove the potatoes from the oven and add them to the skillet. Pour in the egg mixture and transfer the skillet to the oven. Bake until the eggs have set, about 30 to 35 minutes.
  • Remove from oven and let cool for 5 minutes. Serve warm or at room temperature, directly from the skillet.

1 tsp oil
80g chestnut mushrooms , sliced
50g ham , diced
80g bag spinach
4 medium eggs , beaten
1 tbsp grated cheddar

Steps:

  • Heat the grill to its highest setting. Heat the oil in an ovenproof frying pan over a medium-high heat. Tip in the mushrooms and fry for 2 mins until mostly softened. Stir in the ham and spinach, and cook for 1 min more until the spinach has wilted. Season well with black pepper and a pinch of salt.
  • Reduce the heat and pour over the eggs. Cook undisturbed for 3 mins until the eggs are mostly set. Sprinkle over the cheese and put under the grill for 2 mins. Serve hot or cold.

Although I use 2% skim cheese, this could easily be adapted to the Weight Watchers Core program by switching to fat-free cheese. I like to make this on the weekend, then wrap slices individually. It will keep for a week in the fridge, and makes breakfast much easier on those crazy hurried mornings.

1/2 cup egg substitute
1 cup fresh spinach, chopped
4 ounces lean ham, cubed
1 cup 2% mozzarella cheese
1 ounce roasted red pepper
2 tablespoons parmesan cheese

Steps:

  • Preheat oven to 350. Spray an 8-inch pie dish with cooking spray.
  • In a large bowl, beat eggs and egg substitute. Stir in spinach, ham, cheese, and roasted pepper.
  • Pour into pie dish and bake for 20 minutes.
  • Sprinkle parmesan cheese on top and bake until eggs are set, 10-20 minutes. Eggs are done when knife inserted in middle comes out clean.
  • Allow to rest 10 minutes. Cut into 6 wedges.

1 chorizo sausage, thinly sliced
800 g potatoes, peeled, cut into 4cm pieces (coliban (washed)
100 g sliced ham, quartered
100 g baby spinach leaves
6 eggs
4 green shallots, ends trimmed, thinly sliced
1 bunch rocket, ends trimmed, washed, dried
1 bunch fresh chives, cut into 5cm lengths
30 g shaved parmesan cheese

Steps:

  • Cook the potato in a large saucepan of salted boiling water for 7-8 minutes or until tender. Drain.
  • Heat a 22cm-diameter (base measurement) non-stick frying pan over medium-high heat. Add the chorizo and cook, turning occasionally, for 3-4 minutes or until golden. Transfer to a plate.
  • Add potato to pan and cook, turning occasionally, for 3-4 minutes or until golden brown. Return the chorizo to pan along with the ham and spinach and cook, tossing, for 1-2 minutes or until spinach wilts.
  • Preheat grill on high. Whisk together the eggs and shallot in a small bowl. Season with salt and pepper. Pour the egg mixture into the pan. Reduce heat to low and tilt the pan slightly to evenly distribute the egg. Cook for 4-5 minutes or until the frittata is set around the edge but still runny in the centre. Place the pan under the grill and cook for 3-4 minutes or until golden brown and just set.
  • Combine rocket, chives and parmesan in a bowl. Cut frittata into wedges. Serve with rocket salad.

6 large eggs
1/4 C milk
1/4 C grated Parmesan cheese
1/4 C grated Gruyere cheese
Salt & pepper
2 T olive oil
3/4 C sliced or diced potatoes
1/4 C diced onion
3 cloves minced garlic
2 oz. diced ham or bacon
3 oz. baby spinach
1/4 C grated Gruyere cheese for topping

Steps:

  • In large bowl, whisk eggs, milk, Parmesan & Gruyere cheeses, salt & pepper until well combined. Set aside. Preheat broiler. On stove, heat oil in 8" nonstick, oven proof skillet over med heat. Add potatoes & cook 8-10 min. until almost tender, stirring occasionally. Add onions & garlic; cook until onions are translucent. Add ham & spinach. Stir until spinach is wilted. Lower heat to med low & pour egg mixture into pan. Using a spatula, stir eggs from the bottom 2-3 min. then allow eggs to cook and until bottom half is completely set. For firmer texture, invert and continue cooking. . Top fritqtta with remaining cheese & place under broiler. Broil until cheese is melted @3-4 min. Carefully remove from pan and serve in wedges. Serve with salsa.
