An easy cheesy dish that uses up that Christmas or Easter ham! My family looks forward to this one!

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.
  • Sprinkle bread crumbs atop casserole.
  • Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

1 cup of cubed cooked ham
2 cups of diced potatoes (I used frozen diced potatoes for hash browns.)
1/2 cup of diced onion
1/2 cup of diced bell pepper
1/2 cup of shredded cheddar cheese
2/3 cup of milk
1 tablespoon of cornstarch
Salt and pepper to taste (1/2 teaspoon of salt and 1/4 teaspoon of pepper)
1/2 cup of crushed plain potato chips (optional
1/4 cup of shredded cheddar cheese (optional and in addition to the cheese listed above)

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart with nonstick cooking spray.
  • In a large bowl, combine the ham, potatoes, onion, bell pepper, and 1/2 cup of the cheese. Stir until mixed. Pour the mixture into the baking dish.
  • Add salt and pepper.
  • In a smaller bowl, combine the milk and cornstarch. Whisk until the cornstarch has dissolved. Pour over the ham mixture in the baking dish.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • If you want a cheesy, crunchy topping, sprinkle the crushed potato chips and additional shredded cheese over the top.
  • Turn the oven up to 400 degrees F.
  • Return to the oven for about 15 minutes or until the topping is golden brown.

We didn't cook the celery with the onion and green pepper to add some additional crunch, but they could be cooked together. We used reduced-fat ingredients throughout and had great success. We found that there were no spices needed as the vegetables were a great flavor combination! This recipe ended up being a winner with everyone in the family!

1 onion, diced
1 green bell pepper, diced
5 potatoes, diced
1 (16 ounce) bag frozen chopped broccoli, thawed
1 pound diced cooked ham
1 (8 ounce) package sliced fresh mushrooms
2 stalks celery, diced
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) container sour cream
1 (4 ounce) package cream cheese
6 ounces shredded Monterey Jack cheese
½ cup buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray a skillet with cooking spray. Cook and stir onion and green pepper over medium heat until onions are translucent, 5 to 7 minutes.
  • Spray a 9x13-inch baking dish with cooking spray.
  • Combine cooked onion, green pepper, potatoes, broccoli, ham, mushrooms, and celery in the prepared baking dish, stirring to distribute the vegetables and ham.

2 cups cubed fully cooked ham
2 cups diced cooked potatoes
1 can (15-1/4 ounces) whole kernel corn, drained
1/4 cup minced fresh parsley
1 tablespoon chopped onion
1/4 cup butter, cubed
1/3 cup all-purpose flour
1-3/4 cups whole milk
1/8 teaspoon pepper
1 cup shredded cheddar cheese or process American cheese

Steps:

  • In a large bowl, combine the first four ingredients; set aside. In a saucepan, saute onion in butter for 2 minutes; stir in flour until blended. Gradually add milk and pepper. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; pour over the ham mixture and stir until combined. Transfer to a greased 11x7-in. baking dish. 1 package (26 ounces) frozen shredded hash browns
3 tablespoons vegetable oil
2 cups diced fully cooked ham
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
2 cups sour cream
2 cups shredded sharp cheddar cheese, divided
1/2 cup shredded Parmesan cheese

Steps:

5 lbs red potatoes, quartered
1 (16 ounce) container sour cream
1/2 cup milk
1 (10 3/4 ounce) can condensed cream of chicken soup
2 cups shredded cheddar cheese
1/4 cup chopped green onion
2 cups cooked chopped ham
salt and pepper
1 1/2 cups parmesan cheese seasoned bread crumbs
1/4 cup melted butter

Steps:

  • Preheat oven to 350°F (175°C).
  • Lightly grease a 9x13 inch baking dish.
  • Place potatoes in a large pot of water, and bring to a boil.
  • Boil until slightly tender, about 12 minutes.
  • Drain, and transfer to a large bowl.
  • Mix sour cream, milk, cream of chicken soup, Cheddar cheese, green onions, ham, salt and pepper with the potatoes.
  • Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.

This was one of our first recipes we had to make once we started cooking. I still have my original recipe card (did I really used to write like that?!) and we have this often. I hope you will enjoy this as much as we do! Prep time does not include times to cook ham or potatoes.

2 cups diced cooked ham
2 cups diced cooked potatoes
2 cups white sauce (recipe below)
1 cup shredded cheddar cheese
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon dried onion flakes
2 tablespoons butter
2 1/2 tablespoons flour
2 cups half-and-half (or whole milk)

Steps:

  • Cook potatoes in your favorite method (bake or boil) till done. Allow to cool enough to handle.
  • While potatoes are cooling, prepare white sauce.
  • Melt butter in medium sauce pan over medium heat.
  • Stir in flour to form thick paste. Continue to cook, stirring constantly for 1 minute (this allows the flour taste too cook out).
  • Slowly add half 'n half and continue to stir over medium-low heat until sauce this thickened.
  • Add mustard, salt, pepper, onion & 1/2 cup cheese to the sauce. Stir to incorporate and remove from heat.
  • Preheat oven to 375°F.
  • Spray 2 quart casserole with PAM or your choice of no-stick cooking spray.
  • Dice the cooked ham (left over ham is great for this recipe).
  • Peel and dice the potatoes (approximately 1/2" pieces).
  • Place the potatoes in casserole dish in an even layer.
  • Spread ham pieces over the top of the potatoes.
  • Add remaining cheese to the white sauce and give a final stir (this last addition of cheese should not melt right away) and pour over the ham and potatoes.
  • Bake uncovered for 25-30 minutes.

Turn dehydrated potatoes plus chopped ham into an easy, cheesy, potato scallop casserole.

Number Of Ingredients 8

2 cups dehydrated potato slices
2 Tablespoons butter
3 Tablespoons flour
1 12 ounce can evaporated milk, 2%
1 cup shredded cheese (any kind pr combination that melts)
1/2 cup hot water
black pepper (to taste)
2 cups chopped ham

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease an 8 x 8-inch baking pan and set aside.
  • Place sliced potatoes in a large bowl and cover the potatoes with boiling water. Let sit while making the cheese sauce.
  • To make the cheese sauce: Melt the butter in a 2-quartsaucepan over medium-low heat. Add flour and stir to combine.
  • Stir in the milk and continue stirring until sauce has thickened. Add cheese and stir until melted.
  • Add the ½ cup hot water to the sauce and stir until well combined. Add black pepper to taste.
  • Drain the potato slices and layer one half in the baking pan. It's ok if the slices are not fully hydrated. They will continue to get soft while baking. Top with the ham if using, and one half of the cheese sauce. Layer the remaining potato slices and top with the remaining cheese sauce.
  • Cover the casserole and bake for 30 minutes. Uncover, and bake for an additional 30 minutes.
  • Let sit for 5 minutes before serving.

This is the real deal. I found this recipe in an old church cookbook. This recipe was submitted by my great aunt that came over from Germany. We like the sauce so much that I make 1/2 again what the recipe calls for.

1 lb ham, sliced 1/2 inch thick
1 tablespoon bacon fat
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk

6 -8 medium potatoes, peeled and sliced thin

Steps:

  • Pan fry ham in bacon fat until brown. Place in well buttered casserole dish.
  • Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk. Stir over direct heat until sauce boils and thickens.
  • Arrange potatoes over ham and pour hot sauce over them. Bake in slow oven (325 degrees) until potatoes are tender, about 1 hour. Cover for first 1/2 hour then remove cover.
