HOT PINEAPPLE HAM SANDWICHES

Steps:
- Mix first 4 ingredients. Place half the mixture in a 5-qt. slow cooker; top with half the ham. Repeat layers. Cook, covered, on low until heated through, 3-4 hours., Using tongs, remove ham from slow cooker, leaving pineapple mixture behind; keep warm. In a large saucepan, mix cornstarch and water until smooth. Stir in pineapple mixture; bring to a boil. Reduce heat; simmer, uncovered, until mixture is slightly thickened, stirring occasionally. Serve ham, pineapple mixture and, if desired, cheese on rolls.

My mom thinks these might be more '60s than '80s, but they sound '80s to me, so here they are. These open-faced grilled cheese sandwiches are easy to make and sure to get a comment or two from your friends.

- Preheat the broiler to high.
- Place the bread on a baking sheet and place under the broiler for 2 to 3 minutes on each side, or until lightly browned. (This can also be done in a toaster.) Place a piece of ham on each piece of bread and top with a pineapple ring and a piece of cheese. Place the pan under the broiler and cook for 5 minutes, or until the cheese is melted and begins to brown. (Watch them carefully because they can go from brown to black quickly.) Remove the pan from the broiler, cut each sandwich diagonally into 4 pieces, and place on a serving platter.

- In a wok or deep skillet, heat up the oil over high heat and cook onion, garlic, carrots, bell peppers, and ham until onions are translucent and ham is slightly browned. Push all of the cooked ham and vegetables to the side of the pan.
- Beat the eggs and pour into the cleared half of the pan. Scramble the eggs and mix with the rest of the vegetables.
- Add rice, soy sauce, pepper, and pineapple. Mix well and let the rice cook until slightly crispy.

- In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
- In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
- Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.
