Classic Macaroni Salad with Ham image

Are you looking for an easy, fuss-free recipe to make for a potluck? Give this one a try, because you can't get much easier than a recipe with only two steps. True, there is a little prep work involved, but nothing more intense than chopping a little ham and a few vegetables. This recipe is similar to a layered salad in that you can do a lot of the prep work in advance and store everything in air-tight containers in the refrigerator. When it comes time to assemble the salad, simply boil some pasta, stir in the ham, vegetables, mayonnaise and seasoning, then cover and chill at least two hours. This salad recipe, sent in by Keva Colston of Baton Rouge Louisiana, was published in the June 2007 issue of Southern Living and quickly garnered many favorable reviews and comments from readers. It seems most Southern cooks have a favorite cold pasta salad or layered salad they like to make on a warm afternoon. Not only are pasta and layered salads refreshing and satisfying as a main dish salad, they are versatile enough so that you can swap out ingredients with whatever you have in the fridge or garden.

3 cups uncooked elbow macaroni
1 cup chopped cooked ham
1 cucumber, peeled, seeded, and diced
1 tomato, seeded and diced
1 small red bell pepper, diced
1 small yellow bell pepper, diced
1 small green bell pepper, diced
1 1/4 cups mayonnaise
1 1/2 teaspoons Cajun seasoning
2 teaspoons lemon juice
Salt to taste

Steps:

  • Prepare macaroni according to package directions. Drain and rinse with cold water until cool.
  • Combine macaroni and next 9 ingredients until blended. Add salt. Cover and chill at least 2 hours.

2 c. uncooked elbow macaroni
2. T. white vinegar
2 c. chopped cooked ham
1 (12 oz.) package frozen peas, thawed
1 (8 oz.) block mild or medium cheddar cheese, cut in small cubes
1/2 c. very finely chopped onion
1 c. mayonnaise
1 T. white vinegar
1 tsp. granulated sugar
1/2 tsp. salt
1/4 tsp. pepper

Steps:

  • Cook macaroni in boiling salted water according to package directions. Drain well.
  • Place warm macaroni in a large bowl; toss with 2 tablespoons vinegar.
  • Stir in cubed cheese, ham, peas, and onion. Set aside to let noodles absorb the vinegar.
  • Prepare dressing in a separate smaller bowl: Whisk together mayonnaise, 1 tablespoon vinegar, sugar, salt, and pepper.
  • Pour over the macaroni mixture and stir until well combined.
  • Cover and chill for at least an hour before serving. Or, chill overnight to allow the flavors to fully meld.

2 cups uncooked elbow macaroni
1/4 cup butter, cubed
1/4 cup all-purpose flour
2 cups 2% milk
4 teaspoons chicken bouillon granules
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
1-1/2 cups cubed fully cooked ham
1/4 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni., Transfer to a greased 2-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350° until bubbly, 20-25 minutes. Let stand for 5 minutes before serving.

1/2 lb boiled ham or 1/2 lb baked ham
1/2 cup cheddar cheese, diced
2 cups cooked elbow macaroni
1 cup chopped celery
1 small onion, chopped
1/2 cup dill pickle, chopped
1/2 cup mayonnaise
2 teaspoons prepared mustard

Steps:

  • Dice ham into 1/2-inch cubes.
  • Combine ham and cheese with macaroni, celery, onion and pickle.
  • Mix mayonnaise and mustard; then stir into macaroni mixture, mixing well.
  • Chill well until ready to serve, several hours for maximum flavor!
  • Serve in a lettuce lined bowl, and garnish with fresh parsley, if desired.
  • Tip: Elbow macaroni doubles in volume when cooked, so start with 1 cup dry macaroni to yield 2 cups needed for this recipe.

2 teaspoons kosher salt, plus additional for salting water
8 ounces elbow macaroni (about 2 cups)
2 tablespoons milk
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1/3 cup extra-virgin olive oil
1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes
3/4 cup frozen baby peas, thawed (about 4 ounces)
2 ribs celery, with leaves, diced
2 tablespoons chopped fresh dill

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.
  • For the dressing: Whisk the vinegar, mustard, the 2 teaspoons salt, and black pepper to taste in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in the sour cream.
  • Drain the onions, pat dry, and add to the macaroni along with the ham, peas, celery, and dill. Add the dressing and fold to coat the pasta evenly. Serve immediately or cover and refrigerate until ready to serve.

2 tablespoons olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 cup chopped red onions or 1/2 cup scallion
1 1/2 cups chopped celery
1/2 cup chopped sweet pickle (about 6 small pickles)
1 medium red bell peppers or 1 medium yellow bell pepper, chopped
1 1/2 cups mayonnaise
2 tablespoons milk
1 tablespoon prepared yellow mustard
2 teaspoons celery seeds
2 teaspoons sweet paprika

Steps:

  • In a large salad bowl, toss together the warm pasta, oil, salt, and pepper; allow to cool, then add the onion, celery, pickles, and bell pepper; toss to blend.
  • In a small bowl, stir together the mayonnaise, milk, mustard, and celery seeds; pour half over the salad and toss to coat.
