1 tablespoon olive oil
1 onion (diced)
1 carrot (diced)
2 stalks celery (diced)
2 garlic cloves (chopped)
4 -6 cups chicken stock
2 cups ham (diced)
1 ham bone (optional)
2 (19 ounce) cans chickpeas (drained and rinsed)
1 teaspoon oregano
1 bay leaf
pepper
1/2 lb green beans (cleaned, trimmed and cut)

Steps:

  • Heat the oil in a large sauce pan.
  • Add the onions, carrot and celery and saute until tender, about 10-15 minutes.
  • Add the garlic and saute for a few minutes.
  • Add the stock, ham, chickpeas, oregano and bay leaf and simmer, covered on low heat for at least 20 minutes.
  • Add the green beans and simmer until the green means are cooked al dente.

Chock-full of ham, vegetables, chickpeas and orzo, this hearty soup is loaded with good-for-you flavor. Linda Arnold sends the recipe from her Edmonton, Alberta kitchen.

1/2 cup uncooked orzo pasta
1 small onion, chopped
2 teaspoons canola oil
1 cup cubed fully cooked lean ham
2 garlic cloves, minced
1 teaspoon dried rosemary, crushed
1 teaspoon rubbed sage
2 cups reduced-sodium beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
4 tablespoons shredded Parmesan cheese
1 tablespoon minced fresh parsley

Steps:

  • Cook orzo according to package directions. Meanwhile, in a large saucepan, saute onion in oil for 3 minutes. Add the ham, garlic, rosemary and sage; saute 1 minute longer. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Drain orzo; stir into soup. Add chickpeas; heat through. Sprinkle each serving with cheese and parsley.

8 cups hot water
4 smoked ham hocks (2 1/2-pounds)
1 1/2 cups dried chickpeas, soaked overnight and drained
3 large carrots, cut into 2-inch lengths
1 medium onion, cut into 1-inch dice
2 bay leaves
2 thyme sprigs
3 medium (6-ounce) red-skinned potatoes, peeled and quartered
1/2 cup flat-leaf parsley, chopped
Salt and freshly ground pepper

Steps:

  • In a slow cooker, combine the water, ham hocks, chickpeas, carrots, bay leaves and thyme sprigs. Cover and cook on high for 1 hour and 30 minutes, stirring occasionally. Add the potatoes, cover and cook on low for 1 hour and 45 minutes, until the chickpeas, ham hocks and potatoes are tender. Transfer the ham hocks to a large plate. Discard the bay leaves and thyme sprigs. When the hocks are cool enough to handle, remove the meat and coarsely chop it. Return the ham to the soup. Using a paring knife, cut the carrots in the cooker into bite-size pieces. Transfer the potatoes to a bowl and mash to a puree. Stir the mashed potatoes into the soup along with the parsley. Season with salt and pepper and serve.

  • In a large soup pot, heat the olive oil over medium heat, then add the onion, garlic and celery and saute until the onion is soft & translucent. Add the carrots & saute for a few minutes more.
  • Stir in the ham bone and juices, water, bay leaf and chickpeas. Bring to a boil, then reduce heat to a simmer and cook for at least 1 hour (or, if using dried chickpeas, 2 – 4 hours or until chickpeas are soft). Remove the ham bone and let cool enough to remove any ham clinging to the bone.
  • Add the tomatoes, green beans, corn and ham and cook for 15 – 20 minutes more, then just before serving, stir in the kale or spinach. Season to taste with salt & pepper if desired.
