Steps:
- In a skillet, melt butter over medium heat. Saute mushrooms, pepper and onions until tender. In a bowl, beat eggs until foamy; stir in ham. Pour over the vegetables. Let eggs set on the bottom, then lift the edges to allow any uncooked egg to flow underneath. Cover and cook until the eggs are set, about 3 minutes. Sprinkle with cheese and cut into wedges to serve.

Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
- Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.
- Pour egg mixture over vegetable mixture. Cook, without stirring, until eggs are slightly browned on the bottom.
- Broil in the preheated oven until eggs are nearly set, about 5 minutes. Sprinkle Cheddar cheese over eggs and continue broiling until frittata is completely set and cheese is melted, about 5 minutes more.

- Preheat oven to 450°F.
- Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife.
- In skillet, sauté minced garlic, diced potatoes and onions in olive oil.
- Once brown, add a few teaspoons of water and cook another 1-2 minutes. Then add in the diced ham.
- In bowl, whisk eggs, milk, salt and pepper.
- Pour egg mixture over the ham, potatoes and onions.
- Cook over medium heat for 5 minutes, until the eggs have set around the edges or the skillet.
- Place skillet into the oven and bake at 450°F for 5-10 minutes, or until eggs have set in the middle.
- Add shredded cheese to the top and bake another 1-2 minutes until cheese melts.
- Serve Ham and Cheese Frittata with Fresh Fruit.

ONION, HAM, AND CHEESE FRITTATA

- Position a rack about 8 inches from the broiler and preheat.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
- Stir the onions, ham, herbs and cheese into the eggs.
- Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
- Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
HAM AND CHEESE MINI FRITTATAS
Note: you must use 2 mini-muffin tins with 2-inch cups to make these easy party bites. These tins can be found on the baking aisle in larger markets or at many discount stores. Most hold 12 mini-muffins per tin, some hold 24. This recipe will make 24 pieces.

- Preheat oven to 375 degrees F.
- Mix together the chopped cheese, Canadian bacon, and chives and season with a few grinds of pepper. In a bowl, beat the eggs. Brush the muffin tins with melted butter. Using a teaspoon, fill the 24 mini-muffin cups halfway with the cheese mixture. Using a ladle, fill the cups to just below the edge with the beaten eggs. Bake until golden, about 12 minutes. Remove and let cool to handle, then arrange the egg bites on a plate and serve.
HAM AND CHEESE FRITTATA
A little dense than a regular frittata as there is stuffing in the recipe. I have also made this using frozen spinach or shredded zucchini instead of broccoli. I also use fresh broccoli and blanch it before adding to recipe. It's perfect for a light dinner or Sunday brunch. We make it for dinner and then either DH and I will eat the remainder for lunch the next day.

- Another way would be to saute the garlic, onions, potatoes and ham in the skillet. Then place those into an 8x8-inch baking dish, then pour the eggs over and bake it. It may take a bit longer to bake since you don't cook the eggs on the stovetop at all. Just bake it until the eggs have set in the middle.
