HAM AND CHEESE EGGROLLS
My friend doug is a dishwasher at a five star restaurant. on his lunch break he has experimenting and came up with these. His boss liked them so well he put them on the menu!

Steps:
- mix everything but wrappers, oil mustard, and jelly.
- spoon into the wrappers.
- moisten the edges of each wrapper with water.
- carefully tuck edges of wrapper under.
- roll wrapper tightly and press edges.
- drop eggrolls into hot oil fry about five minutes.
- serve with mustard and jelly as dippers.

- Place ham and cheese on each roll bottom. Spread cream cheese over tops. Replace tops. Arrange in a single layer in a greased 13-in. x 9-in. baking pan., In a small bowl, combine the remaining ingredients; brush over rolls. Cover with foil. Refrigerate for several hours or overnight., Bake, covered, at 350° for 20-23 minutes or until heated through.

- In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Moisten remaining corner with water and roll up tightly to seal., In a Dutch oven or deep cast-iron skillet, heat 1-2 in. of oil to 375°. Fry pizza rolls until golden brown, 1-2 minutes on each side. Drain on paper towels. If desired, serve with additional pizza sauce.

- Place an eggroll wrapper on a work surface so that the corners are facing up and down, left and right (like a diamond, not like a square). Place about 3 tablespoons of the ham and 3 tablespoons of the cheese in the center of the eggroll wrapper.
- Now you want to roll up the eggroll, this is similar to rolling up a burrito. Fold the left and right edges over towards the center. Then fold the bottom edge up and over the ham and cheese, use your hands to squash down the ham and cheese so there are no air pockets. Then roll the ham and cheese towards the top corner, using your fingers to seal the seams closed. Repeat using up all of the ham and cheese.
- Then heat the oil in a skillet over medium low heat. Once it starts to bubble, add the eggrolls being careful gently place the eggrolls in the oil using tongs so that oil doesn't splatter. Do not overcrowd the pan. Brown all sides of the eggroll, keeping a close eye to turn them as each side becomes golden brown.
