HEFEKRANZ (YEAST WREATH)



Hefekranz (Yeast Wreath) image

This recipe is from the King Arthur Flour website, one of my all time favorites. I've changed it a bit to make it more authentically German. It is a traditional Christmas bread.

Number Of Ingredients 11

2 eggs
2 cups milk, scalded, then cooled (should amount to a total of two cups when cooled)
1/4 cup sugar
1 tablespoon active dry yeast
5 -6 cups unbleached all-purpose flour
1/2 cup butter, at room temperature
1 teaspoon salt
1 lemon, zest of
1/2-1 cup golden raisin
1 egg, beaten with 1 tablespoon water
sliced almonds

Steps:

  • Break the eggs into a 2 cup measuring cup. Add cooled milk to equal 2 cups liquid. Beat in the sugar, yeast and 3 cups of the flour. Let rest for 20 minutes.
  • Stir in the salt, butter, lemon zest, raisins and 2 cups flour. Stir until the dough begins to pull away from the sides of the bowl. Turn out of the bowl and knead,using the last cup of flour if needed, to make a smooth , elastic dough. (You can do the whole process in a stand mixer, too!) . Halfway through, let the dough rest while you lightly oil a bowl. Bread dough loves a short rest! Return, knead again until you have a smooth elastic dough. Place in the bowl let rise until doubled, punch down, let rise again. Dough is ready when you poke your finger in and indent remains.
  • Turn it out onto a table divide into 3 equal pieces (I use a scale). Roll into ropes an inch in diameter, letting the dough relax if you need to, to relax the gluten. Braid and form a wreath, tucking the ends into each other as best you can. Place on a greased baking sheet cover with a damp cloth or lightly greased cling film let rise for 45 minutes. Glaze with the egg wash and sprinkle the almonds over top a generous amount. Put in a cold oven turn oven to 400 degrees for 15 minutes, turn oven down to 350 and bake for an additional 25-30 minutes. Remove, cool and serve or store until you are ready for this wonderful bread.

PARSNIP HAZELNUT CAKE WITH PRALINE CREMEUX



Parsnip Hazelnut Cake with Praline Cremeux image

Many years ago, when I had a bakery back in San Francisco, I made parsnip cake instead of carrot cake. Parsnips, browned butter, hazelnuts and sage are ingredients I use together often in ravioli or agnolotti pasta dishes, and I simply translated that powerful combination into a sexy dessert.

4 ounces (1 stick) unsalted butter
6 fresh sage leaves
2 large eggs
6 ounces sugar
3 cups grated parsnips (grated in the food processor with the blade attachment, not the grater; 2 to 3 parsnips)
3/4 cups ground roasted hazelnuts or hazelnut flour
6 ounces all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1/4 teaspoon grated nutmeg
4 ounces cream cheese, at room temperature
1/4 cup almond butter
1 tablespoon store-bought caramel sauce
1 ounce oat milk, almond milk or dairy milk
Pinch kosher salt
4 ounces heavy cream

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Add the butter to a small skillet over medium heat. Cook with the sage leaves until the butter is browned, then remove the leaves and set aside on a paper towel-lined plate. Reserve for later. Let the butter cool slightly.
  • Add the eggs and sugar to a stand mixer fitted with a whip attachment. Whip on medium-high speed until it has thickened, 5 to 7 minutes.
  • Add the grated parsnips, ground hazelnuts, reserved browned butter, flour, baking powder, salt and nutmeg. Fold until just combined, then pour into a 9-by-13-inch nonstick baking dish.
  • Bake until golden brown, 40 to 45 minutes.
  • For the praline cremeux: Add the cream cheese, almond butter, caramel sauce, oat milk and salt to a food processor. Turn on the food processor and stream in the cream until fully blended, scraping down the sides as needed.
  • Pour the mixture into a bowl and refrigerate while the cake is baking.
  • Spoon the cake into jars or rocks glasses, then drizzle with the cremeux and garnish with the reserved fried sage leaves.

PAU PAU'S STEAMED CUPCAKES (FA GAO)

In cookbook author Kristina Cho's family, you can't celebrate Lunar New Year without fa gao. The unfrosted Chinese cupcakes cook in a steamer basket, and how high they rise is just as important as their taste. "As the tradition goes, the taller your cupcakes bloom and blossom, the more good luck and prosperity you're going to have," she says. Like many of the family recipes in her book Mooncakes and Milk Bread, this one took many tries to get right because Kristina re-created it from her grandmother's vague directions. "She would be happy to give me the recipe, but she just does everything by feel - she uses a coffee mug as a measuring cup," Kristina says. But it turns out there is a secret to these fluffy prosperity cakes: pancake mix!

1 1/4 cups pancake mix, such as Bisquick
1 1/4 cups all-purpose flour
2/3 cup firmly packed dark brown sugar
1 1/3 cups water

Steps:

  • Prepare your steamer setup: Fill a heavy-bottomed pot (the same diameter as your steamers) with 3 to 4 inches water. Bring the water to a rapid boil. Line 10 individual 3-inch cupcake molds with paper liners and arrange in 2 bamboo steamers.
  • In a medium mixing bowl, whisk the pancake mix, flour, brown sugar and water until smooth. (The batter should be thick but runny.)
  • Divide the batter evenly between the molds, filling each about three-quarters full. Stack the bamboo steamers and cover with the lid. Steam for 15 minutes. Lift the lid, remove the steamers and allow the cupcakes to cool for 5 minutes. Serve warm or at room temperature.

KOSSUTH KIFLI (HUNGARIAN CAKEY COOKIE AKA HALF MOONS)

Another one my grandmom used to make and no one has the recipe. After hours of searching the web, I finally found it (I didn't even know the name before!). This version is from Linda Paul, who won a Christmas cookie contest in Minneapolis with them.

1 cup unsalted butter, plus
extra unsalted butter, for pan
1 1/2 cups granulated sugar
8 eggs, separated
1/2 teaspoon vanilla extract
1 grated lemon, rind of
1 lemon, juice of
2 teaspoons baking powder
1 2/3 cups flour, plus
extra flour, for pan
1 1/2 cups finely chopped walnuts
powdered sugar, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • Butter and flour bottom and sides of a 9-by 13-inch cake pan.
  • In a large bowl, using an electric mixer on medium speed, cream together butter and granulated sugar.
  • Add egg yolks, one at a time, and beat until fluffy.
  • Add vanilla, lemon rind and lemon juice and beat to combine.
  • Gradually add in baking powder and flour.
  • In a medium bowl using electric mixer on high speed (with clean beaters), beat egg whites until stiff.
  • Fold egg whites into batter.
  • Gently spread batter into prepared pan.
  • Evenly sprinkle top with finely chopped walnuts and bake 25 to 30 minutes.
  • Remove to a wire rack.
  • Cool until cake shrinks away from sides of pan (about 15 minutes).
  • With a small round biscuit cutter (or a glass), periodically dipped in powdered sugar, cut one circle (don't remove it), then cut another circle halfway down the first one, making two crescents and one oval scrap.
  • Remove from pan and repeat (you can eat the oval scraps;).
  • Cool crescents completely and dust with powdered sugar.
  • Store in a tightly covered container for up to 2 days.
