I found this recipe on EthnicGrocer.com and fixed for a holiday meal with other German favorites. It was wonderful and hearty on a cold December day, and it was even better the second day. Tastes great with a warm rye bread.

2 tablespoons olive oil
2 cups chopped onions
2 tablespoons minced garlic
3 bell peppers, chopped
3 tablespoons tomato paste
1 lb beef, in 1 inch cubes
1/4 teaspoon caraway seed
1 teaspoon paprika
6 cups beef stock
1 tablespoon lemon juice
1 cup potato, peeled and cubes
sea salt
pepper

Steps:

  • Heat oil.
  • Saute onions until translucent.
  • Add garlic, peppers and tomato paste.
  • Cook for 10 minutes.
  • Add beef, caraway seeds, paprika, stock and lemon juice.
  • Simmer for about 1 1/4 hours Add potatoes and continue simmering until meat and potatoes are tender.
  • Season with sea salt and pepper to taste.

2 lbs beef (cut in small cubes)
3 tablespoons oil or 3 tablespoons butter
4 medium onions, chopped
2 garlic cloves, minced
2 tablespoons paprika
salt & pepper
1 teaspoon caraway seed
3 tablespoons tomato paste
1 bay leaf
3 cups water
2 cups beef broth
1/2 cup red wine
4 medium potatoes (cubed)

Steps:

  • Brown the meat in oil or butter; add the onions and garlic and fry until the onions are translucent.
  • Add the paprika, bay leaf, caraway seeds, water, and broth.
  • Bring to a boil, cover, lower heat and simmer for about 45 minutes.
  • Add the potatoes and simmer for an additional 45 minutes; stir in the tomato paste and red wine.
  • Salt and pepper to taste; remove the bay leaf before serving.

  • Brown the beef in batches on medium high to ensure even browning. Remove beef and sauté onions and garlic together until onions are yellow and turning soft. Return beef to pan with onions and reduce heat to medium.
  • Sprinkle in both sweet and hot paprika. Stir and cook together for 1 - 2 minutes. Add flour, thyme, marjoram and caraway seeds. Stir to coat evening and cook for 1 - 2 minutes. Add tomatoes and tomato paste. Stir one last time. Pour in hot beef broth and scrape bottom of pot to remove anything that's stuck. Add Worcestershire sauce and ketchup. Reduce heat to low and let it simmer for 1 - 1 1/2 hours.
