3 medium ripe avocado, peeled and cubed
2 to 3 tablespoons fresh lime juice
1/2 to 1 teaspoon kosher salt
1/2 cup crumbled cooked bacon
1/2 cup Cotija cheese

Steps:

  • In a bowl, mash avocados until almost smooth. Stir in lime juice and ½ teaspoon salt. Let stand 10 minutes to allow flavors to blend. Adjust seasoning with additional lime juice and salt if desired. Top with bacon and Cotija cheese.

  • Combine avocados & mash.
  • Add in lime, sea salt and mix well.

2 tablespoons fresh lime juice
1/4 cup chopped red onion
1/4 cup chopped jalapeno
1/2 cup chopped fresh cilantro
Kosher salt and freshly ground pepper
1/4 cup toasted pepitas
3 tablespoons crumbled cotija or feta cheese

Steps:

  • In a medium bowl, lightly mash avocados. Add lime juice, onion, jalapeno, cilantro, 2 teaspoons salt, and 1/4 teaspoon pepper and mix to combine. Top with pepitas and cheese. Serve immediately or refrigerate in an airtight container with plastic directly on the surface for up to 1 day.
