GROUPER WITH TOMATO AND BASIL
Steps:
- Working off heat, put 1 tablespoon oil in a 10-inch nonstick skillet and add fish, turning to coat with oil on both sides. Arrange fish skinned sides down and sprinkle with salt and pepper.
- Toss together tomato, garlic (if using), basil, remaining tablespoon oil, and salt and pepper to taste in a small bowl, then mound on top of fish. Cover skillet with a tight-fitting lid and cook fish over moderately high heat until just cooked through, about 8 minutes.
BROILED FISH FILLETS WITH BASIL BUTTER
Steps:
- Preheat broiler. Cut four 6x8-inch pieces of foil. Place 1 fish fillet in center of each piece of foil. Fold up foil to form rectangle with 3/4-inch-high sides. Sprinkle fish with salt and pepper. Place packets on small baking sheet.
- Combine butter, 1 tablespoon basil, Old Bay seasoning, lemon juice, and garlic in small bowl. Using wooden spoon, mix until well combined. Spread mixture over fish in foil. Broil fish (do not turn fish) until opaque in center, about 6 minutes. Transfer fish in foil to 4 plates. Sprinkle with remaining 1 tablespoon basil. Serve immediately.
GROUPER WITH LEMON-BASIL CREAM SAUCE
Broiled grouper fillets are livened up with creamy lemon-basil sauce. It will have your family asking for seconds.

Steps:
- Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
- Broil about 10 to 15 minutes until fish flakes easily with fork.
- Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
- To serve, place broiled grouper on individual plates. Top with cream sauce.

- Combine all of the butter ingredients together and stir until well blended. Take four is-inch squares of parchment paper and fold each one in half. Place a grouper fillet on the left side of each piece of paper (right side if you're left-handed). Place a spoon of basil butter on each fillet and top with 2 slices of tomato. Add lemon slice bay leaf, salt and pepper. Fold right side of parchment paper over the grouper and starting at the top, make one-inch folds all along the edge of the packet until it's completely sealed. Preheat the oven to 325 degrees. Put the four packets on a baking sheet. Bake for 25 to 30 minutes. Remove from oven. Place each packet on a dinner plate and slice open the top with knife or scissors.
