- Preheat the oven to 350ºF. Lightly coat a 9-inch pie dish with cooking spray.Bring a large saucepan of salted water to a boil over high heat. Add spaghetti and cook until al dente. Drain and briefly rinse with cold water.In a medium bowl, whisk eggs and stir in ¼ cup Parmesan cheese. Add spaghetti and toss to coat the noodles.Transfer the spaghetti to the prepared pie dish and arrange the noodles on the bottom and up the side of the dish to form a crust.Heat olive oil in a large nonstick skillet set over medium-high heat. Add ground turkey, onion and carrots, and cook until turkey is cooked through, about 5 minutes. Add garlic, oregano, salt and pepper, and cook for 1 minute.Add crushed tomatoes and parsley, and stir to combine. Taste and adjust the seasoning, if necessary. Transfer the turkey mixture to the pie dish and spread it over top, leaving some of the spaghetti around the edges uncovered. Sprinkle mozzarella cheese and remaining ¼ cup Parmesan cheese over top.Bake until the cheese is melted, about 20 minutes. Let the pie rest for about 10 minutes, then cut into 8 wedges. Serve.
BAKED SPAGHETTI WITH GROUND TURKEY
Baked Spaghetti made with ground turkey is a fun take on lasagna. Spaghetti gets layered with ricotta cheese, mozzarella, and ground turkey pasta sauce. This is a meal that both kids and adults love to eat!

- Preheat oven to 350 degrees. Lightly grease a 9 x 13 inch baking dish; set aside.
- Bring a large pot of water to boil. Cook spaghetti in boiling water until just al dente, about a minute short of package instructions. Drain. In a large bowl whisk together the butter, parmesan, and eggs. Toss in the spaghetti to coat; set aside.
- In a large skillet or dutch oven, heat olive oil over medium heat. Add in ground turkey and onion, breaking up turkey with a spoon. Cook until no longer pink, about 5 minutes. Add in garlic and cook one minute longer. Pour in tomato sauce and sprinkle on Italian seasoning and kosher salt. Bring sauce to a low boil and simmer for 5 minutes.
- Place half of the spaghetti mixture into baking dish. Top with half of the ricotta cheese and use a spatula to spread it over top. Sprinkle on half of the mozzarella and top with half of the meat sauce. Repeat layer by adding the remaining spaghetti, then ricotta, then meat sauce, and topping off with remaining mozzarella.
- Cover with aluminum foil. Bake in preheated oven for 45 minutes. Remove foil and continue to bake until the cheese is melted and lightly brown, 10-15 minutes longer. Let rest for 5-10 minutes before slicing and serving.

- Cook spaghetti according to package directions. Drain well and cool to room temperature. In a bowl, combine the spaghetti, Parmesan cheese and egg substitute. Transfer to a 9-in. pie plate coated with cooking spray and form into a crust; set aside., In a nonstick skillet over medium heat, cook turkey, onion and green pepper until turkey is no longer pink; drain. Add spaghetti sauce; heat through. Spread cottage cheese over crust; top with turkey mixture., Bake, uncovered, at 350° for 20 minutes. Sprinkle with mozzarella cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.

Steps:
- Preheat oven to 350 degrees.
- Place the cooked spaghetti in a bowl and coat with 1 tbsp of olive oil.
- Combine the eggs and 1/4 cup of Parmesan cheese in a bowl. Add mixture to the spaghetti and mix.
- Place the spaghetti mixture into a greased deep-dish pie plate and spread to make a "pie crust".
- Heat 1 Tbsp of oil in a sauté pan over medium heat and cook the ground turkey, salt, garlic and onion powder for 5 minutes or until the meat is cooked through.
- Pour the marinara sauce over the meat and stir to combine.
- In a bowl stir the Ricotta cheese, the remaining 1/4 cup of Parmesan cheese and Italian herbs to combine.
- Spread the Ricotta/Parmesan cheese mixture over the pasta, then layer the marinara mixture and finally, top with 1 cup of mozzarella.
- Place dish on a sheet pan and bake for 30 minutes.
- Cool, cut into wedges and serve.
TURKEY SPAGHETTI
Steps:
- Bring a large pot of salted water to a boil.
- Heat a large pan over medium heat and add the olive oil, garlic and onion. Cook until translucent, about 2 minutes. Add the turkey and cook, breaking it up with a spoon, until cooked through, about 8 minutes.
- Add the crushed tomatoes, tomato sauce and tomato paste, stirring to combine. Add the sugar, dried basil, oregano, parsley, cinnamon and 1/2 teaspoon each salt and pepper and stir to combine. Add the bay leaves and 1/2 cup water. Stir well and simmer to infuse the flavors, about 10 minutes.
- Meanwhile cook the spaghetti in the boiling water according to the package instructions. Drain well.
- Transfer the spaghetti to a platter and ladle the sauce on top. Top with the grated Parmesan and fresh basil leaves.
GROUND TURKEY SHEPHERD'S PIE

- Preheat oven to 425 degrees. Make the topping: Place potatoes and parsnips in a medium saucepan, cover with water by 2 inches, and bring to a simmer. Cook until fork tender, about 20 minutes. - Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Coat inside of each spaghetti squash half with olive oil and season with salt and pepper. Place spaghetti squash, skin-side up, on the prepared baking sheet.
- Roast spaghetti squash in the preheated oven until skin can easily be pierced with a fork, 30 to 45 minutes.
- Meanwhile, cook ground turkey in a skillet over medium heat until browned. Combine tomatoes, asparagus, onion, basil, garlic, oregano, salt, and pepper in a bowl and mix well. Add to browned ground turkey in the skillet. Cook, stirring occasionally, about 5 minutes. Pour in chicken broth and cook until asparagus is slightly tender, about 5 more minutes.
- Remove cooked spaghetti squash from oven and let cool until easily handled. Scrape squash into spaghetti strands using a fork and place into a bowl. Try to maintain the integrity of the squash skin and you can using as a serving vessel.
- Place 1/2 the spaghetti squash into a serving dish or the squash skin and top with turkey-vegetable mixture.
