ZUCCHINI NOODLES WITH MEAT MUSHROOM TOMATO SAUCE



Zucchini Noodles with Meat Mushroom Tomato Sauce image

A light and refreshing veggie-packed meal made with ground turkey, zucchini, and fresh basil.

Number Of Ingredients 11

3 large zucchini, spiralizer
2 tablespoon of olive oil
1 tablespoon of olive oil
1 cup of onions, chopped
2 garlic clove, minced
8 oz. button mushrooms, sliced
1 lb. of ground turkey
2 28oz. cans of whole plum tomatoes {with sauce}
2 tablespoon of tomato paste
1 cup of fresh basil, chopped
salt & pepper

Steps:

  • Run 3 large zucchini's through a spiralizer to create noodles. {if you do not have a spiralizer you can use a grater} Set aside.
  • Heat a large saucepan to medium high heat.
  • Add 1 tablespoon of olive oil to pan then the chopped onions. Saute until translucent, about 2-3 minutes.
  • Next add minced garlic cloves, saute for 30 seconds and add sliced mushrooms.
  • Cook until mushrooms are browned, about 4-5 minutes.
  • Next add ground turkey and saute until cooked through, about 5-6 minutes.
  • Add whole plum tomatoes and 2 tablespoons of taste paste, break up the tomatoes with a spoon in the pot. Season with salt & pepper to taste.
  • Simmer sauce for 10 minutes.
  • In the meantime, heat a large skillet to medium high heat. Add 2 tablespoons of olive to oil.
  • Immediately add the zucchini noodles and flash saute them for 2-3 minutes, stirring the whole time.
  • Remove from pan and let sit, drain any excess water from the noodles.
  • Finish off the meat mushroom sauce with freshly chopped basil.
  • Serve zucchini noodles with meat mushroom tomato sauce.

1 lb. ground turkey
1/2 cup chopped onions
1 cup chopped fresh mushrooms
1/2 cup halved cherry tomatoes
3 zucchini, cut into spiral noodles
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/2 cup CLASSICO Sun-Dried Tomato Pesto Sauce and Spread
1/2 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Cook turkey and onions in large skillet sprayed with cooking spray on medium heat 8 to 10 min. or until turkey is done, stirring frequently. Use slotted spoon to transfer turkey mixture to bowl, reserving drippings in skillet.
  • Add mushrooms and tomatoes to reserved drippings; cook 5 min. or until mushrooms are tender, stirring frequently. Add zucchini; cook and stir 5 min. or until crisp-tender. Add cream cheese; cook 2 to 3 min. or until completely melted, stirring constantly.
  • Return turkey mixture to skillet; mix well. Stir in pesto sauce; cover. Cook on medium-low heat 8 min. or until heated through, stirring occasionally.
  • Sprinkle with Parmesan.

This tasty and easy low carb dinner is a great alternative on pasta night with a delicious tomato, basil, and ground turkey sauce over perfectly cooked zucchini noodles.

4 zucchini, cut into noodles
2 tbsp olive oil, divided
1 onion, minced
1 carrot, minced
1.33 lbs. 93% lean ground turkey
2 cloves garlic, minced
20 oz. canned crushed tomatoes
2 tsp Italian seasoning
1 tsp. Worcestershire sauce (coconut aminos for Whole30)
1/2 tsp paprika
1/2 tsp salt
1/2 tsp pepper
6 tbsp. Parmesan cheese (leave out for Whole30)
1/4 cup basil, chopped

Steps:

  • Using a spiralizer or vegetable peeler, make the zucchini noodles.
  • Heat half of the olive oil in a large sauce pan over medium high heat. Add the onion and carrot. Cook for 5 minutes until becoming translucent. Add the turkey and cook for 6-8 minutes until browned. Stir in the garlic and cook for 1 minute until fragrant. Add the tomatoes, Italian seasoning, Worcestershire, paprika, salt, and pepper. Let simmer for 20-25 minutes.
  • Meanwhile saute the zucchini noodles in the remaining olive oil. Cook for 2-3 minutes until just tender. Drain any excess liquid.
  • Serve with the sauce and 1.5 tbsp. of Parmesan cheese per serving and chopped basil.

3 zucchini
1 tablespoon salt, or more as needed
1 pound ground turkey
½ teaspoon garlic salt
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper
¼ teaspoon red pepper flakes
1 teaspoon olive oil
1 teaspoon minced garlic
1 (14.5 ounce) can diced tomatoes
1 (3 ounce) can tomato paste
2 tablespoons balsamic vinegar
2 teaspoons dried parsley
1 teaspoon dried basil
½ teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup small-curd cottage cheese
1 cup shredded mozzarella cheese

Steps:

  • Make zucchini noodles using a spiralizer or julienne peeler. Place noodles in a colander and cover liberally with 1 tablespoon salt. Let sit until noodles release some moisture, about 20 minutes. Rinse noodles and pat dry.
  • Place ground turkey, garlic salt, garlic powder, onion powder, cayenne pepper, and red pepper flakes in a large oven-safe skillet over medium heat. Cook and stir until turkey is browned and juices run clear, about 5 minutes. Drain grease.
  • Push turkey to the sides of the skillet to make an empty space in the center. Add olive oil and minced garlic; cook until garlic is fragrant, about 1 minute.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Stir diced tomatoes, tomato paste, balsamic vinegar, parsley, basil, Italian seasoning, 1/2 teaspoon salt, and black pepper into the skillet. Bring to a boil; cook until sauce thickens, about 15 minutes. Stir in noodles. Cover with cottage cheese. Sprinkle mozzarella cheese evenly on top.
  • Bake in the preheated oven until cheese is melted, about 15 minutes. Turn on broiler and broil until cheese is golden brown, about 2 minutes. Remove from oven and let sit for 5 to 10 minutes before serving.

¼ cup olive oil
½ white onion, chopped
1 tomato, chopped
6 basil leaves, chopped
4 cloves garlic, minced
1 (20 ounce) package ground turkey
1 teaspoon Italian seasoning
¼ teaspoon oregano
2 (15 ounce) cans tomato sauce
½ (6 ounce) can tomato paste, or to taste
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion, tomato, basil, and garlic in hot oil until the onion begins to soften, about 5 minutes.
  • Break ground turkey into small pieces and add to pot; season with Italian seasoning and oregano. Cook and stir mixture until turkey is completely browned, 7 to 10 minutes.
  • Stir tomato sauce into the turkey mixture; bring to a boil, reduce heat to low, and simmer until the sauce has thickened slightly, 20 to 25 minutes.
  • Stir tomato paste into the turkey mixture until evenly colored; season with salt and pepper. Cook until the liquid is reheated, 1 to 2 minutes more.

1 jar (26 oz) tomato pasta sauce (any hearty or thick variety)
1 medium zucchini, cut in half lengthwise, then cut into slices (1 1/2 cups)
1 can (2 1/4 oz) sliced ripe olives, drained
1 teaspoon dried basil leaves
1/4 cup shredded fresh Parmesan cheese

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • In casserole, mix pasta and remaining ingredients except cheese.
