BEK'S GRILLED MAHI MAHI FILLETS IN SOY GINGER MARINADE (OAMC)

Bek's Grilled Mahi Mahi Fillets in Soy Ginger Marinade (Oamc) image

This is a mild, Asian-inspired marinade that complements the mild flavor of Mahi Mahi. Great summer dish, I'm sure it would be good on any mild fish. OAMC chefs, double or triple the marinade as needed and freeze in family-sized portions - I use my vacuum sealer. **As with many of my original recipes, the ingredient amounts are approximate. Adjust to your preferences. As always, let me know if you make any substitutions or tweaks - I always like new ways to try old favorites! (Cooking time does not include marinating time.)

Time 20m

Yield 4 fillets, 4 serving(s)

Number Of Ingredients 10

2 lbs mahi mahi fillets (4 medium)
2 tablespoons olive oil
2 tablespoons fresh ginger, minced (I use jarred)
1 tablespoon garlic, minced
1 tablespoon fresh lime juice
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons dry red wine
1/8 teaspoon cayenne pepper (more or less to taste)
salt and pepper

Steps:

  • In a 1 gallon zipper bag, combine all ingredients except fish. Squish to combine. Add mahi and seal, refrigerate at least 4 hours or overnight.
  • OAMC - squeeze all air out of zipper bag, or seal in a vacuum sealer and store in the freezer. Defrost and grill, following instructions below.
  • Spray grill with non-stick cooking spray, the preheat to 475°F Cook fillets about 4 minutes on the first side, then turn and cook another 2-3 minutes, depending on thickness. Trust yourself on the grill, based on the thickness of your fillets - don't blindly use my timing! An overcooked fish is a sad fish.

GRILLED MAHI MAHI FILLETS AND ASPARAGUS WITH ORANGE AND SESAME

Grilled Mahi Mahi Fillets and Asparagus with Orange and Sesame image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

4 portions, 6 to 8 ounces each, mahi mahi fillets
Salt and pepper
2 limes, juiced
3 tablespoons dark tamari soy sauce
2 inches fresh ginger root, grated, about 1 1/2 tablespoons
1 tablespoon vegetable or canola oil
20 blades fresh chives, chopped or 3 scallions, thinly sliced, for garnish
1 to 1 1/4 pounds thin asparagus spears
2 navel oranges
1-inch fresh ginger root
2 tablespoons toasted sesame seeds

Steps:

  • Preheat grill pan to over medium high to high heat. Season mahi mahi fillets with salt and pepper. Combine the lime juice, dark soy, ginger and a little vegetable or canola oil in a shallow dish. Turn the mahi mahi in the citrus soy marinade and let it hang out for 10 minutes. Grill on hot grill pan for 6 minutes per side for a 1-inch fillet or until fish is firm and opaque.
  • Take 1 spear of asparagus and hold it at each and. Bend the asparagus until it snaps and breaks. Use this spear as your guide on where to trim the ends of your bundle of spears. Using a peeler, make thin long strips of orange zest from both oranges. Cut the ends off the zested oranges and stand them up right on a cutting board. Remove the pith in strips using sharp knife and cutting down from the top of the orange. Discard the pith. When the oranges are both peeled and trimmed, turn them on their sides and slice into 1/4-inch rounds, cross sectioning the whole. Set the orange disks aside. In a skillet with a cover, bring 1-inch water to a boil with the zest of the oranges and grated fresh gingerroot. Allow the orange zest and ginger to simmer for at least 1 minute then add salt and asparagus spears. Simmer the spears 3 to 5 minutes until just tender. Drain the asparagus. Discard the orange zest and ginger. Assemble a few spears on each dinner plate, layering them back and forth, crisscrossing the spears over orange slices. Sprinkle sesame seeds over asparagus and oranges and top with 1 portion of grilled mahi mahi. Garnish assembled fish and asparagus with chopped or thinly sliced chives.

MAHI MAHI WITH BROWN-SUGAR SOY GLAZE

Mahi Mahi With Brown-Sugar Soy Glaze image

So easy to make! This glaze also works on other fish like halibut. The recipe is from Gourmet Magazine (Oct. 05).

Categories     Lunch/Snacks

Time 20m

Yield 4 serving(s)

Number Of Ingredients 7

6 scallions
3 tablespoons packed brown sugar
2 1/2 tablespoons soy sauce
3 tablespoons fresh lemon juice
4 (6 ounce) skinless mahi mahi fillets
1/2 teaspoon salt
1 1/2 tablespoons vegetable oil

Steps:

  • Preheat oven to 200°F.
  • Cut white and pale green parts of scallions crosswise into 2-inch pieces, then thinly slice enough scallion greens to measure 3 tablespoons.
  • Stir together brown sugar, soy sauce, and lemon juice in a small bowl until sugar is dissolved.
  • Pat fish dry and sprinkle with salt. Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then cook fish on 1 side until browned, 3 to 4 minutes. Turn fish over and brown 1 minute. Add soy sauce mixture and simmer, covered, until fish is almost cooked through, about 3 minutes. Transfer fish with a slotted spatula to a heatproof platter and keep warm in oven. (Fish will cook through from residual heat.).
  • Add 2-inch scallion pieces and juices from fish platter to sauce and boil, stirring occasionally, until glaze is very thick and reduced to less than 1/4 cup, about 5 minutes. Spoon glaze over fish and sprinkle with scallion greens.

GRILLED SOY AND GINGER MAHI MAHI

Categories     Fish     Quick & Easy     Low Cal     Dinner     Grill/Barbecue

Yield 4

Number Of Ingredients 6

5 tablespoons Soy sauce
3 tablespoons rice vinegar
2 tablespoons honey
1 garlic clove minced
1 inch fresh ginger grated
2 teaspoons olive oil

Steps:

  • 1. Mix the vinegar, soy and honey thoroughly in a glass bowl. 2. For the Ginger, I always freeze my leftover ginger root and I find that actually makes it easier to work with. To get some great ginger taste, just scrape the peel off of the outside of the frozen ginger root with the edge of a spoon. Then grate the frozen ginger right into the bowl with a microplane grater. Add in the remaining marinade ingredients and combine thoroughly. 3. Clean and rinse the Mahi Mahi filets. I like to cut the blood line completely out of the fish because the kids don't like the more fishy taste it gives the meat, but that is up to you. 4. Pat the filets dry, place in a shallow dish and pour the marinade over the Mahi Mahi filets. 5. Place the dish in the refrigerator and marinade for at least 30 minutes, but no more than an hour (so I guess that makes it 45 minutes!). 6. The key to grilling fish is to cook it quickly over a really hot grill so you don't dry out the meat. So heat your grill to high. 7. If you have a fish basket, now is the time to break it out. Otherwise, make sure you REALLY clean and oil the grates of your grill with some vegetable oil. Nothing sticks quicker than fish and it's really kind of heartbreaking when you leave some of that delicious meat back on the grates. 8. Remove the filets from the marinade and place on the grill, reserving the marinade (we are going to use it later). 9. Grill the Mahi Mahi filets for 2 - 3 minutes on the first side and then flip them over and grill for an additional 2 - 3 minutes on the other side. These times are optional, but it is pretty easy to see when fish is done cooking. As the fish cooks through, the meat becomes more and more opaque. Remember though, don't overdue it! 10. Heat the remaining marinade on the stove and simmer until reduced slightly. Don't simmer too long, it will become VERY thick. 11. Drizzle a little of the sauce on the grilled Mahi Mahi filets and serve over rice.
