This Southern Succotash recipe is an easy side dish or affordable entrée that pairs sweet corn, lima beans and tomatoes with savory bacon and butter!

2 slices bacon
½ cup diced sweet onion ((such as Vidalia))
1 teaspoon minced fresh garlic
1 (9 ounce) package frozen lima beans ((or use 1 ½ cups fresh lima beans))
1 (12 ounce) package frozen corn kernels ((or use 2 ⅔ cup fresh corn off the cob))
3 cups chopped fresh tomatoes
¼ cup water
2 tablespoons salted butter
Salt and pepper, to taste ((I use about ½ teaspoon kosher salt and ¼ teaspoon pepper))
Optional garnish: chopped fresh herbs such as basil, parsley or dill

Steps:

  • Cook the bacon in a large skillet over medium-high heat until crisp (about 6-8 minutes). Remove bacon with tongs and set aside on paper towels to cool.
  • Add the onion and garlic to the bacon fat; cook, stirring frequently, until onion is translucent (about 3-5 minutes).
  • Add the lima beans, corn, tomatoes, and water. Reduce heat to low and cook, stirring regularly, until vegetables are tender (about 7-10 minutes). Scrape up any browned bits from the bottom of the pan with a wooden spoon as you stir the vegetables. Remove from heat.
  • Stir in butter; season with salt and pepper to taste. Crumble bacon over top and garnish with herbs. Serve warm or at room temperature.

Creamy Succotash Pasta Salad with Bacon image

A creamy pasta salad with crispy bacon is loaded with the standard ingredients of succotash: lima beans, corn and tomatoes.

Kosher salt and freshly ground black pepper
8 slices thick-cut bacon, finely chopped
1/3 cup mayonnaise
3 tablespoons sour cream
2 tablespoons finely chopped fresh chives
1 1/2 tablespoons fresh lemon juice
1 cup frozen baby lima beans, thawed
1 cup frozen corn kernels, thawed
8 ounces dried fusilli
1 cup halved grape tomatoes
1/2 cup thinly sliced scallions

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, put the bacon in a large, cold skillet then cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain. Set aside.
  • Whisk together the mayonnaise, sour cream, chives, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Cook the lima beans in the boiling water until tender, about 15 minutes. Add the corn and continue to cook until the corn is tender, about 2 minutes more. Transfer the beans and corn to a colander with a slotted spoon and run under cold water to stop the cooking process. Drain well and add to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the tomatoes and scallions to the bowl and toss to combine. Season with salt and pepper and top with the bacon. The pasta salad is best if served right away.

2 ears corn, husked
1 red bell pepper
1 jalapeño pepper
5 tablespoons canola oil, plus more for drizzling
Kosher salt
12 ounces cavatappi or other corkscrew-shaped pasta
1 cup frozen lima beans, thawed
2/3 cup fresh lemon juice, plus more as needed (from about 5 lemons)
2 tablespoons honey
1/4 bunch parsley (1/2 cup packed leaves)
Freshly ground pepper

Steps:

  • Preheat a grill to medium high. Drizzle the corn, bell pepper and jalapeño with canola oil and season with salt. Grill, turning, until lightly charred, 2 to 3 minutes per side. Set aside to cool. Remove the stems and seeds from the bell pepper and jalapeño, then slice the bell pepper and dice the jalapeño. Cut the corn kernels off the cobs.
  • Bring a large pot of heavily salted water to a boil. Add the pasta and cook until al dente, 8 to 10 minutes, adding the lima beans during the last 1 to 2 minutes of cooking. Drain the pasta and beans and toss with 1 tablespoon canola oil.
  • Combine the lemon juice, honey, parsley and salt and pepper to taste in a food processor and pulse. With the motor running, drizzle in the remaining 1/4 cup canola oil and process until smooth.
  • In a large bowl, combine the pasta, lima beans, corn, bell pepper and dressing and toss well. Add the jalapeño, 1 teaspoon at a time, until the desired level of spiciness is reached. Season again with salt and pepper, if needed. Refrigerate until cold and the flavors have married, 1 to 2 hours. If acid is lacking, squeeze half a lemon over the salad before serving.

Cut the kernels from the corn ears.Bring a large pot of heavily salted water to a boil. Add the pasta and cook until al dente, 8 to 10 minutes. During the last 1 to 2 minutes of cooking, add the lima beans. Drain, and toss with 1 tablespoon of the canola oil.Puree the lemon juice, honey, parsley and some salt and pepper in a food processor. With the motor running, drizzle in the remaining canola oil.In a large bowl, combine the dressing with the pasta, lima beans, corn and red peppers. Toss well. Add the chopped jalapenos, one teaspoon at a time, until the desired level of spiciness is reached. Season again with salt and pepper as needed.Chill in the refrigerator for 1 to 2 hours, until cold and the flavors have married. 1 pint cherry tomatoes, halved
2 cups fresh corn kernels
One 10-ounce bag frozen lima beans, thawed
1 stick (8 tablespoons) unsalted butter, melted
1 large shallot, minced
Kosher salt and freshly ground black pepper
1 1/2 cups loosely packed basil leaves

Steps:

  • Prepare a grill for medium-high heat.
  • Mix the tomatoes, corn, lima beans, butter and shallot together in a medium bowl. Season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper.
  • Tear off four 12- by 18-inch pieces of heavy duty aluminum foil. Put 1/4 cup of the basil leaves in the center of each piece of foil. Evenly divide the vegetable mixture (about 1 1/4 cup each) over the basil. Carefully fold each foil piece into a packet, bringing up the sides and double folding the top and ends to seal.
  • Grill the packets until the tomatoes begin to soften, about 12 minutes. Chop the remaining 1/2 cup basil. Place a packet on each plate, carefully open the foil and serve sprinkled with chopped basil.
