1 pinch garlic salt, or to taste
ground black pepper to taste
¼ teaspoon cayenne pepper, or to taste
1 cup mayonnaise
1 lemon, cut into wedges

Steps:

  • Preheat outdoor grill for medium heat, and lightly oil the grate.
  • Thread shrimp onto skewers. Season both sides of shrimp with garlic salt and black pepper; if using cayenne, see Cook's Note.
  • Generously coat both sides of shrimp with mayonnaise.
  • Cook shrimp on heated grill until shrimp are bright pink on the outside and opaque on the inside, and the mayonnaise turns golden brown, 5 to 10 minutes on each side. Serve with lemon wedges.

2 tablespoons unsalted butter
3 cloves garlic, minced
1 ½ cups low-sodium chicken broth
½ cup heavy cream
2 tablespoons lemon juice, or more to taste

½ teaspoon ground pepper, divided
⅓ cup grated Romano cheese
1 pound large shrimp (21-30 count), peeled and deveined
12 ounces asparagus, trimmed
Cooking spray

Steps:

  • Preheat grill to medium.
  • Bring a large saucepan of water to a boil. Cook penne according to package directions. Drain.
  • Meanwhile, heat butter in a large skillet over medium heat. Add garlic and cook, stirring, for 1 minute. Add broth, cream, lemon juice and 1/4 teaspoon each salt and pepper; bring to a simmer. Reduce heat to maintain a simmer and cook, stirring occasionally, until slightly thickened, about 10 minutes. Stir in cheese and the penne.
  • Meanwhile, lightly coat shrimp and asparagus with cooking spray and sprinkle with the remaining 1/4 teaspoon each salt and pepper. Grill, turning once, until the shrimp are opaque and the asparagus is tender, 4 to 6 minutes.
  • When cool enough to handle, chop asparagus and stir into the pasta. Serve topped with the grilled shrimp.

2 cups freshly squeezed tangerine juice
2 tangerines
1 tablespoon coarsely chopped fresh tarragon leaves
1 egg yolk
Salt and freshly ground black pepper
1 cup pure olive oil, plus more for tossing with and brushing on asparagus
2 large bunches asparagus, about 2 pounds total, trimmed and cooked for 2 minutes in boiling salted water, then cooled
Long curls tangerine zest, fresh or candied
Coarsely chopped toasted hazelnuts or pine nuts, optional

Steps:

  • Put the tangerine juice in a small non-reactive saucepan and bring to a boil. Cook until reduced to 1/2 cup. Let cool to room temperature.
  • Peel the tangerines, removing all the white pith, and segment over a bowl to catch both the segments and the juices. Cover and refrigerate until very cold.
  • Combine the reduced juice, tarragon, egg yolk, and salt and pepper, to taste, in a blender and blend until well mixed. With the machine running, add the 1 cup olive oil, at first by drops and then, as mixture emulsifies, in a thin, steady stream until all the oil is incorporated. Taste, for seasoning. Scrape into a jar, cover, and refrigerate until needed. You should have about 1 2/3 cups mayonnaise. Keeps 2 to 3 days, refrigerated.
  • Prepare the grill and let burn down to medium coals. Toss the cooled asparagus with about 1 tablespoon olive oil and season with salt and pepper. Grill over medium to low coals, turning the spears as needed, until they take on a little color and are just tender, about 6 minutes. Cover the grill, if necessary, to maintain the heat.
  • Arrange the asparagus on a platter with the reserved tangerine segments. Dot with the mayonnaise, and drizzle with any tangerine juice left in the bowl. Garnish with fresh or candied zest and the nuts, if using. Serve at once.
  • Cook's Note: Every cook has insecurities. One of mine is mayonnaise. I always get a little anxious until I see it coming together in the blender. If the mayonnaise is too thick, thin it, with the machine running, by pulsing in a little cool water. If you are concerned about raw eggs, use a pasteurized egg product or an egg substitute such as Egg Beaters.

12 medium shrimp, frozen defrosted
Bamboo skewers, soaked in water for at least 30 minutes
1/4 cup plus 1 tablespoon roasted garlic salad dressing, divided
Salt and pepper
1/3 cup mayonnaise
1 teaspoon minced garlic
1 teaspoon paprika

Steps:

  • Preheat grill to medium.
  • Pat shrimp dry with paper towels, and place on bamboo skewers.
  • Brush shrimp with 1/4 cup dressing, sprinkle with a generous amount of salt and pepper and place on the grill.
  • Grill 2 to 3 minutes per side, or until shrimp are opaque and cooked through. Baste once, if desired.
  • In a small bowl, combine mayonnaise with remaining 1 tablespoon of roasted garlic dressing, 1 teaspoon minced garlic, and 1 teaspoon paprika. Serve as a dip for the shrimp.

6 ounces whole wheat linguine
1 lemon
2 tablespoons olive oil, divided
½ cup chopped onion
½ teaspoon ground black pepper, divided
½ cup reduced-sodium chicken broth
½ cup shredded Parmesan cheese, divided
1 tablespoon butter
1 pound large shrimp, peeled and deveined
3 cloves garlic, minced
12 ounces fresh asparagus
4 (10-inch) metal skewers

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until still very firm to the bite, about 6 minutes. Drain, reserving 2/3 cup of the pasta cooking water. Keep warm.
  • While pasta cooks, remove 1 teaspoon zest and squeeze 1 tablespoon juice from lemon.
  • Heat 1 tablespoon oil in a 10-inch skillet over medium heat. Add onion; cook, stirring occasionally, for 4 minutes. Add linguine, the reserved pasta cooking water, and 1/4 teaspoon black pepper. Cook just until pasta is tender and most of the water is absorbed, stirring frequently, about 4 minutes. Add lemon juice, chicken broth, 1/4 cup Parmesan cheese, and butter. Cook and stir 2 minutes more.
  • Meanwhile, preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine shrimp, remaining oil and pepper, and garlic in a medium bowl. Thread shrimp onto four 10-inch skewers, leaving 1/4 inch between pieces. Coat asparagus with cooking spray.
  • Grill shrimp skewers and asparagus (place across the grates), covered, until shrimp are opaque and asparagus is crisp-tender, 4 to 6 minutes, turning once.
  • Cut tips from asparagus; cut stalks into 1-inch pieces. Stir asparagus into linguine mixture; heat through. Serve topped with shrimp skewers, the remaining 1/4 cup Parmesan cheese, and lemon zest.

Steps:

Shrimp are a treat and should be handled as such - and this recipe guarantees grilled shrimp that are reliably juicy, charred and seasoned. First, try this trick from J. Kenji López-Alt for plump meat with a browned crust: Stir a little baking soda into mayonnaise, and season it with salt, garlic and chile, which will intensify in the mayonnaise's fat. Coat the shrimp in the mayonnaise mixture and refrigerate for up to 30 minutes, then grill mostly on one side to avoid overcooking. Eat over grains, lettuces, lemon pasta or noodle salad; in tortillas or pita; or popped right into your mouth. As far as seasonings go, start with chile and garlic, then switch up subsequent batches with lemon zest, Old Bay, ginger and more.

1 lb tub-shaped pasta, such as ziti or penne
1 tablespoon olive oil
1 tablespoon butter
2 medium shallots, finely chopped
1/2 lb asparagus, trimmed and cut in 2 inch lengths
1 clove garlic, minced
1/2 cup chopped fresh dill
1 lb medium shrimp, peeled and deveined
2 tablespoons extra virgin olive oil
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add the pasta and boil vigorously for the time recommended on the pasta package or until the pasta is tender.
  • Meanwhile, heat the tablespoon of oil and the butter in a medium skillet until the butter melts.
  • Add the shallots and cook until softened, about 2 minutes.
  • Add the asparagus and cook until it loses its raw look, about 2 minutes.
  • Add 1 cup of the pasta water, raise the heat to medium-high, and boil until the aspargus turns bright green, about 2 minutes.
  • Add the garlic, dill and shrimp.
  • Remove from the heat and stir in the additional olive oil, salt and pepper.
  • Drain the pasta and toss in a serving bowl with the shrimp and asparagus.

Blanch asparagus in large pot of boiling salted water until just tender about 3 minutes drain. Refresh under cold water and drain again. Prepare barbecue high heat. Thread shrimp on skewers. Brush generously with oil. Cook shrimp until just pink about 2 minutes per side. Arrange lemon leaves on platter. Place mayonnaise in center of platter and sprinkle chives over. Toss asparagus with 2 tablespoons lemon juice and dill. Remove shrimp from skewers. Arrange shrimp and asparagus around mayonnaise and serve.
