Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 16

1 pound jumbo shrimp (21/25 count), peeled and deveined
1 ear corn, husked
1 small jalapeno pepper
2 scallions
1/2 red onion, cut into 4 wedges, root intact
Canola oil
Kosher salt
1 Persian cucumber, finely chopped
1 teaspoon lime zest (1 lime)
1/4 cup lime juice (4 to 5 limes), plus more to taste
1/4 teaspoon smoked paprika
1/4 teaspoon ground coriander
1/8 teaspoon ground cumin
1/4 cup fresh cilantro leaves, roughly chopped
1 small avocado, cut into 1/4-inch pieces
Tortilla chips, for serving

Steps:

  • Preheat a grill pan over medium-high heat.
  • Lightly brush the shrimp, corn, jalapeno, scallions and onion wedges with canola oil, sprinkle with salt and place on the grill. Cook the scallions and shrimp until charred and the shrimp are cooked through, about 2 minutes per side. Cook the jalapeno and red onion until charred and softened, 3 to 4 minutes. Cook the corn, rotating every 2 minutes, until charred and the kernels have turned bright yellow, 6 to 8 minutes. Remove the vegetables and shrimp to a baking sheet and let cool.
  • Cut the grilled shrimp into 1/4-inch pieces and place in a medium bowl. Seed and finely chop the jalapeno; add to the bowl. Finely shop the scallions and red onion and cut the kernels from the corn; add all three to the bowl. Stir in the cucumber, lime zest and juice, paprika, coriander and cumin. Refrigerate for 30 minutes to allow the flavors to meld.
  • Before serving, fold in the cilantro and avocado. Serve with tortilla chips.

SOUTHWESTERN SHRIMP WITH SALSA

Southwestern Shrimp with Salsa image

I prefer grilling in the summer because you don't need to turn on the stove and heat up the house. If you want to get fancy, serve it in a chilled martini glass for a beautiful presentation. The rice and/or shrimp can be cooked a day ahead and refrigerated until serving. -Lindsay Matuszak, Reno, Nevada

GRILLED PINEAPPLE AND SHRIMP

Grilled Pineapple and Shrimp image

One day I was reading some Internet memes about putting pineapple on pizza and realized that in North America pineapple is rarely used in savory dishes. So, I ventured out to make a savory pineapple dish with flavors that I knew would work...plus my daughter wanted shrimp.

Provided by Food Network

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 13

12 jumbo shrimp (16/20 size), peeled with tail-on (about 12 ounces)
1 teaspoon finely chopped garlic
1 teaspoon finely chopped shallot
1 teaspoon fresh lemon zest
1/2 teaspoon ground coriander
1 teaspoon olive oil
Kosher salt
1/2 pineapple, peeled, cored and sliced into 6 spears
2 tablespoons chili oil
1/4 cup coconut milk
1 teaspoon honey
Fresh mint leaves, for garnish
Fresh basil leaves, for garnish

Steps:

  • Heat a grill or large grill pan to medium-high heat.
  • Pat the shrimp dry and place in a medium bowl. Add the garlic, shallot, lemon zest, coriander, olive oil, and 1/8 teaspoon salt, then very gently toss to combine. Refrigerate for at least 15 minutes (up to 1 hour) to marinate.
  • Using a pair of 12-inch metal skewers, thread 6 of the shrimp on both the tail and "head" side, leaving about 1/2 inch of space between each shrimp. You will end up with a total of 2 sets of skewered shrimp (6 per pair of skewers).
  • Place the pineapple on a large plate and drizzle with the chili oil. Gently flip the spears around to thinly and evenly coat the pineapple all over.
  • Grill the pineapple without moving the spears too much until nicely caramelized grill marks form, 3 to 4 minutes per side. Transfer to a large serving platter and finish seasoning with a touch of salt.
  • Grill the skewered shrimp over direct heat until pink and just firm at the thickest part, 2 to 3 minutes per side (they will continue to cook slightly as they cool, so try not to leave them on the grill too long!). Carefully remove the shrimp from the hot skewers and arrange them over the grilled pineapple.
  • Whisk the coconut milk and honey in a small bowl until the honey is fully dissolved. Drizzle over and around the shrimp and pineapple. Garnish with fresh mint and basil leaves and serve right away.

GRILLED SHRIMP WITH CORIANDER DIPPING SAUCE

Grilled Shrimp with Coriander Dipping Sauce image

The original recipe came from Bayona Restaurant in New Orleans and was published in a recipe column in our newspaper. After reading it I decided that I would change it so it was fewer steps/less trouble. I've served this several times and it ALWAYS disappears!

Provided by Sheila Jones

Categories     Seafood Appetizers

Time 1h

Number Of Ingredients 18

THE SHRIMP
4 Tbsp olive oil, extra virgin
1 1/2 tsp ground coriander
1 tsp sea salt
1/2 tsp chili powder
1/2 tsp ground red pepper
3 lb large or medium shrimp, peeled and deveined-tail on, rinsed, drained & blotted
THE DIPPING SAUCE
2 large shallots - finely chopped
1 c white wine
1 tsp orange zest
1/2 c orange juice
4 Tbsp red wine (or sherry wine) vinegar
1 tsp ground coriander
10 Tbsp butter-softened
4 Tbsp cilantro-dried
1/2 tsp sea salt
- freshly ground pepper to taste

Steps:

  • 1. Combine "Shrimp" ingredients - olive oil, 1 1/2 tsp ground coriander, 1 tsp salt, chili powder, red pepper in a large zip lock bag. I use the 1/2 gallon "standing" Glad bag.
  • 2. Add shrimp to bag, mix well, and refrigerate.
  • 3. Have ready a large size grill pan designed to keep contents (like vegetables or small seafood)from falling into the grill.
  • 4. For the sauce, place chopped shallot, orange zest and juice, wine, vinegar, and coriander in a small saucepan, heat to a simmer over medium heat. Cook until liquid is reduced to about 6 tbs - about 30 - 40 minutes. It does not stick, but stir occasionally.
  • 5. Using a Whisk, whisk in softened butter by the spoonful until sauce is emulsified and creamy. This is like a beurre blanc sauce.
  • 6. Stir in cilantro and remaining salt and pepper. Keep warm
  • 7. Prepare grill for high heat. Place grill pan containing the loose shrimp over grill. Continue to turn the shrimp with grill spatula frequently until cooked through and then put on/in a serving dish
  • 8. Drizzle some of the sauce over the shrimp and put the remaining sauce in a matching dish for dipping. Put toothpicks or serving picks next to shrimp.

GRILLED SHRIMP WITH BLACK BEAN CAKES AND CORIANDER SAUCE

Grilled Shrimp with Black Bean Cakes and Coriander Sauce image

Categories     Cake     Sauce     Bean     Side     Broil     Shrimp     Coriander     Simmer     Boil

Yield makes 4 servings

Number Of Ingredients 32

Black Bean Cakes
1/2 pound black beans, picked clean and rinsed
1 tablespoon olive or corn oil, plus more for frying
1 small yellow onion, finely chopped
1 small green bell or poblano pepper, finely chopped
1 jalapeño, chopped (if not using poblano)
1 garlic clove, minced
1 tablespoon honey
1 tablespoon apple cider vinegar
1 teaspoon chili powder
1/2 teaspoon ground cumin
Salt and pepper
Flour, for dusting cakes
Sour cream and cilantro sprigs, as garnish
Grilled Shrimp
4 (6-inch) bamboo skewers
2 tablespoons olive oil
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon salt
16 medium or large headless shrimp, peeled and deveined (leaving tails intact)
Coriander Sauce
1 medium shallot, finely chopped
1/2 teaspoon grated orange zest
1/4 cup orange juice
1/2 cup white wine
2 tablespoons sherry wine vinegar
1/2 teaspoon ground coriander
5 tablespoons butter, softened
2 tablespoons chopped cilantro
Salt and pepper

Steps:

  • Black Bean Cakes
  • Place the black beans in cold water to cover. Soak overnight, or for at least 1 hour. Drain, rinse, place in a large pot, and cover with fresh cold water. Bring to a boil, skim the foam, then simmer over low heat for about 1 hour. Add more water, if necessary, to keep the beans covered.
  • Meanwhile, heat the 1 tablespoon oil over medium-high heat in a large skillet. Add the onion, peppers, and garlic and cook for 2-3 minutes. Add the vegetables, along with the honey, vinegar, chili powder, and cumin, to the beans and continue to simmer. When the beans are quite soft and are starting to break down, season with salt and pepper. Continue to cook until the beans are creamy.
  • Remove the bean mixture from the heat and strain, reserving the liquid. Puree in a food processor, then transfer to a baking sheet. Spread the puree evenly and let it cool completely. Form the puree into little cakes shaped like hockey pucks (use about 1/2 cup per cake). The consistency is perfect if it is moist enough to gather into a ball, but not so wet that the mixture sticks to your hands.
  • Preheat the oven to 400°F. To finish the cakes, lightly dust them with flour. Heat a medium skillet (lightly coated with oil) over medium-high heat. Sauté the cakes just long enough to get a nice crust on each side. When ready to serve, place them on baking sheets in the oven to warm through. Garnish with a dollop of sour cream and a sprig of cilantro.
  • Grilled Shrimp
  • Soak the skewers in hot water.
  • In a medium bowl, combine the olive oil and seasonings. Toss the shrimp with this marinade and refrigerate while you make the coriander sauce.
  • Turn on the broiler or light the grill.
  • Place 4 shrimp on each skewer.
  • Meanwhile, heat the black bean cakes.
  • Broil or grill the shrimp 2-3 minutes on each side, until just cooked through. Remove from the skewers, arrange on four plates, and drizzle with the warm coriander sauce. Serve with a black bean cake.
  • Coriander Sauce
  • Place the shallot, orange zest and juice, wine, vinegar, and coriander in a small saucepan and bring to a simmer over medium heat. Cook until the liquid is reduced to 2 or 3 tablespoons. While it's still hot, whisk in softened butter by the spoonful until the sauce is emulsified (it will look thick and creamy). Stir in the chopped cilantro and season with salt and pepper to taste. Cover and keep warm over low heat.
