This pasta dish is both fresh and hearty! The fresh taste of summer from the zucchini and tomatoes contrasts nicely with the earthy saltiness of the anchovies.

1 pound bucatini pasta
1 (2 ounce) can anchovy fillets, oil reserved
1 teaspoon red pepper flakes, or to taste
3 cloves garlic, minced
2 zucchini, halved lengthwise and cut in 1/4 inch slices
1 pint grape tomatoes
2 teaspoons dried oregano
2 teaspoons dried basil
1 pound peeled and deveined medium shrimp

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, stir together the anchovies and their oil with the red pepper flakes and garlic in a large skillet over medium heat, breaking up the anchovies as you stir. Once the garlic begins to sizzle, add the sliced zucchini, and cook until it begins to soften, about 3 minutes. Stir in the grape tomatoes, and continue cooking until the zucchini is tender, and the skins of the tomatoes begin to pop, 5 minutes more.
  • Sprinkle the vegetable mixture with oregano and basil, then stir in shrimp. Cook until the shrimp turn pink and are no longer translucent. Pour over bucatini to serve.

Seared Halibut With Anchovies, Capers And Garlic image

Three classic flavors are often overlooked these days, so much so that when I prepared a dish combining them not long ago, I seemed to be tasting it for the first time. This combo is garlic, anchovies and capers, a natural southern Mediterranean team that is strong and distinctive. Its brininess makes it incompatible with many foods, but it is ideal with fish, especially sturdy fish like halibut and swordfish. Creating a dish out of these ingredients is almost as easy as simply searing the fish and serving it with lemon. The fish is quickly browned, then allowed to finish cooking in the oven while the no-fuss sauce cooks in the pan.

2 tablespoons extra virgin olive oil
2 tablespoons butter (or more oil)
1 1/2 to 2 pounds halibut or swordfish steaks
Salt and pepper to taste
4 anchovy fillets or more to taste
1 tablespoon or more minced garlic
1 tablespoon drained capers
1/2 cup dry white wine
1 teaspoon lemon juice, or to taste
Chopped fresh parsley for garnish

Steps:

  • Heat oven to 400 degrees. Put a large skillet, preferably nonstick, over medium-high heat, and leave it there until hot. Add oil and butter together. Butter should sizzle. When butter foam subsides, add fish, and season it lightly with salt and pepper. Brown fish, basting with pan juices, then turn, and brown again. Do not worry about cooking through. Turn off heat, put fish on an ovenproof plate, and place it in oven.
  • Turn heat under skillet to medium, and add anchovies and garlic. Cook, stirring occasionally, until anchovies break up, just a couple of minutes. Add capers and wine, and turn heat to high. Cook until wine is reduced by half. Return fish and its juices to pan, and turn it in sauce once or twice. Fish should be cooked through by now. (A thin-bladed knife inserted into its thickest part will meet little resistance.)
  • Taste sauce, add some lemon juice, then taste again. It should be strong-tasting but only mildly acidic. Remove fish to serving plate, spoon sauce on top, and garnish with parsley.

A delicious dish that is perfect cooked on the griddle or the barbecue. Our easy grilled salmon recipe uses salty anchovies, citrussy lemon and garlic lentils

4 lemons
16 salted anchovies , rinsed, filleted and dried
extra-virgin olive oil , for drizzling
8 tbsp capers , well rinsed
6 tbsp finely chopped fresh flat leaf parsley
1 side of wild salmon , from a 3.5kg/7lb 8oz fish, cut into 8, 175/6oz portions
300g small brown lentils , such as Castelluccio or Puy
2 garlic cloves , peeled
2 sprigs of sage (8-10 leaves)
6 tbsp extra-virgin olive oil

Steps:

  • Get the lentils ready first. Tip them into a small saucepan, cover with water and add the garlic and sage. Simmer gently for 15-20 minutes until tender. Drain, discard garlic and sage, season with salt and pepper. Stir in olive oil and set aside.
  • Squeeze the juice of one lemon over anchovies in a bowl, add freshly ground black pepper and drizzle with olive oil. Mix capers with the parsley in another bowl. You can get to here several hours in advance.
  • Preheat griddle pan until very hot. Season salmon on both sides, then sear, skin-side down (if pan is very hot the skin won't stick - this goes for grilling on a barbecue, too). Turn fish over when you see it change colour halfway, then sear the other side. This will take 2-3 minutes on each side for rare salmon, but cooking time may vary if pieces of fish are very thick.
  • To serve, reheat the lentils and put a large spoonful in the centre of warmed plates. Top with the salmon, skin-side up, then scatter the anchovies, capers and parsley on top. Serve with the remaining lemons.

Grilled Swordfish With Smoky Tomato-Anchovy Salsa image

This is a simple summer fish dish with robust flavors. Swordfish would be the first choice, for its meatiness and ease of grilling, but any firm-fleshed white fish, such as halibut, monkfish, corvina or snapper, is a suitable option. Tuna would also work, but for that matter, so would chicken breast, for those at your gathering who don't eat fish. Topped with an easily made salsa of cherry tomatoes, anchovy, hot pepper and smoky pimentón, the whole affair is rather salad-like, best accompanied by arugula or lettuce leaves. Serve with roasted potatoes or garlic toast for a casual picnic-style summer supper.

4 (8-ounce) swordfish steaks, cut ¾-inch thick
Salt and pepper
Extra-virgin olive oil
3 tablespoons red-wine vinegar, or to taste
1 teaspoon smoked Spanish paprika (Pimentón de la Vera)
1 teaspoon tomato paste
2 small garlic cloves, smashed to a paste
1 medium red onion, diced small (about 1 cup)
1 sweet red pepper, diced (about 1 cup)
2 Fresno chiles, seeds removed and finely diced
4 anchovy fillets, chopped, plus 4 whole fillets for garnish
2 cups halved cherry tomatoes in different colors
Pinch of dried oregano
Arugula leaves, for garnish

Steps:

  • Prepare a charcoal grill or heat a gas grill. (Alternatively, use a cast-iron skillet or stovetop grill pan over medium-high heat.) Place swordfish steaks on a baking sheet and season on both sides with salt and pepper. Drizzle each with 1 teaspoon olive oil and rub with fingers to coat. Leave at room temperature.
  • In a mixing bowl, put vinegar, smoked paprika, tomato paste and garlic. Stir to dissolve tomato paste. Add onion, sweet pepper, chiles and 4 chopped anchovy fillets, and stir everything together. Add pinch of salt and ½ to ¾ cup olive oil and stir again.
  • Add cherry tomatoes, lightly season with salt and pepper, then gently fold them into the mixture. Leave to marinate about 10 minutes.
  • Grill the swordfish steaks over medium-hot coals for about 4 minutes per side. Remove when you see juices begin to rise on second side.
  • Transfer to plates or a large platter. Stir salsa and spoon generously over fish. Sprinkle with oregano. Garnish with whole anchovy fillets. Surround with a generous amount of arugula and serve.

about 16 bamboo skewers
2 pounds large shrimp (about 48)
1/2 cup Ancho Pasilla Sauce
Accompaniments:
Warm Tortillas
additional Ancho Pasilla Sauce
chopped avocado
chopped white onion

Steps:

  • Soak skewers in water at least 30 minutes and up to several hours.
  • Shell and devein shrimp. Holding 2 skewers parallel and slightly apart, thread 6 shrimp onto them (this will facilitate turning them on the grill). Thread remaining shrimp onto pairs of skewers in same manner. Brush both sides of shrimp with ancho pasilla sauce and discard any remaining sauce. Marinate shrimp, covered and chilled, at least 30 minutes and up to 6 hours.
  • Prepare grill.
  • Grill shrimp on a well-oiled rack set 5 to 6 inches over glowing coals 2 minutes on each side, or until just cooked through. (Alternatively, shrimp may be broiled on rack of a broiler pan under a preheated broiler about 3 inches from heat 3 to 4 minutes on each side.)
  • Remove shrimp from skewers and serve with accompaniments.

SHRIMP IN ANCHOVY SAUCE

1 1/2 pounds jumbo shrimp
4 tablespoons unsalted butter
3 tablespoons olive oil
2 tablespoons chopped fresh flat-leaf parsley
2 cloves garlic (large), very finely chopped
6 anchovy fillets, chopped
1/2 cup dry white wine
2 tablespoons fresh lemon juice
salt and freshly ground black pepper

Steps:

  • 1 Peel the shrimp, leaving the tail sections intact. With a small knife, slit the shrimp lengthwise along the back, cutting almost all the way through to the other side. Remove the dark vein and open the shrimp flat like a book. Rinse the shrimp and pat dry. 2 Place a barbecue grill or broiler rack about 5 inches away from the heat source. Preheat the grill or broiler. In a large broiler-safe skillet, melt the butter with the olive oil over medium heat. When the butter foam subsides, add the parsley, garlic, and anchovies and cook, stirring 1 minute. Add the wine and lemon juice and cook 1 minute more. 3 Remove the skillet from the heat. Add the shrimp cut-sides down. Sprinkle with salt and pepper. Spoon some of the sauce over the shrimp. 4 Run the pan under the broiler and cook about 3 minutes or until the shrimp are just opaque. 1/2 c. fresh lemon juice
4 t. olive oil
24 large uncooked shrimp
1 c. plus 1 T. well-chilled butter
5 anchovies, coarsley chopped
2/3 c. dry white wine
1 T. whipping cream

Steps:

  • On cutting board, mince together 8 t. capers, 4 garlic cloves and salt until mixture is almost puree. Tranfer to small nonaluminum bowl. Stir in 1/4 c. lemon juice and oil. To butterfly shrimp, slice 3/4 way through rounded side to 1/4" from tail. do not cut through shell. Open shrimp & flatten gently. Spread undersides of shrimp with caper mixture. Let stand 30 min. Mince remaining 2 garlice cloves. Melt 1 T. butter in heavy med. saucepan over med. heat. Add garlic & stir 2 min. Add anchovies & stir 1 min. Add remaining 1/4 c. lemon juice and white wine and boil until reduced to 1 T. Whisk in cream. Remove from heat. Whisk in 2 T. butter. Set pan over lw heat and whisk in remaining butter 1 T. at a time, removing pan from heat briefly if drops of melted butter appear. (Can be prepared several hours ahead and held in vacuum bottle.) Stir in remaining capers. Meanwhile, prepare grill. Grill shrimp until opaque, about 2 min. on each side. To serve, spoon sauce onto plates. Top each with grilled shrimp
