4 salmon fillets (, skin on best (150-180g/5-6oz each, Note 1))
Olive oil (, for cooking)
1/3 cup (85 ml) soy sauce (, low sodium)
2 tbsp lemon juice
3 tbsp honey
2 tbsp olive oil
2 garlic cloves (, minced)
Parsley, chives or green onion (, finely chopped)
Lemon slices

Steps:

  • Place marinade in a ziplock bag and mix to combine.
  • Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
  • Take out of fridge 30 minutes prior to cooking.
  • Remove salmon onto plate, allowing excess marinade to drain off.
  • Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
  • Pour into bowl/jug (some used for basting, some for serving).
  • Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
  • Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
  • Cook for 3 minutes or until golden, then use tongs to carefully turn.
  • Brush the flesh with Sauce, then close BBQ lid.
  • Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
  • Transfer salmon to plate and serve with remaining Sauce.

This salmon is marinated in a simple but super tasty Asian marinade and then broiled/grilled to produce a gorgeous caramelisation. Fast enough for midweek, fancy enough for company!

2 salmon fillets (, skinless (approximately 0.8 - 1lb / 400 - 500g))
1 tsp fresh ginger (, finely grated)
1 garlic clove (, crushed)
1 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sweet chili sauce ((Note 1))
Sesame seeds
Scallions/shallots (, finely sliced)
Steamed Asian Greens
Rice

Steps:

  • Combine the Marinade ingredients in a shallow bowl. Add salmon and turn to coat. Cover and marinate for 30 minutes or up to overnight.
  • Heat grill/broiler on high. Place the rack 25 cm / 10" from the heat source.
  • Place salmon on baking tray (no oil required). Scrape all the excess glaze from the bowl onto the salmon.
  • Grill/broil for 7 to 10 minutes, until the top of the salmon is beautifully caramelised. Be careful not to overcook the salmon!
  • Serve salmon sprinkled with sesame seeds, scallions/shallots with rice and steamed Asian greens on the side.

SALMON WITH SAUTéED MUSHROOMS, SHALLOTS AND FRESH HERBS



Salmon With Sautéed Mushrooms, Shallots and Fresh Herbs image

You'll never want to cook salmon any other way after you make this. It steams above a pan of water in a low oven, resulting in a very moist piece of fish. The mushrooms are wonderful on top or on the side.

Number Of Ingredients 9

One 1 1/2-pound salmon fillet, or two 12-ounce fillets
2 tablespoons extra virgin olive, plus about 1 teaspoon for the baking sheet
Salt and freshly ground pepper
1 pound white or cremini mushrooms, rinsed briefly and wiped dry
2 tablespoons extra-virgin olive oil
2 shallots, minced
2 to 4 garlic cloves (to taste), minced
2 teaspoons chopped fresh thyme or rosemary (or a combination), or 1/2 to 1 teaspoon dried
1/4 cup dry white wine, such as Sauvignon blanc

Steps:

  • Preheat the oven to 300ºF. Cover a baking sheet with foil and lightly oil the foil. Place the salmon on top. Season with salt and pepper. Fill a roasting pan with boiling water and place it on the oven floor.
  • Place the salmon in the oven and bake until the fish flakes and white bubbles of protein appear on the surface, 10 to 20 minutes, depending on the size of the fillets. Remove from the heat.
  • Meanwhile, cook the mushrooms. Heat a large, heavy frying pan over medium-high heat and add 1 tablespoon of the olive oil. When the oil is hot (you can feel the heat when you hold your hand above the pan), add the mushrooms and cook, stirring or tossing in the pan, for a few minutes, until they begin to soften and sweat. Add the remaining oil, turn the heat to medium, and add the shallots, garlic, and herbs. Stir together, add 1/2 teaspoon salt and freshly ground pepper to taste, and cook, stirring often, for another 1 to 2 minutes, until the shallots and garlic have softened and the mixture is fragrant. Add the wine and cook, stirring often and scraping the bottom of the pan, until the wine has just about evaporated. Taste and adjust seasonings. Remove from the heat.
  • Serve the salmon with a spoonful of mushrooms on top or on the side.

2 tablespoons oil
2 cloves garlic, crushed
¼ cup brown sugar
3 green onions, sliced
¼ cup oyster sauce
1 cup water
2 pounds salmon fillets
1 tablespoon cornstarch
2 tablespoons warm water

Steps:

  • Heat oil in a medium skillet over medium heat. Stir in garlic and brown sugar, and cook until garlic is lightly browned. Stir in green onions, and cook until tender. Mix in oyster sauce and water.
  • Place salmon fillets into skillet, and reduce heat to medium low. Spoon sauce mixture over fillets. Cook 10 to 15 minutes, until fish is easily flaked with a fork.
  • Remove fish from skillet, and set aside. Mix cornstarch and warm water into the remaining sauce mixture. Stir until thickened to desired consistency. Pour over salmon to serve.

Grilled Salmon with Corn and Mushrooms image

When I cook at home, I like to make simple, ingredient-focused dishes, and this grilled fish is one of my favorites. You can use any kind of wild salmon, but when you buy Wild King, you know it's going to be good.

1 cup mixed mushrooms, such as shiitake, cremini, chanterelles
3 ears sweet corn
1 teaspoon tarragon, chopped
1 tablespoon chives, chopped
1/2 cup chicken stock, or clam juice
4 tablespoons butter
Juice of ½ lemon, plus additional for serving
4 5.5-oz salmon fillets, skin-on (156 g each)
kosher salt
Freshly ground black pepper
2 tablespoons neutral oil, such as canola or grapeseed

Steps:

  • Prepare the vegetables: Clean the mushrooms with a dry cloth, then cut off the stems (if using shiitakes) and cut into bite-sized pieces. Set aside. Peel the corn and remove the cornsilk. Then cut the kernels directly into a bowl, starting at the top of the husk and moving down.
  • For the sauce: Preheat a dry skillet on high heat for 1 minute. While the pan is heating, prepare the tarragon by removing the leaves (save the stems for making stock), then finely chop. Trim the chives (save the ends for making stock), then finely chop. Set aside. Add oil to the heated skillet and add mushrooms. Season with salt and pepper and cook until lightly browned. Add the corn, followed by chicken stock or clam juice, and bring to a boil. Add butter while the sauce is boiling to emulsify and create a sauce. Season to taste with salt and pepper, then add the lemon juice. Add the herbs and set aside.
  • Grill the salmon: Preheat grill on high heat with the lid on. Season salmon with salt and pepper and coat with oil on both sides. Scrape the grill clean and lightly swipe with an oiled rag. Place the fish on the grill, skin side down, and grill 2-3 minutes with the lid closed. Then use a large fork to flip and turn salmon 45 degrees to make cross hatching grill marks. (The salmon should not stick when it's ready to be flipped.) Cook 2-3 more minutes; salmon will be done when it's opaque in appearance and firm to the touch while translucent in the middle. Remove and set aside.
  • Plate the dish: Divide the corn and butter sauce among 4 plates and top each with a piece of salmon. Spritz the salmon with lemon just before serving.

4 6 oz. salmon fillets, boned and skin removed
4 TB butter
1 clove garlic, minced
12 oz. Oyster mushrooms, chopped coarsely
1 cup good white wine
1 3/4 cups chicken broth
1/4 cup cream or half and half
1 tsp. Fines herbes, divided
1 1/2 tsp. cornstarch dissolved in 1/4 cup of watter

Steps:

  • Prepare grill or barbeque for direct heat method of cooking. Prepare salmon fillets by rinsing under cold water and patting dry. Melt 2 TB butter; add minced garlic and 1/2 tsp. Fines Herbes. Brush salmon fillets with butter mixture top and bottom. Melt remaining 2 TB butter in a medium saute pan. Add mushrooms; saute until juices are rendered. Add white wine, chicken broth and Fines herbes. Simmer until reduced by half. Add cream; stir to blend. Add cornstarch mixture to thicken slightly and adjust seasonings to taste. While mushroom sauce is reducing, grill salmon, basting with butter mixture when turning fillets. Spoon a generous pool of sauce on the plate. Center grilled fillet on the sauce and garnish with chopped Italian parsley, if desired.

  • Preheat the oven to 450°. In a large skillet, melt the butter. Add the onion and cook over moderate heat, stirring frequently, until softened, about 6 minutes. Add the bell peppers and cook until just softened, about 5 minutes. Add the mushrooms, garlic and wine and cook, stirring occasionally, until the mushrooms are tender and just beginning to brown, about 8 minutes. Stir in the parsley, season with salt and pepper and keep warm.
  • Heat a very large ovenproof skillet until hot. Add the olive oil and swirl the skillet to coat. Season the salmon fillets with salt and pepper and add them to the skillet, skin side down. Cook the salmon over high heat until the skin is crisp, 3 minutes. Turn the fillets, transfer to the oven and roast for 10 minutes, until just cooked through.
  • Spoon the mushrooms and peppers onto plates, top with the salmon, skin side up, and serve with the lemon wedges.
