GRILLED ORANGE SALMON
I love nothing better than to cook for company. Folks say anything coming out of my kitchen made with a marinade or sauce is a winner.

- In a large bowl, combine the first eight ingredients. Set aside 2 tablespoons marinade for basting. Pour remaining marinade into a bowl. Add salmon; turn to coat. Cover and refrigerate for 2-3 hours., Drain and discard marinade. Grill, uncovered, over medium heat or broil 6 in. from the heat for 12-15 minutes or until fish flakes easily with a fork. Baste occasionally with reserved marinade.

- Combine first 6 ingredients together.
- Heat grill.
- Brush orange glaze on each side of salmon and grill about 5 minutes on each side.
- Top with scallions and sesame seeds and serve.
- Can be grilled in the oven.

- Combine first 6 ingredients in a large zip-top plastic bag.
- Add salmon to bag; seal and marinate in the refrigerator 30 minutes.
- Remove salmon from bag, reserving marinade. Prepare grill or broiler by spraying with nonstick cooking spray.
- Cook 6 minutes each side or until fish flakes easily when tested with a fork; basting frequently with reserved marinade. Place remaining marinade in a saucepan; bring to a boil.
- Serve with salmon; garnish with green onion fans.

- Combine the orange zest, orange juice, maple syrup and rice vinegar in a ziploc bag. Add salmon filets and marinate at least 30 minutes and up to 2 days.
- After done marinating, remove salmon and shake off excess marinade. Place on precut squares of aluminum foil, salt & pepper both sides, top each filet with 2 slices of orange, and fold foil like an envelope to secure salmon.
- Cook on preheated grill (or indoor grill grates) over medium high heat until salmon is cooked through, about 10 minutes.
