GRILLED PEACH SALAD WITH SPINACH AND RASPBERRIES



Grilled Peach Salad with Spinach and Raspberries image

Right before your grilled entree comes off the grill, throw some peaches on for the salad. The caramelization adds a dimension of flavor and appearance to the peaches. Put them on a bed of fresh spinach, add raspberries and a good vinaigrette, and some almonds, too, for crunch.

¼ cup extra-virgin olive oil
¼ cup balsamic vinegar
½ clove garlic, minced
½ teaspoon Dijon mustard
1 pinch salt and freshly ground black pepper
2 fresh peach, sliced into 8 pieces
1 tablespoon avocado oil
8 ounces fresh spinach
6 ounces fresh raspberries
¼ cup sliced blanched almonds

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine olive oil, balsamic vinegar, garlic, mustard, salt, and pepper in a small container with a lid. Cover and shake vigorously to combine dressing ingredients. Set aside.
  • Brush peach slices lightly with avocado oil. Place peaches, cut-side down, onto the grill; cook until grill marks form, 1 to 2 minutes. Turn each slice and cook until grill marks form, 1 to 2 minutes more. Remove from grill
  • Divide spinach between 4 salad plates. Top each salad with 4 grilled peach slices. Evenly distribute raspberries and top with some almonds. Drizzle each salad evenly with dressing.

1 tablespoon light brown sugar
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (6-ounce) salmon fillets $
2 (5-ounce) packages baby spinach $
Peach Dressing
2 peaches, peeled and sliced $
3 tablespoons fresh lime juice
2 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • Combine first 5 ingredients in a shallow bowl. Rub salmon with brown sugar mixture. Place fillets, skin-side down, on grill rack coated with cooking spray. Grill over medium-high heat (350° to 400°) 12 minutes or until desired degree of doneness. Remove skin and discard. Toss spinach with 1/3 cup Peach Dressing. Arrange spinach on individual serving plates, top with salmon, and drizzle with remaining dressing. Make the peach dressing. Process all ingredients in a blender until smooth, stopping to scrape down sides.

1/2 cup pecans
4 ripe peaches, pitted and quartered
2 tablespoons vegetable or olive oil
1/2 pound hickory-smoked bacon, roughly chopped
8 cups baby spinach
1/2 small red onion, thinly sliced
1/2 cup (4 ounces) crumbled Danish blue cheese
1/4 cup buttermilk
1/4 cup sour cream
1/4 teaspoon sugar
Salt and freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees. Place the pecans on a baking sheet and toast in the oven until golden and fragrant, 6 minutes; roughly chop.
  • Preheat a grill to medium-high heat on one side and medium heat on the other. Lightly brush the peaches with oil and grill over medium until nicely marked, about 4 minutes per side. Meanwhile, place a flat cast-iron skillet on the grill over medium-high heat. Add the bacon and cook until crisp; transfer to a paper-towel-lined plate.
  • Combine the spinach, red onion, grilled peaches, pecans and bacon in a large bowl.
  • Make the dressing: Mash the blue cheese with a fork in a bowl. Mix in the buttermilk, sour cream, sugar, and salt and pepper to taste. Toss with the salad just before serving.

This tangy dressing, enriched with flavorful bacon drippings, is great over any hearty green but is especially tasty with sweet spinach. Add grilled chicken or salmon and call it a meal.

3 strips bacon
1/4 cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon finely chopped capers
1 teaspoon whole-grain mustard
1 hard-boiled egg, finely chopped
1 tablespoon finely minced fresh chives
1 tablespoon finely chopped fresh parsley
5 ounces baby spinach leaves (about 8 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Cook the bacon in a large skillet over medium heat, turning once, until very crisp, 7 to 9 minutes. Transfer the bacon to a paper towel-lined plate. Spoon up 1 tablespoon of the remaining drippings and add them to a small measuring cup along with the olive oil.
  • Whisk together the vinegar, capers, mustard, egg and oil mixture in a large salad bowl. Stir in the chives and parsley. Add the spinach to the bowl and toss to coat. Finely chop the reserved bacon and sprinkle over the top of the salad. Season to taste.

1 (20 ounce) can pineapple slices
3 tablespoons soy sauce
1/2 teaspoon dry mustard
2 garlic cloves, minced
1 teaspoon ground ginger
1 tablespoon brown sugar, packed
1 lb salmon
2 tablespoons vinegar
2 tablespoons oil
6 cups fresh spinach, washed
4 -5 tablespoons feta cheese, crumbled
20 -30 grape tomatoes or 20 -30 cherry tomatoes

Steps:

  • Drain pineapple reserving 1/3 c of juice.
  • Mix 1/3 c pineapple juice, soy sauce, mustard, garlic, ginger and brown sugar.
  • Cut fish into 4-5 servings and place in a pan.
  • Pour marinade over fish let stand 20 min turn over and marinate 20 more minute.
  • Heat grill or broiler in oven. Remove fish from marinade, reserving marinade. Spray fish with non-stick spray; grill or broil 3-4 minutes per side (about 10 minutes total for every 1-inch thick fillets). Grill pineapple slices at the same time fish is grilling.
  • Place marinade in a small saucepan boil then remove from heat.
  • After cool wisk in vinegar and oil.
  • Place washed spinach on plates, arrange tomatoes and crumbled feta over spinach. Place grilled fish in middle of plate and drizzle with 1-3 tablespoons dressing.

Sweet peaches, crunchy nuts, and tangy vinaigrette. After being on a strawberry spinach salad kick lately, I thought it would be fun to vary the ingredients a little and this is what resulted. Hope you like it as much as I did. :)

4 -6 cups spinach, washed, stems removed and roughly chopped
2 peaches (sliced or cut into smaller chunks)
1 small red onion
1/2 cup toasted pine nuts
2 tablespoons grainy mustard
1/4 cup balsamic vinegar
6 tablespoons extra virgin olive oil
1 1/2 teaspoons minced garlic
1 tablespoon sugar
cracked black pepper, to taste

Steps:

  • Make the vinaigrette: Using a whisk, combine mustard, vinegar, olive oil, garlic and sugar in a small bowl, and set aside.
