1 2-3 pound pork loin roast
1 teaspoon olive oil
1-2 Tablespoons Award Winning Chicken Seasoning

Steps:

  • Heat the grill. Preheat your grill to 350 degrees F for 2-zone cooking (one indirect side of heat, one direct heat side).
  • Prep the roast. Trim any excess silverskin. You can leave a small fat cap on the top of the roast. Drizzle the roast with olive oil and season with chicken seasoning.
  • Grill the pork loin. Place the seasoned pork loin directly on the grill grates over indirect heat. Cook the roast for 1 hour to 1 hour 30 minutes or until the pork reaches an internal temperature of 145 degrees F.
  • Rest, slice, and serve. Remove the pork from the grill and allow to rest for 15 minutes. Slice into 1/4 inch slices and serve.

4 teaspoons chopped fresh rosemary or 2 teaspoons dried
1 1/2 teaspoons coarse salt
1/2 teaspoon ground black pepper
1 2 1/2-pound boneless pork loin roast, well trimmed
Fresh rosemary sprigs (optional)

Steps:

  • Preheat oven to 400°F. Line 13 x 9 x 2-inch roasting pan with foil. Mix first 4 ingredients in bowl. Rub garlic mixture all over pork. Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes. Turn roast fat side up. Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer. Remove from oven; let stand 10 minutes.
  • Pour any juices from roasting pan into small saucepan; set over low heat to keep warm. Cut pork crosswise into 1/3-inch-thick slices. Arrange pork slices on platter. Pour pan juices over. Garnish with rosemary sprigs, if desired.

1 cup unsweetened apple cider or juice
3 green onions, chopped
3 tablespoons honey

  • In a small saucepan, combine the apples, cider, onions, honey, rosemary and garlic; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Cool to room temperature. ½ cup balsamic vinegar
2 cloves garlic, finely chopped
2 teaspoons chopped fresh rosemary
2 teaspoons honey
fine sea salt to taste
freshly ground pepper to taste
1 (1 pound) pork tenderloin

Steps:

  • Whisk balsamic vinegar, garlic, rosemary, honey, salt, and pepper together in a bowl. Place pork in a resealable plastic bag and pour balsamic mixture on top to coat. Squeeze out excess air, and seal the bag. Place the bag in a container to avoid leaks, and marinate in the refrigerator 6 to 8 hours.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove pork from the marinade and shake off excess. Place pork in a roasting pan or baking dish. Reserve marinade.
  • Roast pork in the preheated oven until slightly pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork from the oven, place on a cutting board, and cover loosely with aluminum foil. Let rest for 10-20 minutes.
  • While pork is resting, pour marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes. Serve with the roasted tenderloin.

3 tablespoons (3 splashes) balsamic vinegar
3 tablespoons (3 turns around the bowl in a slow stream) extra-virgin olive oil
3 sprigs fresh rosemary, leaves finely chopped to equal 2 tablespoons
1 navel orange, zested
4 (1-inch thick) boneless, center cut pork chops
Montreal Steak Seasoning
Coarse salt and pepper
Sun-dried Tomatoes and Potatoes, as an accompaniment, recipe follows
Orange and Oregano Salad, as an accompaniment, recipe follows
2 ounces (1 cup loosely packed) sun-dried tomatoes, coarsely chopped
1 1/2 pounds red skinned very small potatoes, quartered
3/4 pound broccoli, cut in to florets
A handful of parsley, chopped
2 tablespoons (2 turns around the pan) extra-virgin olive oil
Salt and pepper
3 large navel oranges
3 to 4 sprigs fresh oregano, leaves striped and chopped about 2 tablespoons
1/4 red onion, thinly sliced
A generous drizzle extra-virgin olive oil
2 tablespoons red wine vinegar

Steps:

  • Combine first 5 ingredients in a bowl with whisk or fork.
  • Pat chops dry with paper towels and rub with seasoning. Turn chops in marinade and let stand 15 minutes.
  • Season chops with steak seasoning.
  • Grill chops on indoor electric grill preheated to high for 6 to 7 minutes on each side, or pan fry over medium high heat for same time under a loose tin foil tent in a nonstick skillet.
  • Serve chops with Sun-dried Tomatoes and Potatoes and Orange and Oregano Salad.
  • Simmer the chopped sun-dried tomatoes and quartered potatoes 10 minutes in just enough water to cover.
  • During the last 3 minutes of the cooking time on the potatoes, add the broccoli florets. Drain and return plumped tomatoes and cooked potatoes to the warm pan to dry out. Dress tomato-potato combo with parsley, oil, salt, and pepper.
  • Yield: 4 servings Preparation time: 10 minutes Cooking time: 10 minutes
  • Remove skin and pith from oranges. Slice oranges in 1/4-inch thick disks. Arrange orange slices on a serving plate and sprinkle with the oregano, onions, and dress with the extra-virgin olive oil, red wine vinegar, salt, and pepper. Serve.

2 1/2 lb pork loin
1/3 cup minced parsley
1 1/2 TBS minced fresh rosemary
2 garlic minced cloves
3 TBS extra virgin olive oil, divided
1 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Using a knife, lightly score the fat on top of pork loin.
  • In a small bowl, combine herbs, garlic, ½ teaspoon salt, ¼ teaspoon black pepper and 2 TBS olive oil.
  • To butterfly roast, place roast fat-side up on cutting board.
  • Starting about 1 inch up from cutting board, cut horizontally, stopping about ½ inch before the edge.
  • Now, cut into thicker half of roast, again, starting about 1 inch from cutting board and stopping about ½ inch before edge.
  • Spread herb mixture evenly over surface of butterflied roast, leaving ½-inch border on all sides.
  • Roll meat tightly and tie with kitchen twine at 1-2 inch intervals.
  • Roast can be wrapped tightly with plastic wrap and refrigerated for 24 hours if you are going to cook it later.
  • Heat grill with all burners on high for 10 minutes, with lid closed. Scrape and oil cooking grate.
  • Rub prepared roast all over with 1 TBS olive oil and season with ½ teaspoon salt and ¼ teaspoon ground black pepper.
  • Place roast on grill and grill until browned all over, about 12 minutes. For charcoal grills, place roast directly over coals.
  • Leave primary burner on high and shut off other burner(s). and roast fat-side up on cooler side of the grill.
  • Cook covered until meat thermometer internal temperature reads 140ºF, about 35 minutes.
  • Transfer pork to cutting board, tent with foil, and let rest 15 minutes.
  • Allow the pork's internal temperature to rise and reach 150ºF.
  • Remove twine, slice and serve.

  • Prepare grill for medium-hot indirect cooking, or preheat oven to 425°F.
  • Place pork on a large sheet of plastic wrap.
  • In a small bowl, mix together oil, garlic, rosemary, salt and pepper, crushing rosemary slightly with a spoon as you mix; spread mixture over pork, covering entire surface.
  • Wrap loin tightly in plastic wrap and refrigerate for at least one hour (and up to overnight).
