CRISPY CHEESE AND BACON POTATOES
Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish for any meal.

- COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
- COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
- Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

GRILLED POTATOES WITH BACON, CHEESE AND GREEN ONIONS
I have been looking for a grill potato recipe that was just right for a long time. I've tried many that were great, but it was never what I wanted. Then the solution came to me - make up my own! It worked perfectly, and my husband and I enjoy these on a weekly basis. I have never actually measured the ingredients, so my recipe may be a little vague. But that's the beauty of Zaar, isn't it? You're all capable of making this one - no problem.

Steps:
- Fire up your charcoal.
- Spray the bottom of a foil pan with cooking spray. (Or if you prefer, spray aluminum foil and make this in foil packets instead).
- Place potatoes into pan, and LIBERALLY shake seasoning blend and garlic salt on top; stir to coat.
- Pour beef broth into pan.
- Add bacon to the potatoes, spreading it evenly.
- Cut butter into pats, and place it on top.
- Cover with foil and place onto hot grill for 45 minutes.
- Pull back foil and add cheddar cheese evenly over the dish.
- Recover dish and leave on grill for another 15 minutes.
- Remove from grill and cover with chopped green onions.
- Serve!

- Preheat grill for medium heat.
- For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
- Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

My family loves these tasty potatoes. There are never leftovers. Once the potatoes are all tucked in their foil packets, they can wait overnight to be grilled the next day. Great for camping. GRILLED GREEN ONIONS
Last summer during a BBQ, my friend put this together and threw it on our grill. Everyone loved it. I'm not an onion fan, and even I like this one. The onions get sweet from the butter, and it's so easy. Can be eaten alone or great as a garnish over burgers or potatoes. The cook time is approximate, as it can be kept warm on the grill until all the food is ready.

- Wash the onions thoroughly.
- Place whole onions on a sheet of foil.
- Place the butter over the onions.
- Sprinkle with garlic salt and pepper.

- Be careful when opening, the steam will be hot.
DELICIOUS CHEESY BACON AND GREEN ONION POTATO SKINS
These are easy to make and can be made hours in advance or a day ahead and chilled until ready to pop in the oven, instead of cheddar you can use a mixture of you favorite cheeses, I like using marbled mixed with the cheddar. If you are serving these as an appetizer you can use 10-12 small russet potatoes instead of large --- all ingredients may be adjusted to taste --- these are very good!

- Set oven to 400°F.
- Wash the outside of the potatoes, then dry very well.
- Place on a baking sheet.
- Bake for about 1 hour, or until the potatoes are tender (cooking time will vary depending on the size of potatoes).
- Cool until able to handle.
- Keep the oven heat to 400°F.
- Slice the potatoes in half lengthwise.
- Scoop out the pulp leaving about 1/2-inch thick layer of the cooked potato on the skins.
- Oil a large baking sheet.
- Place the skins on the baking sheet (skin side down, pulp side facing upwards).
- Sprinkle the inside with salt and pepper and grated Parmesan cheese (if using).
- In a bowl combine the shredded cheese, chopped bacon, parsley and cayenne pepper; mix to combine.
- Evenly divide the cheese mixture over top of the skins.
- At this point you can cover tightly with plastic wrap refrigerate until ready to serve.
- Bake for about 25 minutes, or until the skins are crisp and the cheese melts.
- Transfer the skins to a platter and sprinkle with finely chopped green onions.
- Serve with sour cream and/or barbecue sauce.

- Preheat an outdoor grill for medium-high heat.
- Make 4 cuts into each potato without going all of the way through so that each potato has been cut into 5 thick slices. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. Brush the potatoes with olive oil, then sprinkle with brown sugar and black pepper. Wrap the potatoes loosely in the aluminum foil.

- Place the potato slices in a greased 13 x 9 x 2 inch baking dish.
