GRILLED PORK CHOPS AND PLUMS



Grilled Pork Chops and Plums image

Add grilled plums to a quick arugula salad to serve with grilled pork chops.

4 bone-in pork chops (about 3 pounds total)
Kosher salt and freshly ground black pepper
1 tablespoon plus 2 teaspoons extra-virgin olive oil, plus more for oiling the grill grates
2 plums, halved and pitted
4 cups lightly packed baby arugula
1/3 cup fresh flat-leaf parsley
Juice of 1/2 lemon

Steps:

  • Prepare a grill for medium-high heat. Sprinkle the pork chops generously on both sides with salt and pepper. Lightly oil the grill grates. Grill the pork chops until lightly charred with strong grill marks, about 6 minutes. Flip and continue to grill until just slightly pink near the bone, 4 to 5 minutes more. Transfer the pork chops to a cutting board to rest for about 5 minutes.
  • Meanwhile, toss the plums with 2 teaspoons of the oil and sprinkle with salt and pepper. Grill, flipping once, until softened with grill marks, about 2 minutes per side. Cut into wedges.
  • Toss the arugula and parsley with the lemon juice and remaining 1 tablespoon oil and season with salt and pepper. Divide among 4 plates and top with the plum wedges. Serve with the pork chops.

4 center-cut bone-in pork loin chops, 1 inch thick (about 2 lb), trimmed of fat
1/4 teaspoon salt
1/4 teaspoon pepper
6 tablespoons packed brown sugar
2 tablespoons cider vinegar
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground red pepper (cayenne)
1/4 cup sweetened dried cranberries
2 medium baking apples, peeled, chopped (2 cups)

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. Sprinkle pork with salt and pepper; place in cooker.
  • In small bowl, mix brown sugar, vinegar, ginger, cinnamon, red pepper and cranberries. Spoon over pork in cooker; top with apples.
  • Cover; cook on Low heat setting 4 hours to 4 hours 30 minutes.

3/4 pound Italian prune plums
1 large garlic clove
4 pork chops (each about 1 inch thick)
1 tablespoon vegetable oil
1 1/2 teaspoons finely grated peeled fresh gingerroot
1/4 cup soy sauce
2 tablespoons Sherry vinegar or red-wine vinegrar
2 tablespoons packed brown sugar
2 whole star anise or 1/2 teaspoon anise seeds
Garnish: chopped scallion and plum slices

Steps:

  • Quarter and pit plums and mince garlic. Pat pork chops dry with paper towels and season with salt and pepper. In a 12-inch heavy skillet heat oil over moderately high heat until hot but not smoking and brown pork chops about 2 minutes on each side, transferring to a plate. Add garlic and gingerroot to skillet and sauté, stirring constantly, 30 seconds. Stir in soy sauce, vinegar, brown sugar, and anise and bring to a simmer. Return pork chops to skillet and arrange plums around them. Simmer mixture, covered, over moderately low heat 50 minutes, or until meat is very tender. Transfer chops to a platter and, if necessary, simmer sauce, uncovered, until thickened slightly. Discard star anise, if used. Pour sauce over chops and garnish with scallion and plum.

Microwave vinegar and 2 tbsp. sugar until steaming, about 30 seconds, then stir until sugar dissolves. Put ginger, mustard seeds, cumin seeds, bay leaf, crushed coriander, and 1 tsp. each salt and pepper in a small bowl.
  • Heat 2 tbsp. oil in a small frying pan over medium-high heat until shimmering. Add ginger mixture and cook, stirring, until mustard seeds start to pop, 15 to 30 seconds. Remove from heat and stir until cumin seeds are a shade darker, 1 to 2 minutes. Add vinegar-sugar mixture. Stir into plum mixture and let chutney stand at least 1 hour and up to 3 hours, stirring occasionally.
  • Meanwhile, heat a grill to medium (350° to 450°). Combine remaining 1 tsp. each salt and pepper, the ground coriander, and lemon zest in a bowl. About 20 minutes before serving, rub pork chops with remaining 1 1/2 tbsp. oil, then with coriander mixture. Taste chutney and add more sugar if you like.
  • Grill meat covered, turning over once, until barely pink in center, 12 to 15 minutes. Transfer to a platter. Stir cilantro into chutney. Set pork chops on plates and spoon chutney and juices on top.
