Grilled Pork Chops With Peanuts, Sesame and Cilantro image

Smoke has been called the umami of barbecue, and these pork chops, which the chef Curtis Stone cooks over wood fire at his restaurant Gwen in Los Angeles, possess it in spades. Fish sauce and soy sauce provide the salt in the marinade; hoisin sauce and honey the sweetness. The peanuts and sesame seeds in the topping reinforce the nuttiness of the sesame oil in the marinade. You can use charcoal if wood is not an option, or cook over gas if necessary.

2/3 cup honey
1/2 cup hoisin sauce
1/3 cup soy sauce
1/3 cup sesame oil
3 tablespoons red wine vinegar
2 tablespoons chile oil
2 tablespoons fish sauce
2 garlic cloves, minced
1 shallot, minced
2 teaspoons freshly grated ginger
4 thick pork rib chops (12 ounces each)
1/4 cup chopped roasted peanuts
1/4 cup thinly sliced scallions
1/4 cup roughly chopped cilantro
2 tablespoons toasted sesame seeds

Steps:

  • Prepare the pork chops: Place all the ingredients except for the chops in a mixing bowl and whisk to blend.
  • Arrange the chops in a baking dish. Pour the marinade over the chops, turning them to coat both sides. Marinate the chops in the refrigerator for 4 hours, turning them over a couple of times so they marinate evenly.
  • Meanwhile, build a wood fire in your grill with a hot zone for searing and a medium zone for cooking. (You can do the same with charcoal. If you're using a gas grill, place a few hardwood chunks under the grate over one or two of the burners. Heat one burner on high heat and additional burners on medium heat, adjusting the heat as necessary.) Brush and oil the grill grate.
  • Grill the pork chops, allowing some but not all of the marinade to drip off first, until sizzling and browned on the outside and cooked to taste. If you like your pork with a blush of pink, cook until it reads 145 degrees in the center on an instant-read thermometer (about 3 minutes per side); if you like your pork cooked all the way through, look for the meat to reach 155 degrees in the center (about 4 minutes per side). Work mostly over the medium fire, moving chops to the hot fire at the end to sear the crust. Transfer the chops to a wire rack over a sheet pan and let rest for 2 minutes.
  • Garnish and serve: Combine peanuts, scallions, cilantro and sesame seeds in a bowl and toss to mix. Arrange chops on a platter or individual plates. Sprinkle with peanut mixture and serve.

1 cup mayonnaise
2 tablespoons fresh lime juice
2 tablespoons fresh cilantro, chopped
2 garlic cloves, finely chopped
1 teaspoon dried chipotle powder
8 pork chops

Steps:

  • Blend the first 5 ingredients, cover and place in the fridge for an hour or longer.
  • Reserve 1/2 cup.
  • Grill or BBQ brushing the chops with the mayo blend, continue brushing and cooking until the chops are done Turning them halfway through (apprx 15 minutes total).
  • Serve with the reseved mayo mixture on the side.

5 large jalapeños, stemmed
5 large garlic cloves, peeled
1 bunch cilantro stems, cut into 1-inch pieces (about 1 packed cup)
2 tablespoons rice vinegar
1/2 cup olive oil, plus more for cooking
1 tablespoon kosher salt (Diamond Crystal)
2 teaspoons granulated sugar
8 thin-cut, bone-in pork loin chops (1/2-inch thick)
1 large jalapeño, thinly sliced into rings
1 small red onion, thinly sliced into rings
1/3 cup rice vinegar
1 teaspoon kosher salt (Diamond Crystal)
2 tablespoons granulated sugar
Cilantro leaves and tender stems, for garnish
Cilantro rice or cooked white rice, for serving (optional)

Steps:

  • Make the pork chops: In a food processor, blitz the jalapeños, garlic, cilantro stems, rice vinegar, olive oil, salt and sugar until smooth. Place the pork chops in a large bowl or resealable container and pour the marinade over them; turn the chops to evenly coat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
  • While the chops marinate, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to medium-high.
  • Make the relish: In a small bowl, toss the jalapeño, red onion, rice vinegar, salt, sugar and 2 tablespoons water. Set aside to quick-pickle until ready to serve, or refrigerate for up to 24 hours.
  • Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. With the marinade clinging to them, place the pork chops on the hot greased grate. Grill until the chops are charred at the edges and no longer pink in the middle, 2 to 3 minutes per side. The meat is ready to flip when it releases easily from the grates. (If using a gas grill, close the lid between flips.) Alternatively, cook the chops on the stovetop in batches. Heat a large skillet or grill pan over medium-high. Add enough oil to lightly coat the bottom of the pan, and heat until shimmering. Add the chops, with the marinade clinging to them, to the pan. Sear until browned and caramelized at the edges and no longer pink in the middle, 3 to 4 minutes per side. Discard any remaining marinade.
  • Serve the chops with the relish and cilantro on top. If you'd like, serve rice alongside.

30 round buttery crackers, finely crushed (about 1-1/4 cups)
1/3 cup finely chopped fresh cilantro, divided
6 boneless pork chops (1-1/2 lb.), 1/2 inch thick
1 egg, beaten
3 Tbsp. oil, divided
2 cloves garlic, minced
1/2 cup fat-free reduced-sodium chicken broth
3 Tbsp. creamy peanut butter
1 canned chipotle pepper in adobo sauce, chopped
1 tsp. brown sugar
1/4 cup PLANTERS Dry Roasted Peanuts, chopped

Steps:

  • Combine cracker crumbs and 1/4 cup cilantro in pie plate. Dip chops in egg, then in crumb mixture, turning to evenly coat both sides of each chop.
  • Heat 1 Tbsp. oil in large nonstick skillet on medium heat. Add 3 chops; cook 4 min. on each side or until done (145°F). Remove from skillet; cover to keep warm. Repeat with 1 Tbsp. of the remaining oil and remaining chops; remove from heat, then let stand 3 min.
  • Meanwhile, heat remaining oil in small saucepan on medium heat. Add garlic; cook and stir 2 to 3 min. or until golden brown. Add broth, peanut butter, peppers and sugar; stir. Bring to boil on medium-high heat; simmer on medium-low heat 3 min. or until thickened, stirring occasionally.
