BAKED CREAM CHEESE SPINACH DIP



Baked Cream Cheese Spinach Dip image

My own invention. For those of you who love this appetizer at Montana's Restaurant, this is my attempt to clone it. It's not identical, but I think it's pretty close, and very tasty!

Number Of Ingredients 7

1 (300 g) package frozen spinach, thawed and drained
1 (250 g) package cream cheese
1/4 cup onion, chopped
4 garlic cloves, minced
1/8 teaspoon Tabasco sauce
2 tablespoons milk
1/2 cup cheddar cheese, shredded

Steps:

  • Blend all ingredients in food processor, except cheddar cheese, adding as much milk as necessary for a smooth and creamy consistency.
  • Amount of garlic and/or Tabasco sauce can be increased for more intense flavour!
  • Spread in pie plate and top with shredded cheddar cheese.
  • Bake at 375F for 35 minutes or until heated through and cheddar cheese is melted.
  • Serve with pita crisps, crackers or tortilla chips.

Cream cheese turns ordinary spinach into a side dish that's pretty enough to serve company. "This casserole is a snap to stir up because it relies on convenient frozen chopped spinach," remarks Beverly Albrecht of Beatrice, Nebraska.

Number Of Ingredients 5

2 packages (10 ounces each) frozen chopped spinach
6 ounces cream cheese, softened
4 tablespoons butter, divided
1/4 teaspoon salt
1/2 cup seasoned bread crumbs

Steps:

  • Cook spinach according to package directions; drain well. Stir in cream cheese, 2 tablespoons butter and salt. , Transfer to a greased 1-qt. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over spinach mixture. Bake, uncovered, at 350° for 20 minutes or until lightly browned.

Non-dairy creamed spinach and kale with coconut milk.

1 ½ cups coconut milk
1 medium yellow onion, finely chopped
2 cloves garlic, finely chopped
½ cup raisins
¾ teaspoon fine sea salt
½ teaspoon ground black pepper
¼ teaspoon freshly grated nutmeg
8 cups loosely packed chopped fresh kale
8 cups loosely packed torn fresh spinach

Steps:

  • Combine coconut milk, onion, and garlic in a large saucepan over medium heat; bring to a simmer. Reduce heat to a bare simmer and cook, stirring frequently, until onion is translucent, about 5 minutes. Stir in raisins, salt, pepper, and nutmeg.
  • Increase heat to medium. Add kale, a few handfuls at a time, stirring and adding more as it wilts. Cover and cook, stirring occasionally, for 12 minutes.
  • Uncover and add spinach, a few handfuls at a time, stirring and adding more until all has been added. Cook, uncovered, until both kale and spinach are very tender and any excess liquid has mostly evaporated, 6 to 8 minutes.

1-1/2 cups spreadable chive and onion cream cheese
1 cup grated Parmesan cheese
1 cup shredded part-skim mozzarella cheese
1/4 cup butter, cubed
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine all ingredients. Cook and stir over medium heat for 8-10 minutes or until blended and heated through.

  • Heat the avocado oil in a Dutch oven or large pot. Add the onion and saute, stirring occasionally, until onion begins turning brown, about 8 to 10 minutes. Add the garlic and continue sauteing another 2 minutes.
  • Reduce the heat to low and add the flour, lemon zest, nutmeg and sea salt and stir well to combine.
  • Slowly pour in the coconut milk, stirring constantly. Continue cooking and stirring until mixture is very thick (if adding cheese, do so now).
  • Add the baby spinach to the pot and stir it into the thick sauce as best you can. Cover and cook 3 to 5 minutes to allow spinach to wilt. Remove the cover and stir well until spinach is completely wilted and is well-integrated into the sauce.
