Steps:
- In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
- Preheat grill to medium and oil the grates.
- Season pork chops generously with salt and pepper on both sides.
- Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
- Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.
- Serve with remaining bbq sauce. Enjoy!

Steps:
- Preheat the oven to 425°F.
- Salt and pepper both sides of each pork chop. Heat a tablespoon of oil over medium-high heat in an oven-proof skillet big enough to hold all four pork chops.
- Brown the pork chops, about 2 minutes on each side. Remove the chops from the pan and transfer to an ovenproof platter; place in oven. Remove when the pork is just cooked through, about 10-12 minutes.
- While the pork chops are in the oven, prepare the sauce. Heat a tablespoon of oil on medium high heat in the same skillet you used to brown the chops.
- Sauté the shallots until soft and golden. Add the wine and water and let boil down for 1-2 minutes, scraping up the brown bits.
- Add the blueberries. When the skins begin to burst, add the lemon zest and juice. Let the sauce continue to boil and thicken until the pork chops are ready.
- Once the pork chops are ready, remove the pan from the oven and place the pork chops on a cutting board and let them rest while finishing the sauce.
- Turn the heat off under the saucepan and stir in the butter until it is completely melted. If using unsalted butter, add a pinch of salt.
- Serve the pork chops either whole or sliced, topped with the blueberry sauce and fresh parsley.

PORK WITH BLUEBERRY HERB SAUCE
A different and delicious way to use blueberries, this tangy, sweet-savory sauce would also be great over chicken. The blend of berries and balsamic is wonderful! -Libby Walp, Chicago

- In a small bowl, stir together 1 tablespoon of the kosher salt, the garlic powder, and 1 teaspoon of the black pepper. Store the spice rub in a mason jar on the countertop for up to a year or use immediately.
- On a parchment paper or foil-lined sheet pan, arrange the pork chops in a single layer. Sprinkle a generous pinch of the spice rubs onto each side of the chops. Be sure to rub the seasoning into the chops with your fingers. Discard any remaining spice rub*.
- Pile the charcoal briquets in your grill's bottom and cover them with lighter fluid. Light the coals immediately and allow them to heat until they are glowing red under an ashy exterior.Alternatively, if you have a gas grill, you'll only need a fifteen minute head start on preheating the grill. When you're ready to grill, simply preheat the grill to medium-high.
- In a sauce pan, heat the olive oil over medium-high heat. When the oil begins to shimmer in the pan, add the red onion and garlic. Sauté these until they are glossy and fragrant or about 3 minutes. The aromatics should take on a bit of color, however, if they start to brown too much, lower the temperature.
